March is almost here and another wine club order is heading your way! We will be processing all orders on Monday, March 4th. All orders that are scheduled to ship will also go out and all pick up orders will be available on Monday the 4th. Remember, you have 75 days to pick up each order (Please pick up before May 15th).

2010 Cabernet Sauvignon $28.00/bottle/$22.40 Wine Club Tasting Notes: The nose is greeted with woody aromas of vanilla and cedar, fol-lowed closely by hints of fruit, such as strawberry jam and prunes. This Cabernet delivers a full body, enhanced by tasty and complex tannins. The mouth feel lingers and reflects the structure of the wine. It is clear this wine has been shaped to age.

Tasting Notes: Malbec will astonish you with its explosive aromatics. The nose is a complex blend of black-berry, strawberry, cas-sis, and prune. The first attack of the wine is followed by a pleasant round palate, flavored with eucalyptus, smoke wood and vanilla taste. The Malbec will leave you with a pleasant fruity after taste and a smooth tannin finish.

Smoked Gouda & Bacon Burgers with BBQ Sauce

Ingredients 2 tablespoons vegetable oil One 1-pound onion, halved and thinly sliced Salt 1/4 cup Frank’s RedHot or other hot sauce 1/4 cup beef broth 6 tablespoons unsalted butter, softened Eight 1/2-inch-thick slices of firm white bread 8 slices of thick-cut bacon 2 pounds ground beef chuck (20 percent fat), formed into 4 patties the same size as the bread slices 3 ounces smoked Gouda, shredded (1 cup) 1/4 cup barbecue sauce

Directions 1. In a large skillet, heat the oil. Add the sliced onion and a pinch of salt, cover and cook, stirring a few times, until the onion is crisp and tender and just turning translucent, 5 minutes. Stir in the hot sauce and beef broth and remove from the heat. Season with salt. 2. Heat a large griddle. Spread the butter on 1 side of each bread slice and griddle buttered side down over moderate heat until toasted, about 2 minutes. Transfer the toasts to a plate. Add the bacon to the griddle and cook over moderate heat until crisp, about 4 minutes per side; drain on paper towels. Wipe off the griddle. 3. Season the beef patties with salt and cook on the griddle over moderately high heat until medium-rare, about 2 minutes per side. Top each burger with ¼ cup of smoked Gouda and cook until the cheese melts, 1 minute. 4. Set the burgers on the unbuttered sides of 4 toasts. Top with the bacon, onion and barbecue sauce. Close the burgers and serve, passing more barbecue sauce at the table. —Brian Perrone

Bottling at the Winery

In these first few months of winter, bottling is in full swing here at Del Rio! All of our 2011 premium reds are now in bottle after aging for 15 months of barrel aging. Despite the late harvest, the 2011 reds are al-ready accessible with a lush mouthfeel and round tan-nic structure. These wines are layered and show great length. I am hoping to receive good reviews for this vintage in the future. A great addition to our bottling line up this year is our new 2009 Syrah Port. This delicious wine was aged for three years in neutral oak and the Syrah grapes come from the upper Block 11, one of Del Rio Vineyards warmest sites. Expect to see it release this summer. Our bottling schedule is in tune with the holidays this year and in mid-February, just as many people have pink hearts delivered ,we are bottling the famous pink Rose Jolee, the official wine of Valentine’s Day! So, let’s pop a bottle of Rose Jolee for the occasion and hope that its frizzante can lift up the fog on the valley. Santé! Jean-Michel Jussiaume
