CHOCOLATE IS OUR PASSIONHERZA Schokolade is one of the leading makers of quality chocolate pieces for industrial processing. Our company is

rich in tradition and was founded in Hamburg in 1921. As the oldest German maker of small chocolate pieces,

we have made a name for ourselves over the years. Today, HERZA is member of the Stern-Wywiol Gruppe, a family-

owned company active internationally in the world of food & feed ingredients.

HERZA’s core competence is the manufacture of quality functional chocolate. The term “Chocnology” expresses our

high quality approach, based on years of chocolate experience and innovative production technology. Using high

quality ingredients, we develop chocolate pieces whose appearance, melt, baking stability, bite, and most of all flavour

meet the most demanding requirements.

Our product range is unusually broad, comprising chocolate pieces, buttons, leaves, chips, shavings, drops, powder and

much more. In addition, we can produce any imaginable shape in different sizes and flavours - ideal for muesli,

cereals, bakery mixes, confectionery, baby food, ice cream, dessert preparations, dairy products and fruit preparations.

OUR OWN PRODUCTION

At HERZA the manufacture of the finest quality chocolate has the highest priority. This makes us one of the few chocolate manufacturers still making our own cocoa paste in a complex production process. We use only carefully inspected, high quality cocoa beans – the critical ingredient for our high product quality. For their individual products customers can choose from the world’s most popular speciality and single-source chocolates. Beans from the farthest reaches of the globe find their way to our roaster, including the Caribbean, Madagascar and Indonesia.

MOTIVATION THROUGH INNOVATION

Our passion extends to all shapes and sizes. The more unusual the shape required by the customer, the more we welcome the challenge. For standard products like cereals, confectionery, fruit preparations, desserts and ice cream, our ever-new shapes help producers increase customer enjoyment and create new reasons to buy. In addition to shavings, air cushions, matches and leaves, our range offers a host of different decorative shapes like rings, stars and hearts.

MORE TASTE VARIETY

We also make custom specialities like nougat chips, truffle and yoghurt pieces, as well as chocolate with sugar substitutes. With aromatic compounds like vanilla and caramel, they can give foods new accents. Using fruit pieces and powders, we create chocolate pieces that offer a “healthy” taste experience while meeting almost any colour requirement. It’s a great way to decorate fruity products.

OVERCOMING TECHNICAL LIMITS

Working with a variety of experts, HERZA regularly develops special machines that allow the creation of innovative shapes never before seen. This can’t be done with standard technology. Our technologists always find the right balance between the formulation and the shape desired by the customer. Thus, we have the capability to make micro-drops that won’t sink during baking, and offer glaze compounds in a variety of sizes and forms.

SUPPLIED TO ORDER

We pack all chocolate pieces according to customer wishes, so that they can incorporate them directly into their processes. On request we will also put together individual mixes. We deliver in a range of packaging units, for example in “bag in box” packs or “big bags”, in weights from 4 to 450 kg.

THE CUT MAKES ALL THE DIFFERENCEOur chocolate leaves come in many variable sizes. Square, rectangular, large, small - you decide. Our leaves have clean

cut edges that don’t pick up chocolate dust, so they’re ideal for adding that special something extra to muesli and

cereal mixes.

DROP IN SOME CHOCOLATEOur chocolate drops are perfect for baking and decorating. They make a flavour-intensive addition to baked goods

like muffins and cookies. Our bake-stable chocolate won’t melt even under high temperatures. Cakes of all kinds look

better with our innovative two-colour twin drops. We supply drops in a host of sizes, from micro to macro.

MILK CHOCOLATE For our milk chocolate we use a whole-milk powder dried especially to our specifications. This gives HERZA choco-

late a pleasing milky note with a gentle melt.

WE HAVE A GRANULATE FOR THATWherever you need to do a lot with a little, our chocolate pieces are a great solution, whether as a garnish or

a flavour ingredient. To make them, we crush solid chocolate to get a wide range of small, irregular pieces. For

RESpOnSIBLE EnJOYMEnTHERZA has been offering organic products since 2003. We are the only German manufacturer to offer the whole

range of chocolate pieces including coatings in organic and Fair Trade quality. They are made according to the same

tried-and-true formulations as our conventional products. Shapes and sizes are identical as well. The only difference

lies in the choice of raw materials, which are documented organically grown.

Fair Trade means that small farmers in Africa, Asia and Latin America receive their fair share of the retail price. In

addition, most Fair Trade products are organic. For our Fair Trade chocolate all ingredients must bear the Fair Trade

seal. Our UTZ-certifi ed chocolate and the use of RSPO-certifi ed palm oil in our glazes are part of our sustainability

policy. Almost all of our dark chocolate is Fair Trade, monitored by the FLO (= Fair-Trade Labelling Organization) to

make sure it meets defi ned standards.

APPLICATIONS TESTING IN OUR PILOT PLANTWith our own pilot plant, we help ensure maximum satisfaction despite customers‘ sometimes extreme production

environments. Our pilot production facilities replicate the conditions obtaining in full scale manufacture, so that we

can test end products in their target applications. This allows us to get the ideal shape, size, consistency, formula-

tion, baking stability, abrasion resistance and mouth feel.

CHOCOLATE COMBINATIONS FOR EVERY APPLICATION

We offer individual formulations in many shapes and flavour variations. Customers can use our existing formulations or

develop new ones in cooperation with our Applications Technology.

In addition to regular chocolate, we offer chocolate from sustainably grown cocoa and RSPO-certified glazes. Our product

shapes, colours and flavours offer endless combination possibilities that let us tailor products exactly to customer require-
