Ingredients

2 x 8 cutlet, lamb racks, trimmed of fat (4 cutlets per person)1 tablespoon sea salt1 tablespoon cracked pepper 1 tablespoon pressed garlic2 tablespoons chopped fresh oreganoJuice of one lemon, freshly squeezedChopped rosemary as a garnish

Method

Mix garlic, oregano and lemon juice together in a small dish. Baste each lamb rack with the lemon mixture and a liberal grind of salt and pepper. Wrap bone ends with foil to prevent scorching. Interlock the bones of each rack so that the racks stand on their own and place in a hot barbeque for approximately 20 minutes.

Drizzle lamb with cold water to prevent drying out, and rotate once, throughout the cooking process. Slice each rack into 4 cutlet portions and serve with chopped rosemary.
