INGREDIENTS

1 lb. Jumbo Lump Crab Meat

1 Egg Yolk

1 Tsp. Old Bay

¾ Cup Mayonnaise

2 Tsp. Dijon Mustard

½ Tsp. Worcestershire

2 Tsp. Whole Milk or Heavy Cream

1 Tsp. Fresh Lemon Juice

1 Tbsp. Chopped Parsley

Salt & Pepper To Taste

4 Rockfish Fillets, about 6 oz. each

DIRECTIONS

Preheat the oven to 350 degrees.

Empty jumbo lump crab meat into a bowl and pick out

any little pieces of shells that may be in there.

In another small bowl, whip the egg yolk and Old Bay

together until completely smooth. Fold mayonnaise,

Dijon, and Worcestershire into the mixture thoroughly.

Reserve about a quarter of the mixture, and add milk

or cream, lemon, and parsley to this reserved amount

this will serve as the final glaze. Pour the remaining

sauce into the crab bowl to create the imperial stuffing.

Season with salt and pepper to taste.

Lightly fold together the crab meat, and sauce making

sure not to break up the larger crab lumps.

Lightly rinse each fillet in cold water, then pat dry.

Season each fillet with salt and pepper to taste.

For a thin, long fillet, split the fillet down the center

keeping the ends intact. Lay the fillets on a lightly but-

tered sheet pan. Create an oval shaped hole with

each fillet and stuff the imperial stuffing into the oval. If

the fillet is short and/or fat, spread the imperial base

across the top evenly.

Evenly coat each stuffed fillet with the reserved sauce.

Bake for 10 to 15 minutes, until the center of the fish

fillet and imperial stuffing are hot. Using a thermome-

ter, 140 degrees is the target temperature. The glaze

should be golden brown and slightly puffy.

With a spatula, place the rockfish imperial on your

serving platter. Serve with a fresh lemon, and pinch of

sea salt. Garnish with parsley if desired.

Will they show up? Will they come inclose enough this year? That's thequestion we all have every year asthe big stripers migrate past ourbeaches every spring and fall.

After wintering down south, the bigrocks make their way up the coast toto their northern summer haunts.Some years they pass us right in thesurf. When this happens, Delawaresurf fishing becomes truly amazing!

There is nothing like a calm, crispspring morning on the beach. Abeautiful sunrise, waves gently lap-ping on the shore. Then, out ofnowhere, the serenity of the momentis shattered by the screeching of linebeing ripped off your reel as a giantstriper picks up your bait and runs.

Starting around mid April, andthe first few weeks of May, if theycome in close you will see the firstposts of the season on GreatAngler-s.com. You may wish to “follow” a fewof our avid surf fishermen so you canbe notified when they catch some ofthese giant rocks.Then get out there early and/or stayout late. I have had the most produc-tive times before sunrise and aftersunset.

Be Ready For Big FishI can't tell you the number of fish I'veseen lost due to insufficient prepara-tion and lack of respect for their sizeand strength. When a monster stripertakes your bait and runs, your setupis only as good as its weakest link.

Choosing Good TackleUse a good strong rod with smoothguides. 30+lb line in good condition.Tie your own knots and TEST thembefore you cast. Use high quality,sharp hooks attached to 12-24” of30+lb Fluorocarbon leader. I fastenthe leader to the line with a barrelswivel. I prefer to use a fish finder onmy line with enough weight to justhold the bottom. After my entire rig istied and set, I place my hook throughan anchoring point (usually the rearhatch latch of my truck) and then pullwhole thing hard enough to makesure nothing is going to come apartwhen I hook up.

Even with years of experience surffishing, every once in a while the rigfails this test and I have to start over.Thank God I found out now and notwhen a 50+ pounder is on the line!

Fresh, Fresh, Fresh Bait!Bait can never be too fresh. Whetheryou use live clams, blood worms,fresh bunker, or whatever, just makesure it is live, really fresh, or a highquality frozen, preferably in that spe-cific order. Fish can really tell the dif-ference.

Cast to the Fish!Do not cast over the fish! Too manypeople cast too far out when the fishare often right in front of them. Cast-ing 150 yards out to flat baron bottomwon't necessarily bring in bigger fish.Often the fish are right in the whitewash or right past the first ledge be-hind the closest breaking waves.Read the waves, look for the deepspots, troughs, structures or rip tides.Then cast to them. Set your drag andtest it! Make sure there is enoughtension to make the fish work for yourline, but not too much to even comeclose to ever breaking it.

The Waiting Game Begins...Take your rod and hold on to it. Youcan put it in a strong and well an-chored rod holder if you like, but forheavens sake don't stick in a littlePVC sand spike that's only 6 or soinches in the sand. I have seen rodslaunch like missiles out of poorlyplaced sand spikes. I like to hold myrod so I can feel when the fish picksup the bait and starts to run.

Fish On!This is what we've all been waitingfor! Your rod starts bending, yourdrag starts screaming, and yourblood pressure shoots through theroof! Keep that rod tip up and yourline taught. Reel in and gain linewhenever you can but don't be afraidto let that fish take a run or two. Letthe rod, reel and line do their job.Bring that beast on the beach anduse the waves to help you. Time yourretrieves so that the fish is pushed inwith the waves. If the fish gets caughtin outgoing waves or current don'tfight it! Even the strongest tackle willbreak when a big fish is broadside inoutgoing waves or current and thedrag is too tight. So let it go and justreel it back in when you can. Alwayskeep your rod tip up and your linetight. When that fish finally hits thesand, grab it and don't let go!
