  • The Maxs Story

    In 1945, after World War II, Maximo Gimenez, a Stanford-educated teacher, befriended American occupation troops stationed in Quezon City, Philippines.A few would come to his house for a drink or two. Eventually they insisted thatthey pay for their meals. It was then that Maximo decided to open a caf thatserved chicken, steak and drinks.

    To help him with the caf, his wife Mercedes, and his sister-in-law Felipa, joinedhim together with her niece Ruby, who managed the kitchen with her husband Claro. It was Ruby who concocted a special recipe for chicken. The American troops kept coming back for more of the delicious tender, crispy chicken. Soon enough,it became a legend with the Filipino public too!

    Encouraged by her mother to expand the menu and serve more Filipino food,Ruby put up the Baclaran branch along Roxas Boulevard in Paraaque. It was decided that the restaurant would be named Maxs which was Maximos nickname.

    Over the years, Maxs Restaurants popularity grew and became known asThe House That Fried Chicken Built.

    To date, Maxs operates over a hundred restaurants all over the Philippines. Aiming to be a competitive international brand, Maxs expanded its operations overseas and now has branches in North America and the Middle East. Hoping to serve and bring this well-loved Filipino fried chicken recipe to the worlds discriminating palate, we will continue to broaden our reach as we open new stores in new territories in the years to come.
