Hello members and welcome to the Spring edition of Backstage
They’re the RSL’s front-line workers – the meet and greet team as you walk through the door and the staff who help you with all your membership and visitor enquiries.
The ladies and gentlemen on the door and reception are two close-knit teams who are the first port of call for anyone visiting the club.
Reception supervisor and membership co-ordinator Angela Balke said the roles of both the door and reception teams were important. “Every member of the door and reception staff team is a customer service ambassador for the club,” Angela said. “We’re always ready, willing and able to handle any and all queries that come our way.” Like many of the jobs at Maroochy RSL, the door and reception teams work in shifts, anywhere between 7:30am and 1am depending on the day. She said the staff members on these two teams helped with any club related enquiries, from promotions and membership to entertainment and dining options.
The roles were diverse and Angela said they required the staff in both teams to have extensive knowledge of the club in order to help patrons make the most of their visit. But she said they were also very rewarding with lots of interaction with members and visitors and they looked forward to a friendly chat or a quick greeting from the regulars, some who visit on a daily basis. “I think (one of) the main quirks of the job is all the different personalities,” she said. The club gets a lot of New Zealand and interstate visitors, particularly in the winter months when they are escaping the cold weather. “Meeting all the different personalities, different nationalities, it opens up a whole new world really,” she said.
Meet the Club’s front-line team
Angela has worked at the club for nearly a decade. She started out on reception and over the years she has furthered her skills through training courses and diplomas, eventually working her way up to her current position, which she has held for the last four years. “The role is always evolving. You’re doing something different and we’re always moving forward, so you’re always learning something new.”
The latest addition to the team’s responsibilities has been the Membership Lounge, which provides a dedicated lounge for members. They have recently branched into a loyalty program, adding another string to their bow and another service for members.
When you are next in the club, be sure to say hello to the hard-working reception and door teams, and take a look at the new membership lounge.

We will soon be opening Elevations on the mezzanine level as another dining area for our members to enjoy. A delicious seafood buffet lunch featuring fresh local seafood will be held on the last Sunday of every month, as well as a BBQ buffet every other Sunday. If you are a pasta lover, try our Friday pasta night, or for traditional dishes the whole family will enjoy, try our family buffet on Saturday nights. Please see page 5 for more details.
We are on the home straight to this year’s Melbourne Cup and our members will have the choice of either free race day entertainment on The Avenue, or a ticketed luncheon at the Events Centre. Tickets can be purchased at reception or through our website.
Our club takes a serious approach to the responsible service of alcohol and are active members of the Maroochydore CALM Liquor Accord. To assist our members and their guests in remaining safe on their journey home, we will soon be installing a breathalyser unit in our foyer. For more information, please see one of our Customer Service Managers.
Membership will be open for 2011 renewals earlier this year and all early birds will qualify for an opportunity to win one of five 50inch LCD televisions. To qualify for this great prize all you need to do is renew your membership for 2011 between November 1 and December 31.
Now that the cold winter is behind us, it’s amazing to look back and see how quickly this year is flying by. There are a lot of exciting things happening at the moment throughout the club.
The big news is the recent launch of the Star Rewards Loyalty program, which now offers yet another benefit of being a member of our club. Members will now enjoy substantial discounts on food and beverage purchases when paying by reward points, as well as other great incentives. For further information, please consult one of our Star Rewards Ambassadors in the new Star Rewards Membership Lounge, or pick up a brochure located throughout the club.
Experience something different during October and join us for Oktoberfest, which will be held in the Events Centre on October 2 and 3. Enjoy food prepared by our German-born head chef, Ulli Rabsch, who will bring the flavours of his home country to Oktoberfest.
A traditional oompah band will be providing the entertainment and no doubt the infamous chicken dance will feature. There will be loads of games and every ticket holder will have the chance to win a trip to Hahndorf in the Barossa Valley - Australia’s very own

THE focus is on fun and laughter and having a good time for the Club members who get together for a bit of euchre every week.
Card Club president Dorothy Hibbert said there are about 27 members in the club but not everyone attends every game. “We only play euchre,” she said.
The average age of card club members was 60 to 70 but she said there were a few members in their 80s and one 90-year-old who played regularly. She said it was a fantastic way to keep the mind active and attributed regular card games to helping keep her husband’s dementure at bay. “We all go there to have a good laugh and we euchre each other,” she said. “One lady was euchred 13 times in one day – we think it’s a record.”
Dorothy, who has been a Maroochy RSL member for 30 years and Card Club president for three years, said there are not many entertainment options that only cost $2. She said it was great value for seniors and provided an affordable means to a social afternoon filled with fun.
Card meetings are held twice a week – on Wednesday and Saturday afternoons from 1pm to 3.30pm. “Really it’s a fun afternoon because you go there to enjoy yourself,” Dorothy said.
They also hold a Christmas party at the RSL for card club members each year, which she said was always a good afternoon.
She said the RSL’s support of the card club was fantastic. “I can’t give them enough praise,” she said. “They have gone out of their way to help us.”
Dorothy said the club was always looking for new members. And they are particularly keen to get a few more men to join up as club members are predominantly female at the moment.
You don’t have to know the rules – club members will teach anyone who wants to learn.

