TWF HARVEST 2015 As our winery and client base continue to grow, we proudly reflect on the accomplishments of the last year… and there were many. We saw several of our 2012 and 2013 wines receive critical acclaim with scores in the mid 90’s. It’s a testament to our winemaking staff, whose clear-eyed focus never wavers in the quest to produce world- class wines. We should also thank Mother Nature for delivering another exceptional vintage in 2014. While the scant rainfall wrecks havoc in other arenas, in the ultra-premium segment of the winemaking industry, dry conditions play to our advantage by delivering tiny berries absolutely packed with flavor. This marks three consecutive vintages that rival the best in California winemaking history. Another milestone was marked by our purchase of the new Napa winery facility in August. This venue is perfectly suited for The Wine Foundry’s approach to ultra-premium, small lot production. To make things interesting, shortly aſter our move, we were roused from sleep at 3:20 am on August 24th by a jarring 6.0 earthquake that rocked the entire Napa Valley. The epicenter was a mere two miles from our new home. Fortunately, we made it through with very few dings and scratches. Despite the fact some wineries suffered significant damage, we all felt a shared sense of gratitude and relief that our team and others were at home asleep when the quake hit. A quick clean up of the facility provided just enough time to welcome the first fruit of the vintage two days later. As harvest came to a close and the last fields of Cabernet Sauvignon were picked, we toasted the vintage with our very own 2013 Sparkling Wines – Blanc de Blancs and Blanc de Noirs. Both wines are stunning and are available to our clients. Looking ahead, we have big plans for the 2015 vintage. Due to an incredibly talented team and sound planning throughout our first 3 years of business, we are breaking ground on further expansion at the winery. This year, we are adding 125 tons of fermentation capacity; an additional 11,600 square feet of temperature controlled barrel storage; and cutting-edge crush equipment with the addition of a new de-stemmer and optical sorter. Each of these initiatives will take our wine quality to even greater heights. We look forward to working with you on the 2015 vintage and adoption barrels. This year, we are adding 125 tons of fermentation capacity; an additional 11,600 square feet of temperature controlled barrel storage; and cutting-edge crush equipment with the addition of a new de-stemmer and optical sorter. Each of these initiatives will take our wine quality to even greater heights.

HOW IT WORKS

At The Wine Foundry, we’ve developed a six-step process for winemaking that spans anywhere from 6 to 24 months, depending upon the grape varietal and style of wine you wish to create.

Browse through each of the vineyards and, when possible, try commercial wines made from them. If you prefer, talk to us about the style of wine you enjoy and we’ll help you choose the property best suited to your goals.

Every wine begins with a series of decisions that shape the aromas, flavors and textures in your bottle. Because each property has unique character traits, you’ll consult directly with our winemaking team on the impact of each decision on your wine’s style. From the selection of your vineyard and grape varietals, to which cork and capsule best suit your bottle, we’re with you every step of the way to educate, enlighten and execute.

Throughout the growing season, we’ll share weather updates, photographs and interviews with growers to offer insight on the vintage and how your fruit is developing on vine. As harvest nears, we’ll begin including a window of dates when it’s likely your grapes will be ready for harvest. Due to Mother Nature’s notorious tendency to play with weather, it’s extremely difficult to predict the exact date we’ll harvest. However, each property is monitored closely to ensure the grapes will be picked for optimum flavor development.

When the fruit arrives, you are welcome to join us at the winery to help sort, crush, ferment and press your wine. If you can’t be here in person, our winemaking staff is there to handle every step of the process as dictated by your wine plan.

Once you’ve signed up at The Wine Foundry, you’ll receive a Packaging Guide that helps you work with our design team to select your bottle, cork and capsule and create a unique label specifically for your wine.

We craft small amounts of additional wine each year for the specific purpose of bringing added depth and complexity to your final blend. As we near bottling, you will have an opportunity to work with our winemaking team to fine-tune the aromatics, texture and balance of your wine through a series of blending trials.

