Marco Polo & the Silk RoadThis incredible journey started with a four year voyage across western and central Asia, traveling by sea to the Persian gulf, and an ancient caravan route through present day Iraq, Iran, and Turk-menistan. They traversed the desolate Gobi Desert, and through several ancient mercantile cities finally reaching Shangdu, the summer residence of Kubla Khan. This route became known as The Silk Road.

The return journey took the Polos to the Spice Islands (Indone-sia), where Marco described in his book, (II Milione) the lush exotic sights tastes scents and amazing resources.

This a story of people not just places. Marco did more than travel through the landscape. He stopped off on the way, lived amongst the people, yearned for their women, observed their lives and cus-toms, and drew meaning from them. It is what brings his account and these venues’s alive.

The FoodAhead of his time as always, “Marco Polo” chose to offer Chinese dishes, Indian dishes, Caucasian Dishes alongside the contemporary Italian cuisine, creating the original fusion menu centuries before it would become a trend. Following his cu-linary curiosity along the ancient spice route, he collected recipes to bring back to Italy, and his eclectic cuisine defined fine dining for decades

Today, Marco Polo continues the tradi-tion with an ever-evolving menu featuring dishes from the Mediterranean, Italy, the Middle East, India, China and Caucasian regions (a region at the border of Europe and Asia), situated between the Black and the Caspian seas.

Oven for a Unique cooking technique

Marco Polo Ovens can be traced back two thousand years to the Han Dynasty. They differ from traditional direct fire barbecues in that the heat is indirectly drawn in from the outside.

This technique imparts a subtle smoky flavour and prevents fat drippings from catching fire. This special Ovens, unique to Marco Polo, are the only type of barbecue known that avoids this. Each Marco Polo’s restaurant may have a room showcasing this ancient style of cooking
