Ingredients

18 x 22cm rice paper rounds400g small cooked prawns, peeled and deveined, halved lengthways1 small Lebanese cucumber, cut into thin sticks1 cup bean sprouts1 cup mint leaves1 cup coriander leaves

Dipping sauce2 tsp soy sauce2 tsp rice wine vinegar2 tsp freshly squeezed lime juice1 tsp sugar

Method

To make dipping sauce, combine soy sauce, vinegar, lime juice and sugar in a bowl and set aside.

Fill a large bowl with warm water. Take 1 rice paper round and immerse in water for about 5 seconds to soften. Remove and lay on a fl at surface. Cut 6 rice paper rounds in half with a sharp knife. Take 1 half rice paper round and immerse in the water for 5 seconds. Remove and lay it along centre of whole rice paper round.

Layer 5 or 6 prawn halves along centre of prepared rice paper round. Top with cucumber, bean sprouts and herbs, be careful not to overfi ll. Fold in sides and roll up tightly to enclose fi lling. Put on a serving plate and cover with a damp piece of paper towel. Repeat with remaining rice paper rounds and fi llings.

Serve with the dipping sauce.

Makes 12 rolls