One of the largest, most beautiful and highly acclaimed vineyards we source from, Stagecoach climbs between 900 and 1700 feet up the southern face of Pritchard Hill to Atlas Peak. The site is planted to a wide range of varietals and rootstocks and features several distinct microclimates. Our Cabernet Franc block is from the Pritchard Hill region of the in-the-most-sought-after section of Cab Franc – Block I. This section is lower-yielding than most of the vineyard. This dry-farmed, Cabernet Sauvignon is located at 1800 feet elevation. It’s a trek to get to the property, but well worth the trip – especially considering Mike Beatty has been a driving force of modern day Howell Mountain grape cultivation, helping to define and secure the sub-appellation status of the Howell Mountain AVA. The vines are head-trained and are spaced approximately 2m x 2m. The site enjoys long days of warm sunshine thanks to the high elevation that puts them above the Napa fog. But, cool nights work to ensure a good level of acidity even at higher levels of ripeness. Wines made from this vineyard have telltale signs of cassis, blackberry, olive, tobacco and muscular tannins found throughout the Howell Mountain AVA.

Beatty Ranch Cabernet Sauvignon shows juice plum, wild berry, spicy currant surrounded by tar, tobacco and firm tannins.

This is one of our favorite places in Napa – just up the road from Soda Canyon, at the base of Atlas Peak on the eastern ridge of the valley. Fruit from this area gets the best of both worlds – hillside structure and rich valley floor flavor. Western exposure provides afternoon sun for the 2,000 vines planted per acre (talk about dense!) in extremely low fertility soil. Broken Rock is owned by elite vineyard designer & operator Bill Hill and farmed by Patrick Mahaney. Collectively, they represent over 70 years of viticulture experience and the fields they develop are consistently found in the WS Top 100.

This field consistently produces extremely concentrated wines with purple-black color and ripe, dark fruit aromatics.

We’re geeks; always keeping eyes wide and ears to the ground with the goal of scoring fruit from a trophied site. The trick is knowing the bloodline, so to speak… as you may not know the name of the field, you know the name of the wine the fruit has gone into over the past few decades. When the Spring Mountain Cabernet usually reserved for BV’s legendary Georges de Latour quietly became available, we pounced. The vines, which eek out just two tons per acre, cling to the hillside at this steeply terraced property. The nutrient poor soils and high elevation result in wines of extremely concentrated fruit and powerful structure.

Archetypical mountain grown characters, with dense black and blue fruit on the nose and palate backed by bold structure. Majesty in a bottle.

Located in the heart of Stags Leap District on Silverado Trail, Clos du Val is synonymous with Stags Leap Cabernet. Our fruit is sourced from the same block as the famous CdV Stags Leap bottling. Director of Vineyard Ops, Al Wagner, has been meticulously farming these blocks for over 14 vintages and keeps yields in check by dropping and thinning when appropriate to balance the fertility of the ground. We have been searching for an iconic Stags Leap District field for the past few years and finally found the one.

Opulence in a bottle – complimented by black fruits, chocolate and dried herbs leading to a finish anchored by fully integrated, silky tannins.

Dragon’s Tale climbs some 900 feet above the valley floor on the steep, rocky slopes of Atlas Peak. Here, daytime temperatures tend to be a tad cooler and evening temperatures slightly warmer than the Napa floor below. The steep slopes offer excellent sun exposure to create small, intense berries with sturdy mountain tannins.

The resulting wines deliver complex aromatics, inky-black coloring with flavorings of black cherry, cassis and hints of dried herb.

One of the most historic and sought after properties in the world – G3, as we call it, was originally owned and planted by Thomas Rutherford in 1895. Georges de Latour, founder of Beaulieu, purchased the site in 1928 and it became the home to BV’s Rutherford Cabernets made by elite winemaker, Andre Tchelistcheff, throughout the ‘60’s and ‘70’s. The site was then purchased by Beckstoffer Vineyards in 1988. Andy, Dave and team have replanted using modern clones, trellising and spacing to yield optimum quality. Wines from this field consistently score in the high ‘90’s, year after year.

