DU CHÂTEAU DES VAULTS
At Château des Vaults, we tend the vineyard with the
greatest respect for life, for its rhythms and for its balance,
amazed by the infinitely complex nature of chenin blanc on
Savennières terroirs. Our philosophy is to act in this living
landscape "as much as possible with it, as little as possible
against it".
In the shadows of the old cellar we are constantly striving to
unravel the mysteries of wine making, of the mere
transformation of grapes into wine, in an incessant quest for
quality and typicity.
The scientific advances that we are following closely, help us
decrypt better and better the soil, plants, insects and yeasts
life. However, winemaking and wine elaboration remain a
natural transformation that we accompany to create the
wines we want.
Les Heures Particulières are a unique opportunity for you to
discover what is meant by a « living cultural landscape »,
listed as a UNESCO World Heritage Site : "A vineyard and a
garden in motion", a privileged space for the reception of
biological diversity, as well as our anchoring in a culture of
several thousand years that developped around the
Mediterranean : the culture of vine and wheat, that of
bread and wine.
Les Heures Particulières will allow you to enter the fabulous
adventure of a line of women winemakers with the beauty of
the Loire light and the schisteous landscape of Savennières,
to breathe the scents of the park, to enjoy the charms of
chateau life in the salons or in the library, to taste live wines
with farm bread, to pair them with the best cheeses of
France, with the most refined dishes.

At the heart of Savennières great schist terroir, on the Loire right bank, an initiatory walk to
discover a vineyard landscape "in motion", listed as World Heritage by Unesco, will lead you to
understand the extraordinary metamorphoses of a grape berry. You will taste lively wines, fruits
of a great adventure between the vine and a line of women. These wines can be
accompanied by farm bread*, another adventure between wheat and baker.
All these visits can be conducted in both French and English.

You will discover Château des Vaults “in motion” landscape, natural agriculture, the secret
links between the earth, the sun, the insects, the bats and the vines, during a guided tour in
the hills and in the garden : refuges of biological diversity. You will continue your visit by
tasting the wines of the estate and farm bread in one of the Château salons. Gourmets will
be transported into the sensory universe of certain specialties that are part of the exception
of French gastronomy.
All these visits can be conducted in both French and English.

LE SECRET DES HERBES FOLLES : This event will immerse you in a world of wild life, tastes, unknown
and delicious scents : that of wild flowers. You will be picking wild flowers and attend a
cooking workshop.
LE SECRET DES VENDANGES : This other event will bring you to vitis vinifera. You will be introduced
to the picking of its berries : the grapes. You will then go into the old cellar to tread them
voluptuously with your feet, then press them as in the old time before tasting its
metamorphosis or the fabulous palette of Savennières terroirs, with bread, ground and
fermented wheat grain metamorphosis.
All these visits can be conducted in both French and English.

work. They will share their know-how with you : you will be able to try pruning or debudding,
complex and meticulous tending of the plant life, before entering a sensory experience by
while tasting the metamorphosis of the fruit of the vine with another way of looking at it.

Evelyne de Pontbriand will unveil her winemaker adventure facing the schisteous nature of
Savennières, with the Loire light, the mysterious life of Chenin Blanc, bats, butterflies and
earthworms, and share her culture : result of her travels, meetings and readings, during a
special visit of the estate, before tasting her favorite wines and bread. You will enjoy food
and wine pairings of rare finesse, such as the pairing of a Comté or Salers with a fine Chenin
Blanc Savennières. You can extend this time with a meal at the chateau.
