counter will ply you with butter cookies. Take another,

they offer.

Surely that cant help the bottom line. Thats a lot of cookies.

First and foremost, the people who work at Poilane are

artists. They are far more worried about baking an incredible

loaf of bread and spreading the word about their craft than

they are about wringing another franc or two out of the

bottom line.

The more they focus on change, on art and on joy, the more

money they make.
