Teriyaki Beef with Asian Mushrooms

Ingredients

2 tbs soy sauce2 tbs dry sherry2 tsp honey1 garlic clove, crushed3cm-piece ginger, peeled, shredded400g beef rump steak, excess fat trimmed, thinly sliced1 tbs peanut oil150g oyster mushrooms, halved100g shiitake mushrooms, thickly sliced100g enoki mushrooms, trimmed270g pkt hokkien noodles3 spring onions, sliced1 tbsp sesame seeds

Method

Combine soy sauce, sherry, honey, garlic and ginger in a bowl. Add beef. Place in the fridge for 30 minutes to marinade.

Heat half a teaspoon of oil in a frying pan on medium-high and fry the beef for 3-4 minutes. Add oyster mushrooms and fry for 1 minute, then add remaining mushrooms and spring onion and stir-fry for a further minute.

Sprinkle with sesame seeds and serve with cooked hokkien noodles.
