    tates. Mortgage rates are still rock bottom and availability

    is everywhere. New businesses have started and continue

    to drive our marketplace, many in home grown companies

    along with national firms such as Amazon. Recently, the

    city of Lake Geneva approved a very large project targeting

    seniors in a Sun City-like, 450 unit single family home for-

    mat a block south of my office. If this progresses it will have

    a very positive impact on all local service and shopkeepers

    not to mention recreation and food providers.

    In the 40+ years that I have been in business here, I dont

    believe I have ever seen this many positive indicators of our

    local economys health. If there is anything we can do to as-

    sist you in your real estate needs, please give our wonderful

    and begin our journey through Fall/Winter, Im reminded of

    why living in Southeastern Wisconsin is such an incredible

    experience. Not only are we surrounded by the aesthetic

    bounty of nature, but equally important, we are in the com-

    pany of many fascinating people who are equally inspired.

    The articles in this edition of L&C speak about the di-

    versity of motivation and lifestyles that add so much color

    to our communities. There is a reason so many of our cus-

    tomers commit so much of their time and money to being

    here, and further why many of them attract others who are

    introduced to the area by their friends and families. Few

    places I know of offer such a range of lifestyle options and

    activities while being close to one of the nations most vi-

    brant metropolises.

    This has been a very good year in the world of real estate.

    Our market has largely recovered from the painful Great

    Recession and seems poised to take another step up the lad-

    der. Activity has been, and continues to be, strong in all

    segments of the market from starter homes to lakefront es-

    We are inspired by their natural beauty, take refuge along their shores, and en-

    tertain ourselves on their waters. Every day Keefe Real Estate agents work to

    bring our little slice of heaven to our customers. Unfortunately, not everyone is

    physically able to freely enjoy the lakes, and so we wanted to highlight a local

    organization whose mission is to make lake recreation accessible to a group that

    needs a helping hand to get out on the water, the Twin Lakes Aquanuts.

    The Twin Lakes Aquanuts have been making waves in the small town of Twin

    Lakes, Wisconsin with their outstanding water ski and wake board shows for

    nearly 40 years. Susan Janowski-Richey, an alumni of the Aquanaut Water Ski

    Show, found that water sports can be

    used for more than just entertainment.

    She wanted to find a way to help people

    in the community who may not have

    the luxury of every day mental and

    physical abilities. Through ambition

    and study she enhanced her knowledge

    of this passion by training with the Re-

    habilitation Institute of Chicago and

    the Dreams for Kids Foundation. In

    1998, she used her new knowledge and

    skills to develop an adaptive aquatics

    program for the disabled that is known

    today as the Aquanut Adaptive Aquat-

    ics Program.

    This summer, Keefe agents and staff

    visited Twin Lakes to learn more about

    the program and to present a check on

    behalf of the members of Keefe Kares.

    The funds provided by the foundation

    went towards the maintenance of wa-

    ter ski equipment and the purchase of

    gasoline for the boats throughout the

    summer. We are so honored to have

    received support from Keefe Real Es-

    tate, says Colleen Moore, Director

    of the Aquanuts, This organization

    means so much to our community!

    In addition to funding by local busi-

    nesses, the Aquanut Adaptive Aquatics

    Program relies on volunteers to help

    out in many ways. The love, enthu-

    siasm and passion of the skiers and

    staff who devote their days to making

    people with disabilities feel right at

    home on the water was evident to all

    who attended. Volunteers of the Aqua-

    nut Adaptive Aquatics Program have

    included members of the Great Lakes

    Adaptive Sports Association (GLASA),

    Adaptive Adventures, One Step Cancer

    Camp, Wounded Warriors, and Dreams

    for Kids.

    One of the things of which we hold

    a high level of pride is the number of

    Aquanaut team members who partici-

    pate in our Adaptive Aquatics program.

    Volunteering is a reminder of how priv-

    ileged they are to spend their lives on

    the water. They all have a great desire

    to share this opportunity with children

    and adults of all abilities, says Moore.

    During each date of this event our vol-

    unteers are greatly inspired by our par-

    ticipants. This was the best day of my

    life is something we hear at least once

    a day.