The largest, and one of most acclaimed vineyards we source from, Stagecoach climbs between 900 and 1700 feet up the southern face of Pritchard Hill to Atlas Peak. The site is planted to a wide range of varietals and rootstocks and features several distinct microclimates. We source our Cabernet from a small, steep block near the top of the site. This section is lower-yielding than most of the vineyard. Stagecoach Vineyard is rich in story, rock and perennial high scoring wines.

Heaven on earth… literally. Alder Springs Vineyard is as stunning as the fruit is unparalleled. The slightest grade in the vineyards is 25%. The terrain is wild, rugged and breathtaking. Located 150 miles north of San Francisco, 12 miles east of the Mendocino coast and 3 miles west of famous Redwood Highway 101, the region is undeveloped and bordered by dramatic coastlines and enormous redwood trees. Although the vineyards are planted between 1700-2700 feet in elevation, the landscape of peaks and valleys and bigger peaks rise to 4,000 feet and offer nearly perfect growing conditions – bright sun, cool nights and phenomenal low-vigor soils. Stu and Tom manage a crew that provide hands on attention to every vine (in some cases up to 13 times a year for all 315,000 vines). The average California grape grower can expects a vine to yield between 10-50 pounds of fruit. At Alder Springs, vines produce just 2.5 pounds of grapes for concentration of flavor. This is called the Bonsai approach – plucking nearly three quaters of the fruit off each cluster, often taking 10 minutes to work on a single plant.

Reminiscent of Grenache from the southern Rhône, expect to find berry and more red fruit along with some earthy minerality and herbal notes (touch of anise) which are very interesting in the varietal.

This is one of our favorite places in Napa - just up the road from Soda Canyon, laying at the base of Atlas Peak on the eastern ridge of the valley. Fruit from this area get the best of both worlds – hillside structure and rich valley floor flavor. Western exposure provides plenty of afternoon sun for the 2,000 vines planted per acre (talk about dense!) in extremely low fertility soil. Broken Rock is owned by elite vineyard designer and operator Bill Hill and farmed by Patrick Mahaney – collectively they represent over 70 years of viticulture experience and the fields they develop are consistently found in the WS Top 100.

In the cellar, we often remark that it’s a Merlot masquerading as a Cabernet Sauvignon. The wines show a mix of red and blue fruit with the tannin structure of a Cabernet and mid palate of a Merlot.

Massa Ranch is a certified organic vineyard in Yountville, just south of Yountville proper, east of Highway 29. Owner Patrick Ridder is as passionate as his hands are dirty when coming off the field. Laying on the valley floor, this field benefits from slightly cooler temperatures than the benchland or mountain interpretations of Petit Verdot. While the finish is lengthy, the acid is very appealing – it will make for a bigger style, but extremely interesting as a base varietal.

Ask and ye shall receive. For years, clients have clamored for Sangiovese fruit. We agreed. But, despite, scouring numerous properties, the quality simply didn’t meet our expectation. We wanted something which could stand alone, or be used in conjunction with Cabernet Sauvignon to deliver a knockout punch. We found the answer in the Dry Creek Valley. Farmed organically since 2003, Dry Creek Bench Vineyard incorporates principals of biodynamic viticulture. The berries are small, the skins chewy and the flavors pronounced. Good for the Earth and great in the bottle. We’re head over heels to introduce Dry Creek Bench into the portfolio.

This is not a one trick pony. Dense layers of red fruit are augmented by spice and incredibly complex cigar box characters. Structurally, the wine is built a foundation of the finest grained tannins imaginable. For those seeking a varietally labeled Sangiovese, we can shape the nose and palate with Petite Sirah, Syrah and Zinfandel. For a super Tuscan inspired blend, we’d straddle into Napa to incorporate black fruit driven Cabernet Sauvignon.

