Mise en Place

Assemble Equipment Assemble Ingredients

Wash Hands

Wash hands for at least 20 Seconds

2 types of measurements

• Liquid • Dry

Flour should NEVER be packed, but should be SPOONED into the measuring Cup

Brown Sugar and Shortening Should be packed into the measuring Cup

Measuring Oil, Milk, and Water

• Liquid measuring cup

Measuring Butter or Margarine

• Cut along lines on side of package

Crack Eggs into A Bowl

You won’t get shells in Mixing Bowl

If Egg is bad, you can throw it away without wasting ingredients.

Standard Measuring Cup

1 Cup: ½ Cup: 1/3 Cup: ¼ Cup

Measuring Spoons

• When Measuring 1/8 Cup or less• 1 Tablespoon, 1 teaspoon, ½ teaspoon, ¼

teaspoon

When measuring liquidlike oil, milk and water

Place the cup on a Level or Flat surface and read the measurement at EYE level

Never Measure Ingredients Over the Mixing Bowl

Powdered Sugar

• To get lumps out of Powdered Sugar SIFT IT

Softening Brown Sugar

Place Bread or Apple slice in the bag, or microwave for a short time.

When Cutting Recipe in Half or Doubling

• Same

• Cooking Temperature

• Change or Different

• Amount of Ingredients• Length of Cooking Time• Size of pan

When Using Glass Baking Pans

Reduce the Oven Temperature 25 Degrees.