    Keefe Kares is proud to support and

    bring attention to a program that so

    directly touches members of our com-

    munity, but our support can only go

    so far. If you have a love of water, cer-

    tifications and knowledge of boating,

    water skiing or wake boarding, please

    consider volunteering your time to this

    great organization that is truly mak-

    ing a splash for disabled individuals in

    Volunteering is a reminder of how privileged they are to spend their lives on the water. THEY ALL HAVE A GREAT DESIRE TO SHARE THIS OPPORTUNITY WITH CHILDREN AND ADULTS OF ALL ABILITIES.

    In this falls issue of Lake & Country, we are thrilled to showcase a home that is the culmination of an owners dreams and a wildly successful collaboration with their designer and builder.

    Local interior designer, Cynthia B. Wilson, reports on her visit to this sophisticated home on the outskirts of Lake Geneva, and her conversations with the homeowners, local builder John Engerman, and Florida-based designer David Van Ling.

    y favorite designer, John Saladino, once said, If

    when entering a room for the first time your heart does not

    start beating a little faster, the designer hasnt done his or

    her job. As soon as I passed through the vibrant blue door

    of this gracious home in Linn Township, I knew that I was

    walking into something special. The story behind the suc-

    cess of this homes interior is the synergistic relationship

    that developed between the owners, their builder, interior

    designer and landscaper. By bringing everyone together at

    the beginning of the project, the homeowners created a

    whole that is greater than the sum of its parts.

    When the homeowners first brought their interior design-

    er, David Van Ling, to the office of Engerman Contracting,

    John Engerman had no idea what to expect. Within the hour,

    they had bonded, immediately sensing each others abilities

    and dedication to realizing the homeowners vision. David

    Van Ling presented Engerman with a revised floor plan that

    included all of the owners existing furniture and antiques.

    I first glanced into this room: the re-

    claimed timber trusses supporting

    a voluminous 19 gabled ceiling, two

    massive (50 diameter) brass chan-

    deliers from Circa Lighting, and a

    beautifully proportioned 64 tall fire-

    place mantle built by Brent Schwarz of

    Brent Schwarz Design in Lake Geneva.

    Schwarz also made the built-in shelv-

    ing which houses a flat screen TV as

    well as the cabinetry in the piano room

    that doubles as an office.

    The fireplace surround is composed

    of 18th century Delft tiles that the de-

    signer found in an antique shop. After

    spending several hours experimenting

    with various combinations until he

    was satisfied that he had it right, Van

    Ling created a map for the tile installer

    by photographing and numbering each

    tile indicating where it was to be placed

    in the surround.

    Sisal rugs throughout the house send

    As in all good design,

    this house is about its

    details, function, flow,

    and subtle repetition of

    themes.

    a message of informality, and serve as

    a perfect contrast to the owners well-

    placed Oriental decor in other rooms.

    In many houses ceilings are often ne-

    glected, but that is not the case here.

    Every ceiling in the house is designed

    to be as interesting as the room below

    it. Additionally, these ceilings are cre-

    ated to send a subtle message about

    the formality of the room. By contrast,

    less formal rooms in the house have

    ceilings of wide plank and beautifully

    washed layers of color.

    Above-door display areas for the

    homeowners cherished objects and

    pediments fill otherwise wasted space.

    Adding further interest, the designer

    varied the sometimes multiple build-

    ups of crown molding and trim, tray or

    coffered ceiling treatments. Sophisti-

    cated use of millwork is a trademark of

    Van Ling.

    David Van Ling also uses circles as

    a repeating theme, either as negative

    space formed by the concave profile of

    over-door pediments, or archways and

    light fixtures. A curve in the hallway

    wall is Davids nod to an oriental aes-

    thetic designed to display the Japanese

    prints collected by the owners during

    the eight years they lived in Japan.

    Another thing that I was happy to

    see, as one of the owners and Buzzby

    the dog showed me around the house,

    were bookshelves that actually had

    books in them! andbe still my heart,

    picture lights at the top of each, posi-

    tioned to illuminate them. The own-

    er insisted that comfortable, well-lit

    reading nooks be sprinkled through-

    out the house.

    I was struck by the exquisitely simple

    and functional kitchen cabinetry, pro-

    vided by Americas Best Cabinets, in

    Lake Geneva. Open shelving provides

    easy access to everyday dishware and

    utensils. A freezer and refrigerator

    stand independent of one another on

    The owners and designer also brought

    the builder a complete list of their

    choices of cabinets, flooring, plumbing

    fixtures, and bathroom tile from Bella

    Tile and Stone.

