THE FILM... the mighty city of Kolkata seen from dawn to dusk through the constant kitchens

of the pavements that provide fuel for millions on the move. An extreme and intense situation that

spawns some of the most delicious, nutritious and cheapest food anywhere on our planet.

Without presenter or voice over the story is told by those you make and those who eat the food and

the original sound track.

A beautiful, uplifting and a moving meditation to making the most of not very much.

THE FOOD... before, during and after the film there will be carts and trollies making and serving

authentic snacks from the Kolkatan streets that are fresh, alive, full of flavours of Bengal.

THE PROJECT... started when 10 years ago when classically trained chef Angus Denoon walked

out onto the streets of Kolkata with a camera and pressed the red button. Every year since he has

returned to finish the film, write a book and continue to learn about how they make cheap, nutritious

delicious food with a kitchen.

When not in Bengal he is on the road with The every body lovelove jhal muri express making chaats-

snacks- from an old converted shopping trolley or his internally pimped white van- anywhere from

street corners, late night buses, cinema cues, weddings, festivals, gallery opening or high profile media

do’s.

Of air and agitation and fully fleshed curds come the lassi.

Yogurt beaten with rose water, palm sugar,

yellow lime, black pepper, ice and the puree from the al-

phonse mango.

Dries white peas cooked with soft spice and served in

a leaf plate and topped with coriander, tamarind

chutni, bombay onion, coconut, lime, modi masala and

sev noodle

Cha- Bengali chai- made with leaf tea, ginger, masala’s,

lime and sweetened with the sugar for the palm.

Served in a tea glass.

COME HUNGRY - LEAVE NOURISHED

Jhal muri is mix of the textures- roasted rice, channa dal, peanut

and sev- the fresh(tomato, cucumber, bombay onion, ginger, fresh

coriander) and the flavors( yellow lime, tamarind sauce, mustard

oil, chaat masala and gram masala) all mixed mixed in the pot and

served in a paper cone and eaten with a wooden spoon.

A one hit wonder and explosion of a taste experience that

brings heaven to earth. A crisp hollow puri, the size of a golf

ball, filled with a cushion of soft Bengali flavoured potato and

the sweet and sour tamarind water, a little masala’s and crisp

sev noodles.

Taken all in one as all becomes one.

THE FOODFrom unique and highly decorated arranements the selection of chaats are

made to order. Light but not pointless, satisfying but not heavy.

Accessible to all and spicy as you like or not at all.

Its basically all about the tray that sits on the trolly.

And from the tray of shinning tins and silver jars you can easily unfold

many of the mysteries of satisfying the appetite.

Minimum effort maximum pleasure. Yes indeed from the simple stories of the jhal muri trolly the whole

cooking process can be seen from a different angle.You learn of the importance of textures and the differences within the textures, of nutrition and the making of the perfect proteins that make the power, of how to bring foods alive with water, hands and heart, with balancing the five flavours and the of the layers within those flavours and how to reach them.

Then there is the endless alchemy of the spices and their place in our

wellbeing, the spouting of seeds and roasting of grains and nuts, chopping on a tiny block or in the palm of your hand and all done in a

space smaller than a Mexicans hat.Street food is by nature cheap ingredients made to taste more that there

worth with additional flavours and tastes.Jhal muri is no different- basically puffed rice, some fried lentils and roasted nuts made a little sour, sweet, salty and spice and bingo and when we cook we all want to get to bingo.

I have done loads of workshops from young kids to old adults.

I show the people around the trolly explaining each bit tasting every-thing as we go. They also build bit by bit their own cone which in the

end they eat.

Its hands on, informal and as simple as you like.