Heaven on earth… literally. Alder Springs Vineyard is as stunning as the fruit is unparalleled. The slightest grade in the vineyards is 25%. The terrain is wild, rugged and breathtaking. Located 150 miles north of San Francisco, 12 miles east of the Mendocino coast and 3 miles west of famous Redwood Highway 101, the region is undeveloped and bordered by dramatic coastlines and enormous redwood trees. Although the vineyards are planted between 1700-2700 feet in elevation, the landscape of peaks and valleys and bigger peak rise to 4,000 feet and offernearly perfect growing conditions – bright sun, cool nights and phenomenal low-vigor soils. Stu and Tom manage a crew that provide hands on attention to every vine (in some cases up to 13 times a year for all 315,000 vines). The average California grape grower can expects a vine to yield between 10-50 pounds of fruit. At Alder Springs, vines produce just 2.5 pounds of grapes for concentration of flavor. This is called the Bonsai approach – plucking nearly three quaters of the fruit off each cluster, often taking 10 minutes to work on a single plant.

Aromas of wet stone, mushroom, violet, leather and red fruit paired with bing cherry, huckleberry, cassis, bittersweet chocolate and black pepper on the palate.

White Hawk Vineyard sits on the southern facing slope of Cat Canyon some 21 miles from the Pacific and 2 miles north of Los Alamos. The marine influence causes early morning fog that envelopes the site before giving way to bright, warm sun. It’s planted at an elevation of almost 900 feet on ancient pure sand dunes, immediately draining off water and nutrients which forces the vines to work extra-hard to survive (this sounds cruel, but it’s a good thing). White Hawk is custom-farmed using sustainable and primarily organic viticulture methods. The yields here are miniscule and the berries intense and slow to ripen.

A strong core of acidity complemented by elements of blackberries and tobacco.

Catie’s Corner is located in the middle to slightly northern section of the famous Russian River Valley. Our small block of Viognier has a gently rolling profile with predominantly Huichica loam soil. One of the most important qualities about this site for Viognier is the consistent cycle of gentle warming and cooling each day, often the result of foggy mornings and evenings. This helps preserve the balance between attractive natural acidity and the opulent flavors typical of Viognier. This cycle of warming and cooling also leads to a lengthier period of ripening during which flavors and aromas can develop gradually and with greater depth and complexity. The Viognier at Catie’s Corner was budded onto existing rootstock in 1995.

Typical texture and roundness on the palate as you’d expect from a Viognier. Bright, perfumed nose, pronounced citrus and floral characteristics balanced by vibrant acidity.

Located just west of Healdsburg, in northern Sonoma County, Grist sits on top of Bradford Mountain, the tallest of the hills making up the coastal range bordering Dry Creek Valley. 15 miles east of the Pacific Ocean and in between is nothing but forested hills where countless mountain lions, wild pigs and deer roam. Named for the old grist mill on the property, it was planted to Zinfandel about 100 years ago. Replanted in 1973, Grist has been farmed organically for the last 12 years and is a CCOF Certified Organic Vineyard. The head pruned vines sit in iron-rich, red volcanic soil that stress the vines into low yields and concentrated wines. Like many of our other mountain sites, Grist sits above the fog line creating a unique microclimate of decreased humidity and increased hours of sun exposure.

From designing a unique label, to selecting your final packaging, our award winning design team will work closely with you every step of the way. Creating your wine is a very personal journey and the story of your winemaking experience is just one of the ideas expressed in the design process. The possibilities are endless. Don’t tell the Winemakers, but many think designing their packaging is the most fun stage in their winemaking journey.

Simply put, a successful brand starts with a good story. What led you to make wine? What makes your brand unique? How does your wine stand out from the rest?

The name and label design of your wine will speak volumes as to its quality and personality. The imagery, fonts, and colors should create a style that reflects the name and personality of your brand. If you’re unsure about the direction to take, we’ll talk through your story and take it from there.

We have several bottle shapes, sizes and weights to choose from – do you want a custom cork with your brand name? Embossed or foil labels? Silkscreen or Etching? Wax dipped or tin capsule? If it can be done, we will work with you to do it.

Your wine has come off the bottling line and now it’s time to take it on the road. Whether sharing it with the friends, or you’ve started your own brand and pouring at an event – when your bottle hits the table it’s with pride you will say, “This is my wine.”
