A versatile vegetarian alternative to a traditional beef pattie, perfect for barbecuing, hamburgers, wraps or salads.

Ingredients

2 tablespoons currants2 teaspoons red wine vinegar1 tablespoon boiling water1/2 cup couscous1/2 cup boiling water, extra1/2 large red onion, chopped2 x 400g cans chickpeas, drained, rinsed1/4 cup fresh fl at-leaf parsley leaves1 teaspoon ground cumin2 teaspoons ground coriander1 egg, lightly beatenVegetable oil, for shallow-fryingMixed salad greens to serve

Method

Place currants in a small bowl. Add vinegar and the tablespoon of boiling water. Set aside.

Meanwhile, place couscous in a heat-proof bowl. Add the extra boiling water. Cover and sit until liquid is absorbed. Fluff with a fork to separate grains.

Place chickpeas, onion and parsley in a food processor. Process until roughly chopped. Transfer to a bowl and add the couscous, spices and egg. Season with salt and pepper and stir to combine. Shape mixture into 8 patties.

Add enough vegetable oil to a large frying pan to cover base. Heat over medium heat. Cook patties, in batches, for 2 to 3 minutes each side or until golden and crisp. Transfer to a plate lined with paper towel and cover to keep warm.

Patties can be served with salad greens and natural yoghurt. Alternatively break apart and use in wraps or sandwiches.