THE Maroochy RSL Chaplaincy Golf Classic in July raised a crucial $5000 for the Maroochydore High School chaplaincy program. The charity event, held on Sunday July 25, was sponsored by the Maroochy RSL Club. It attracted about 80 entrants who played in teams of four with plenty of fun, raffles and a series of novelty competitions to keep everyone entertained through the day.
Maroochydore School chaplain Andrew Pearce (pictured centre left with golf day supporters) said while some participants were serious golfers, the majority were just there to have a laugh and a day out. He said the day was a huge success and raised a significant amount of money for the chaplaincy program.
“For us it’s a major fundraiser,” Mr Pearce said. “For the chaplaincy program we have to fundraise for our position and any programs we want to put on.”
Most Sunshine Coast schools have a chaplaincy program that supports a school chaplain in either a full time or part time capacity. Mr Pearce said the role was about supporting the school’s students and their families and helping them to make the best of their situations.
“It’s more of a pastoral care role,” he said. The role is diverse and involves everything from family mediation in instances where students are clashing with their parents to grief support.
Mr Pearce also runs several programs within the school, which require community support and
funding. These include a breakfast program for students who don’t have breakfast before they leave home and another one introducing values and morals to years nine and ten boys.
Maroochy RSL general manager Tom Casilieris said school chaplains were an important asset and they played an important role within the school environment. “We are pleased to be able to play a part in maintaining the services of this position within Maroochydore High School,” Mr Casilieris said.
While the school chaplaincy program receives some federal funding, it is not enough to cover full time wages. “One of the things with the federal funding is that I maintain five days a week, making the RSL support and the golf day even more significant,” Mr Pearce said.
The Maroochy High School’s next chaplaincy fundraiser will encourage people to grow a beard for the entire month of October, aiming to raise awareness of the chaplaincy’s work and to continue to raise funds to support the role.

500mL full cream130g sugar3 egg yolks
½ - 1mL gumleaf oil
1. Slightly warm the cream in a pot on the stove
2. Place the egg yolks with sugar in a bowl and whisk briskly, creaming the mixture
3. Add the cream to the mixture and strain with a fine strainer
4. Add the gumleaf oil and taste the mix; the gumleaf should only be detected after the second or third taste
Ulli’s tip: after 3 sips, eat a piece of bread to clean your tastebuds as repeated tasting will dull them to the aromatics of the gumleaf oil
5. Place in moulds and then into a deep tray; fill the tray with warm water half way up the sides of the moulds; cover the entire tray with foil, making sure it’s covered extremely well, as any gap will cause the brulée to scramble
6. Place in an oven at 160°C for 45 minutes; then remove the moulds immediately from the water bath and allow to cool on the bench; refrigerate for at least 3-4 hours
7. To serve, sprinkle sugar on top and heat with a gas torch to form the caramel crunch

Brett plans to take Maroochy RSL’s bistro to the next level!
Brett McRae believes always giving 110 per cent at work has contributed to a successful career that has spanned more than two decades and taken him around the globe.
The executive chef at Maroochy RSL has worked in restaurants in far flung corners of Australia as well as the USA, Canada and the UK.
“I wanted to have a trade where I could travel and work around the world,” he said.
Brett’s first jobs were labouring on building sites until he got a job in hospitality as a bus boy then became a kitchen hand, before securing an apprenticeship as a chef at Queensland Cricketers Club.
“From there I went to Sails in the Desert at Ayers Rock Resort, then the Mangrove Hotel at Broome, followed by Fish Bar and Grill at Sorrento Quays in Perth.”
He then headed overseas where he worked in various roles for four and a half years. His last international jaunt was at the London Tower Thistle Hotel before returning to Australia where he moved to the Sunshine Coast.
He worked in a variety of locations, including Coolum Surf Life Saving Club, before landing his first head chef job at Bella Venezia.
Now at Maroochy RSL he manages 35 staff, including chefs, apprentices, kitchen hands, wait staff and floor staff.
“This is my first executive chef role and it’s a big job,” he said.
“I’m in charge of a busy bistro and coffee shop serving an average of 4500 to 5000 meals and 1500 coffees a week.”
His describes his typical day as busy but thrives on being a part of a team that provides an enjoyable experience for club visitors.
But like anyone taking on the challenge of a new role Brett has plans for improvements and his goal is to be part of a team that takes catering at the Maroochy RSL to the next level.
“I want to change things slowly, with good planning in the catering so our service is more beneficial to the members and guests of the club.”

visits The Avenue for a free performanceAfter making it into last year’s Australian Idol top 10, Casey Barnes continues to fly high. The Gold Coast based singer-songwriter, delivered dynamic performance’s week after week, and as the votes of the Australian public kept rolling in, he become one of the favourites of the season.
Casey will now take to the stage on The Avenue for a free performance on Wednesday October 13, at 7pm. Casey will perform tracks from the hotly anticipated brand new album, Red Lion Motel, including the first single, I Promise, released in May this year.
Before Australian Idol, Casey had already made his mark on the music industry. One of his biggest career highlights was opening for Bryan Adams at the outdoor concert series, A Day on the Green.
Casey since has gone on to play shows alongside big-name Australian acts including Eskimo Joe, Vanessa Amorosi, The Whitlams, Jack Jones and Diesel.
Casey’s rework of Elton John’s classic, Tiny Dancer, reached number one on the dance charts in the UK, and then went onto reach top five throughout Europe, including number one in Italy. Tiny Dancer reached the top 5 in Australia.
While Casey’s personal love of music and passion for performing is evident, he is also committed to organising a series of successful charity concerts to raise funds for chronically ill 10 year old Connor Maclean, who suffers from the rare health condition VACTERL Syndrome.
Right off the back of his performance as the winner of the Titans APG Power Stage Competition, you can see Casey Barnes in a free performance live on The Avenue.
