her certification in Guidance and Counseling. Estella is also certified by the State of Florida as a Supreme Court Justice trained Mediator. Additional di-plomas: Culinary Arts, Cake Decorating and Floral Design-ing. Estella recently piloted a tu-toring program for children of

homeless families, sponsored by the Palm Beach County School District. Estella’s Brilliant Bus pledge is to continue to extend her services throughout Palm Beach County.

During the past two years, Estella has organized and oper-ated a food pantry and is now a partner with Feeding South Florida, which is a regional branch of Feeding America dis-tributing food to approx. 3,000 individuals each month.

Estella’s Brilliant Bus is a tax-exempt, non-profit organization registered w/ the State of Florida.and IRS as a 501(c)(3).

Estella Mims Pyfrom Born in Quincy, Florida. She is the second oldest of six daughters and one son. Estella’s father, Roy L. Mims, was a migrant worker, a crew leader and a camp manager for many years. She grew up in Belle Glade, Florida where attended Everglades Voca-tional High School grades 1- 12 at Okeechobee Center in Belle Glade, Florida. She began her college career at, A & M University in Tallahassee, Flor-ida, where she earned her B.S. Degree and Master’s Degree in Elementary Education, Voca-tional Home Economics and Administration and Supervi-

However, despite the common "poisonous" designation of this plant, very few toxic events in hu-mans have been reported. According to the Toxic Exposure Surveillance System (TESS) in 2002 there were 847 human exposures to oleander reported to poison centers in the United States. Despite this exposure level, from 1985 through 2005, only three deaths were reported. Reac-tions to ingestion of this plant can include both gastrointestinal and cardiac effects. The gastrointestinal effects can consist of nausea and vomiting, ex-cess salivation, abdominal pain, di-arrhea that may or may not contain

blood, and especially in horses, colic. Cardiac reactions consist of irregular heart rate, sometimes characterized by a racing heart at first that then slows to below normal further along in the reac-tion. The heart may also beat erratic-ally with no sign of a specific rhythm. Extremities may become pale and cold due to poor or irregular circulation. Re-actions to poisonings from this plant can also affect the central nervous sys-tem. These symptoms can include drowsiness, tremors or shaking of the muscles, seizures, collapse, and even coma that can lead to death. So please do not eat or let your horse, dog or child eat either. I tasted some, in the pursuit of gardening knowledge. It was quite bitter to my taste buds.

Oleander: The cardiotonic proper-ties of oleanders have been exploited therapeutically and as an instrument of suicide since antiquity. Toxic expo-sures of humans and wildlife to olean-der cardenolides occur with regularity throughout geographic regions where these plants grow. The human mortal-ity associated with oleander ingestion is generally very low, even in cases of intentional consumption (suicide at-tempts). Experimental animal models have been successfully utilized to evaluate various treatment protocols designed to manage toxic oleander exposures. The data reviewed indicate that small children and domestic livestock are at increased risk of oleander poisoning.

The compost bin is working wonderfully. Haven’t tried the dande-lion greens yet. Think springtime will be my prime dandelion gathering season. Though I may eat the ones growing outside my backdoor...just to get and idea of how they taste. My partner and I have assigned ourselves a com-munity service project. Painting.

The greenhouse is erected. I guess you could call it that. What hap-pened was… the outdoor tent which covers my saw-horses w/ plants on top, was wrapped in plastic drop cloth. Wind blocked and warm inside. So, the greenhouse is ready. Herbs have been sown. Basil, parsley, cilantro ad spinach. Christmas cactus is budding!

We both love to paint and the art on the win-dows at the daycare cen-ter in the neighborhood was faded and peeling. We had the time and the paint so each Sunday we go paint. If you see us, please join us, we’d love to meet you and the window is going to take a while b/c it’s BIG!

Home and Garden

Look for young, tender leaves. Like other leafy greens, dande-lion greens are an outstanding source of vitamins A and K. To tame the greens’ natural bitter-ness, cook them with dried fruit, toasted nuts, and olive or nut oil. Dandelion Greens with Currants and Pine Nuts Serves 6 Ingredients: About 2 tbsp. extra-virgin olive oil, divided 1 garlic clove, finely chopped 1 lb. dandelion greens, ends trimmed, roughly chopped (about 2½ qts.) 1/8 tsp. each kosher salt and freshly ground black pepper

3 tbsp. each dried currants and toasted pine nuts. Lemon wedges (optional) 1. Heat 1 tbsp. oil in a large nonstick frying pan over medium heat. Add garlic and cook until fragrant, stir-ring, about 30 seconds. 2. Add dandelion greens in batches, turning frequently with tongs. Increase heat to medium-high, sprinkle with salt and pepper, and con-tinue to cook, turning with tongs, until greens are wilted and tender-crisp, about 5 minutes. 3. Add currants and pine nuts and cook 1 minute more. Trans-

fer to a serving dish and drizzle with about 1 tbsp. more oil. Serve with a squeeze of lemon if you like. Per serving: 113 Cal. Other ways to eat dande-lion greens. 1. Sauté with spinach and layer into your favorite vegetarian lasagna. 2. Toss in a salad with sliced apples, blue cheese, and toasted walnuts. 3. Add chopped greens to pasta during the last minute of cooking, then mix with parmesan & toasted al-monds.
