B y D i a n e H a w k i n s B raden Bu t le r, o f Boy Scout Troop 755 from The Church of Jesus Christ of Latter-day Saints, chose the 2013 Run for Ruby in Rancho Santa Margarita as his Eagle Scout proj-ect. Braden’s duties in-cluded attending all plan-ning meetings, recruiting al l 80+ volunteers and signing up blood donors for the event. He person-ally managed set-up and c l ean -up and n o t i f i e d ne ighbors a f fec ted by the race through street c losures. He was a lso i nvo l ved i n app roach -ing local businesses to ask for their involvement and en l i s t i ng commu-nity support for the run. His Boy Scout troop was right behind him to make it all happen. As Braden’s mom Elise said, “It’s amazing to see these young men, willing to show up at 5 am on a Saturday, especially as cold as it was that morning.”

When B raden , a sophomore at the Orange County School for the Arts, was asked why he chose helping with this particular

event, he said, “I wanted to do something that was meaning-ful and that could really make a difference in someone’s life.

I thought I could get the youth involved and make them aware of the importance of blood, bone marrow and organ donations”.

Known as innovators of the game of basketball for decades, the world famous Harlem Globetrotters are again introducing something unpar-alleled in the history of sports and family entertainment, tak-ing kid participation and fun to a whole new level on their 2013 “You Write the Rules” World Tour.

The City of Ran-cho Santa Margarita and the AARP Tax Aide group will once again be conduct-ing the “Tax Prepa-rat ion Assistance” program from Febru-ary 6, 2013, through April 10, 2013 at the Bell Tower Regional Community Center. The Tax Preparation Assistance program provides FREE assis-tance in filing federal and state income tax returns for low- and moderate-income tax-payers of ALL ages to eligible residents located in the city of Rancho Santa Mar-garita.

Tax preparation as-sistance will be provid-ed every Wednesday between the hours of 12:00 and 4:00 PM. This service is provided by appointment only to ensure personal attention and to avoid lengthy wait times. Appointments can be scheduled now by calling 949-216-9700, extension 251. Further information will be provided to ensure eligibility requirements are met and to inform par-

Minute Way to Cure Canker Sores and Cold Sores

About twenty percent of the population suffers from canker sores, while twenty to thirty percent suffers from cold sores.

Both kinds of these common mouth lesions are painful and annoying but there’s no need to wait a week or ten days for this irritating condition to subside. Here in my dental office in Rancho Santa Margarita, I use a laser. It quickly delivers a small, concentrated amount of energy to a very specific, localized area, and, in the course of a five minute office visit, the lesion is significantly reduced in size, essentially scabbed over, and the patient is free of pain. Modern technology at its best! Cold sores are fluid-filled blisters on the lips. Their outbreak is stimulated by trauma, colds, or most commonly, exposure to the sun. People who get them regularly report a tingling sensation in the area before any lesion actually appears. Anti-viral medications taken very soon after onset dramatically shorten the length of time of the outbreak and its severity. The amino acid, Lysine, is said to be useful in fighting cold sores. The culprit herpes simplex virus is easily transmittable.Canker sores, also called mouth ulcers or apthous ulcers, are not contagious. They occur as shallow ulcers inside of the mouth. Because they are not caused by a virus, canker sores cannot be treated with anti-viral medications. Canker sores are a reac-tion to certain “triggers” that initiate their formation. Foods like chocolate, nuts, beer, in some cases orange juice, and wheat products may be the instigator. Of course, injury to the inside of the mouth caused by eating hard candy, crusty French bread, corn chips, or hurried tooth brushing can also be the perpetrators. Warm salt water rinses are the old fashioned treatment of these lesions. Rinsing this way increases circulation and thereby removes toxins from the inflamed tissues. Ibuprofen, an over-the-counter, non-steroidal, anti-inflammatory, is slow but effective. But most people with busy lives find it faster, easier and more comfortable to come into my dental office and enjoy the immediate relief a laser treatment provides. The laser is fast, affordable and, as I mentioned above in the course of a five minute office visit, the lesion is significantly reduced in size, essentially scabbed over, and you continue your daily routine free of pain. Please don’t hesitate to call my office if mouth lesions are a problem. David Wagner, a three-time Olympic gold medal-ist and the top-ranked quadriplegic tennis player in the world trained at the city’s Marguerite Tennis Pavilion on Monday.

Wagner will return to the Tennis Pavilion in the fall for the International Tennis Federation (ITF) Master Series – Wheelchair Doubles World Cham-pionships. The city of Mission Viejo will be the first U.S. city to host the prestigious event Nov. 7-11.

