The inspiration behind Hugo’s Pawtisserie is Hugo, Hollie’s 4- year-old French bulldog; When Hugo developed a serious illness as a puppy Hollie started to research the health benefits of natural human foods for dogs, she created a variety of recipes that catered for Hugo’s hypoallergenic, wheat and gluten free diet. Hugo’s Pawtisserie sell online, via Etsy and at events and markets around the UK. This recipe is one of Hugo’s favourites! A trusty liver cake, with thick layers of yoghurt icing! Ingredients: 1 cup oats (250ml) 1 cup flour (we used gluten free flour) 450g liver (we used lambs liver) ¼ cup coconut oil 1 egg 1 cup water For the icing: 200g yoghurt 4 teaspoons flour 1 teaspoon Xanthan gum To decorate: Gravy bones or similar Coconut shards (you could also use cheese) A variety of your dog’s favourite treats

Step1:Heattheovento180degrees.Greaseacaketinusingcoconutoil.Weuseda6-inchcaketinwithaspringbottom.Step2:Addthelivertoafoodprocessorandpulsetocreateapaste,thenaddtheflourandcoconutoilandblendtogether.Themixturewillresemblepateintexture.Step3:Addintheoats,eggandwaterandpulsetheingredientstogether.Nowthemixiscomplete,spoonitintothecaketin.Step4:Bakeinthecentreoftheovenforaround30minutes.Step5:TocreatetheicingaddtheyoghurttoabowlandgentlystirintheflourandXanthangum.Theyoghurtwillthickenandbecome‘marshmallow’likeintexture.Step6:Oncethecakehascooledcompletelyitistimetoiceanddecoratethecake!Spreadtheicingontothetopofthecake.Youcoulduseapipingbacktocreatedifferenteffects.Decoratethecakeusingcoconutshardsandavarietyofyourdog’sfavouritetreats.Usealittleicingto‘glue’gravybonesorsimilararoundthecircumferenceofthecakeandfixinplacewithadecorativeribbon.Thecakeisbeststoredinanairtightcontainerinsidethefridge,andwillkeepforupto5days.Ifyouprefer,youcouldcutthecakeintoslicesandfreezethemindividually,thiswayyoucouldtreatyourdogtoasliceeverysooften–justallowthecaketodefrostfor24hoursbeforeyouletthemtuckin!
