New year, same chef jackets2015 sees the 72nd anniversary of Segers' business. Ever since 1943, we have been

supplying Sweden's elite chefs with garments that are both practical and smart. Over the

years, we have introduced more choice and improved the quality of our materials and other

features. However, we have not changed the look of our chef jackets in any way. The last

time we altered our chef coat was in 1963. You could say it's a modern classic. Maybe

that's the reason why Sweden's most eminent chefs choose to cook classic gourmet dishes

dressed in Segers' garments.

In this first copy of Magasin Segers, we have mixed our classic models with our selection

of colourful jackets and shirts and our extra price-worthy range. In other words, here there's

something for everyone, for a long time to come. No matter what garment you choose,

the quality is the best possible. You can read more on page 8 about how we ensure your

A chef coat's life is long and eventful. You will seldom find out what secrets it holds since it is designed not to reveal anything! All the "ingredients", from cloth to buttons, have been carefully chosen so your garment will last for a long time, unaffected by its many trips between kitchen and washing machine.

A restaurant kitchen is stressful and hot. The

high tempo is perhaps not noticeable in the din-

ing room but behind the scenes it's full speed

ahead, from early morning to late evening. Gra-

vy stains, cooking fumes and sweat are liter-

ally everyday food for the clothing. No matter

whether the restaurant washes the clothes

itself, sends them away for cleaning or rents

clothes straight from a laundry, the process

means wear and tear for the clothing. The key

to a successful restaurant kitchen is to treat the

chefs' clothing like any other basic commodity;

having several sets and using high-quality ma-

terial will pay off in the long run.

This last topic is something that Lena Reslow

is an expert on. For almost 10 years, she has

been Segers' product manager and has en-

sured that their range of clothing has been con-

tinually developed. Product development is a

key issue for Segers and, just as with cooking,

the quality of the raw materials is crucial for the

end result. That is why the "ingredients" of the

garments are chosen with the greatest care.

The cloth material is the most important factor.

"In our basic range, we often use satin-weave

or twill-weave cloth which has a mix of 65 %

polyester and 35 % cotton. This is an estab-

lished mix in the trade and it makes the clothing

durable. The more polyester, the better the gar-

ment can withstand wear and tear," says Lena.

The high polyester content enables the basic

range to tolerate wash temperatures

of up to 85°C or the equivalent in-

dustrial wash. But it's not just the

cloth that has to be durable. The

different features of the garment,

like the seams, are at least as im-

portant. Here, Segers use thread

that is 100% polyester. The buttons

are also important. The classic chef

jackets have stud buttons that are

removed before washing. Our range

also has single-breasted shirts with

concealed press stud buttons. Plas-

tic buttons are also used sometimes

and here too, Lena and her col-

leagues have done a lot of thinking.

"We use nylon buttons for garments that must

be able to withstand industrial washing. To pre-

vent colour loss, we use plastic buttons that

have been coloured all the way through. In that

way, the colour cannot wear off, no matter how

many times the item is washed," says Lena.

Segers' production started in Borås in 1943.

The main office is still located here. Production,

however ,has been moved abroad: in 1995, a

factory was opened in Estonia, in 2005 in the

Ukraine and this year, 2015, we are going to

inaugurate a new production plant in Pakistan.

Sustainable production is important for Segers.

That means, for example, that the basic collec-

tion is OEKO-TEX® certified which means that

the materials and accessories have very little or

no remains of toxins or chemicals. The certifica-

tion is renewed every year.

It is difficult to forecast the future of chef's cloth-

ing. Cooking is a traditional profession and is

still dominated by double-breasted jackets with

stud buttons. However, Lena has noticed one

change: sleeve length is gradually getting short-

er and short-sleeved shirts are becoming more

and more popular. Lena says that different cloth

materials may also be on the way in.

"Producing cotton is a energy-consuming pro-

cess in many ways. Certain findings indicate

that cotton production is going to peak as ear-

ly as in 2025. A future challenge will be to find

cost-efficient alternatives."

• Blood - Remove the stain immediately with cold water. Then wash with hot water and enzyme detergent containing perborate.

• Dark garments may contain excess dye. Wash before use.

• Follow the washing instructions on the garment label.

• Hand-washing is not more gentle on the garment than machine

washing.

• Temperatures lower than those recommended can cause colour loss.

• Do not use too much fabric softener. It causes pilling.

Do not mix white and colour wash.

• Heavily soiled wash must not be washed with light fabrics.

• Never wash socks and wool with woven materials.

• Special stain removal is done before washing.

• Always try to remove stains while they are "fresh".

• Do not pack the machine too full. This may cause permanent creasing.

• Never soak overnight. Run a soaking programme instead.

• Fat - Remove immediately using acetone, petrol or methylated spirit, with a minimum of liquid.

• Hand disinfectant – You can remove stains by pouring a teaspoon of citric acid in the washing machine.

• Coffee - Remove with hot water and enzyme detergent containing perborate.

• Ballpoint pen - Remove with methanol or methylated spirit. Rinse with water.

In 1963, a chef coat cost SEK 22. With today's monetary value, that's the equivalent of SEK 224 which is almost exactly what

our jackets cost today.