Wagner has been ranked in the top 3 in the world since 2002. He competed in the Paralympic Games in Athens, Greece (2004), Beijing, China (2008), and London (2012) winning three gold and two silver medals and a bronze in singles and doubles. He is the 2010 US Open Singles and Doubles Champion.

“It was exciting to get a training session here at the Marguerite Tennis Pavilion before I head to the Australian Open on Saturday,” he said. “Knowing that our Doubles World Championship is coming here to Mission Viejo in November is exciting and it is great having the advantage of being able to train here!”

The nationally-recognized Eagle Dance Team from Santa Margarita Catholic High School opened their 2013 competition season with a large haul of awards at the Shark Splash Spectacular at Santiago High School in Corona last weekend. The Eagles took home three first place finishes, winning in Hip Hop, Extra Small, and Large Lyrical dances. In addition, the team earned second place in Medium dance and fourth in the Small Lyrical/Contemporary dance categories.

Santa Margarita fielded three outstand-ing soloists, Senior Alyssa Henry, and Juniors Katherine Bogart and Ashley Jo Zaccagnini. Henry and Bogart each took first place in their respective divisions, and Zaccagnini took third from a field of highly skilled juniors.

The Shark Splash Spectacular hosted dance teams from seventeen Southland high schools, including some of the most competitive teams Santa Margarita will face throughout the year. It served as a good barometer of where the Eagle Dance Team is at the beginning of the competition season. Most notably, the Eagles earned the award for Best Overall Technique.

“This weekend’s results made for a really exciting start to our competitive season,” said Santa Margarita Dance Director Bri Allard Blonigan. “The dancers work so hard to prepare for these events; it is truly moving to watch them experience having that hard work acknowledged and celebrated by others.”

While this is the first competition of the year, the Eagles began their preparation for 2013 last summer, under the direc-tion of Blonigan, Dance Coach Sarah Rayburn, and selected choreographers.

The Eagles travel to San Diego County this weekend to compete at the California Association of Dance/Drill Team Directors (CADTD) event at Westview High School. Future competitions will take them to El Dorado High in Placentia and another stop at Santiago, a National competition in Orlando, Florida, and CADTD State Championships in Glendale.

Following the competition season, the Santa Margarita Dance program concludes with the annual Spring Dance Concert, held on the campus of Santa Margarita Catholic High School from May 15-18.

CHOC CHildReN GAlA RAiSeS $900,000

The Island Hotel in Newport Beach was the setting for the 5th annual CHOC Cherishes Children Gala that honored the Sisters of St. Joseph of Orange and St. Joseph Hospital of Orange. Around 475 guests attended the black-tie affair that featured a cocktail reception, dinner, live auction and entertainment.

This year’s gala, themed “A Future Built on Hope,” raised money for the “Change CHOC, Change the World” campaign. Publically launched in spring 2010 and running through June 30, 2013, the comprehensive $125 million fundraising campaign aims to make Orange County one of the safest and healthiest places for children in the nation. Specifically, the campaign will help CHOC realize its vision of achieving national recognition as a premier children’s hospital by build-ing a state-of-the-art patient care tower, set to open this spring; establishing a substantial endowment to support recruiting more of the world’s top pediatric experts who can drive research and clinical breakthroughs; and building upon the academic and research affiliation with UC Irvine and its School of Medicine to advance innovative treatments and cures for children.

The décor was breathtaking walking into the ballroom. Since the gala commit-tee couldn’t bring the event to the new tower, the goal was to bring the beautiful new tower to guests. That was reflected in the decor with a dramatic video wall, spanning the entire length - floor to ceiling - of the ballroom.

Taking the stage to honor the Lifetime Achievement Awards was CHOC President and CEO, Kimberly Cripe, who presented the awards to Sister Theresa LaMetterey, CSJ, and Steve Moreau, president and CEO, St. Joseph Hospital. During the presentation, Cripe expressed her deep gratitude for the role the hon-orees have played in CHOC’s history and in supporting the health and well-being of children and families in Orange County.

Dinner was served and guests enjoyed for their first course Butter lettuce salad chevre, orange segments, and pomegranate with citrus vinaigrette. The main course consisted of a Petite filet of beef on potato au gratin with red wine sauce and chimichurri and Maine diver scallops on truffle risotto with Beurre Blanc with Ragout of mushrooms with carrots and Brussel sprouts. Decadent desserts were enjoyed; they were Chocolate salted caramel mousse and red velvet cheesecake.

A plethora of items were offered for auction this year, which included a Martha’s Vineyard Hideaway; Angels Ultimate Baseball Fantasy; a trip to Casa Fiesta - Zihuatanejo, Mexico, but the auction item yielding the highest bid of $26,000 was a luxury golf vacation on the big island of Hawaii.

This year, CHOC raised $900,000 which is up from last year’s total of $600,000. Towards the end of the evening, Cripe announced a $27 million gift from Newport Beach resident and retired businessman Bill Holmes to name the new tower, which opens in the coming weeks. The CHOC Cherishes Children gala was organized by a volunteer committee. Premier underwriters for the gala are Heather and Jim Madden, Harry Winston, and Disneyland Resort.

Raspberry Cream Cupcakeswith Cream Cheese FrostingBy Frankie FrancolloYield: 24 cupcakes Serving size: 1 cupcake with frostingCupcakes2 1/2 cups all-purpose flour

2 teaspoons baking powder 2 cups granulated sugar 4 eggs1 cup milk

3/4 cup canola oil 1 teaspoon vanilla extract 2 cups raspberries, fresh or frozen

Cream Cheese Frosting2 packages of cream cheese

(8 ounces) at room temperature1 1/2 cups powdered sugar, sifted

1 teaspoon vanilla extract Preheat oven to 350°F. Line muffin tin with24 cupcake liners.

In small bowl, combine flour and bakingpowder. In medium bowl, combine sugarand eggs. Using electric mixer, combineuntil mixture thickens, about 1 minute. Addmilk, canola oil and vanilla. Continue tomix. Slowly add flour mixture until fullycombined, scraping sides of bowl withspatula to get out all lumps. Remove bowlfrom mixer.

Add 1 cup raspberries. Gently mix inraspberries by hand. Spoon mixture intomuffin cups until about two-thirds full.

Bake for 20 minutes or until cupcakesspring back to touch. Remove from ovenand cool cupcakes completely.

To prepare frosting: In medium bowl,mix cream cheese on medium speed untillump free. Slowly add powdered sugar andvanilla extract until fully combined. Spooncream cheese frosting into pastry bag withmedium round tip and pipe on top of cooledcupcakes. Top each cupcake with a rasp berry.Serve right away or refrigerate until serving.

4 cups chopped kale 2 tablespoons chopped, toasted hazelnuts 2 tablespoons dried cranberries 2 tablespoons blue cheese crumbles

1/4 cup flat leaf parsley, whole leaf Hazelnut-Balsamic Vinaigrette

1/3 cup balsamic vinegar 1 tablespoon water 2 teaspoons Dijon mustard

1/2 teaspoon salt 1 shallot, minced

1 clove garlic, minced1 tablespoon fresh chopped thyme

1/2 teaspoon black pepper 1/4 cup crushed, toasted hazelnuts 1/2 cup canola oil

In large bowl, combine kale, hazelnuts, cranberries,blue cheese and parsley. Set aside.

To prepare vinaigrette: In medium bowl, combineall ingredients except canola oil using immersionblender. Then slowly blend in canola oil untilemulsion forms.

Add Hazelnut-Balsamic Vinaigrette to Kale Salad,toss and serve.

fresh dill 3 tablespoons chopped

fresh flat leaf parsley 3 tablespoons chopped

Soak cut potatoes in cold water over -night. Before deep-frying, removepotatoes from water and pat dry.

Using deep-fryer, heat canola oil to375°F. Deep-fry for 8 to 10 minutes oruntil lightly golden. Remove fries fromdeep-fryer and drain on paper towels.

If necessary, in saucepan, reheat 2 cups poutine gravy and set aside.

Return fries to deep-fryer and fry for additional 3 to 5 minutes or untilgolden brown. Remove from deep-fryerto stainless steel bowl. Add gravy, cheeseand herbs. Stir gently to com bine.Season with salt and pepper. Serve.

Poutine Gravy Yield: 5 cupsServing size: 1/2 cup

3/4 cup diced yellow onion 2 tablespoons diced carrot 2 tablespoons diced celery

2/3 cup canola oil 1 tablespoon chopped sage

1/2 teaspoon tomato paste 1/3 cup all-purpose flour

4 cups beef stock 1 tablespoon Worcestershire

sauce 1 teaspoon chopped garlic 1 tablespoon chopped

rosemary 1 teaspoon salt

1/2 teaspoon pepper In large saucepan, sweat onion,carrot and celery in canola oil over medium heat until slightlycaramelized. Stir frequently. Addsage and tomato paste and sauté for1 to 2 minutes.

Sprinkle vegetable mixture withflour and combine to form roux.Heat for about 30 seconds. Addstock, Worcestershire sauce andgarlic. Simmer for 35 minutes.

Season with rosemary, salt andpepper. Simmer for additional 10minutes. Using immersion blender,purée gravy. Leftover gravy can befrozen for future use.