    Getting to this point wasnt an over-

    night process. At the very beginning

    of the project, the designer took all of

    the owners carefully inventoried fur-

    niture and collections and designed

    the house around them. As a result,

    everything fits. Even the baby shoes

    once worn by the owners father were

    given pride of place in the living room

    on a French farmhouse table that dou-

    bles as a sofa table.

    Although Van Lings studio is in

    Tampa, Florida, the line of commu-

    nication and creative momentum be-

    tween he and the homeowners was

    never broken. There were as many

    as 20 to 30 emails a day between us,

    says Van Ling, many of them before 9

    AM. With laser-like focus, Starbucks

    coffee, and his clients ability to make

    immediate decisions, designer and

    client were able to work comfortably

    through every detail despite the long-

    distance. Whenever David found the

    perfect furniture, fabric, painting or

    trim, he would text a photo or post it

    on his Facebook page for his client to

    review. Immediate approvals or disap-

    provals allowed him to progress as if

    they were working side by side.

    Inside the home

    As in all good design, this house is

    about its details, function, flow, and

    subtle repetition of themes. For ex-

    ample, the grid patterned entry gates

    are repeated by square sidelights sur-

    rounding the front door. Small white

    squares of the same size are embedded

    about every four feet into the Bleu

    Fonce Limestone entry floor.

    From there I entered into the living

    room. Three things caught my eye as

    either side of a drawer base. More open

    shelving is perfectly positioned above

    this arrangement. Two pendant lights,

    lined with pleated fabric, hang over the

    massive wood countertop, fabricated

    by Engerman Builders. The pewter

    hood over the cooktop was sourced by

    the Van Ling while shopping in Atlanta.

    The kitchen and adjoining informal

    dining room floors use the same Bleu

    Fonce limestone, in part because of

    their proximity to the swimming pool.

    No need to worry about swimming pool

    water on wood floors!

    The grid motif I spoke of at the be-

    ginning reemerges by the pool in the

    trellis that connects the house and

    outbuildings. The pattern also con-

    nects other poolside amenities, such

    as the exterior walls of the pump

    house, the TV wall of their outdoor

    kitchen, its ceiling and even the strap

    iron furniture.

    As for landscaping, Engerman

    brought in long-time collaborator

    Stonetree Landscaping, knowing that

    they would be as determined as he and

    the designer to make the homeowners

    vision a reality. This was not an easy

    task, considering that they started

    with, according to the builder, a very

    rough building site. However, through

    the use of stone outcroppings, and a

    healthy variety of perennials, shrubs,

    and trees, they were able to create a

    beautiful backdrop for this stunning,

    well-built home and its outbuildings.

    From the moment I entered, I knew

    this was a beautifully built home, with

    its authentic design and craftsman-

    ship. The homeowners attribute the

    ultimate success of their building proj-

    ect to their relationship with designer,

    building and landscaper. They knew

    that by bringing everyone together to

    work toward a common goal, some-

    thing wonderful thing would happen ...

    and it did.

    The photograph on the top left dis-

    plays an early 20th century barn from

    Zenda that is now used as an upscale

    cocktail cart in a Chicago kitchen.

    Another photo shows a barn that pre-

    viously stood just outside of Elkhorn

    and has now been turned into a mar-

    velous kitchen table that is now the

    centerpiece for family meals, dinner

    parties, and holiday gatherings. This

    collage was created several years ago

    to remind its owners that every piece

    of wood they reuse has a history that is

    just as important as its future.

    There is a wall in the center hallway of the barn at Heritage Beam & Board that displays a collage of photos featuring the various barns that have provided the raw materials that our feature subjects have used to build their business.

    Heritage Beam & Board is a boutique

    furniture company located just east

    of Elkhorn, Wisconsin, in a barn on

    Seth Hansons hobby farm. Started

    by Hanson and his longtime friend,

    Adam Krauklis, Heritages day-to-

    day operations are run by Hanson

    and Adams wife Emily Krauklis,

    along with other family and friends.

    Seth and Adam, both professionals

    in the fields of construction and proj-

    ect management, had already known

    each other for over two decades when

    a small side project brought them to-

    gether, resulting in this unique endeav-

    or. The two worked at separate busi-

    nesses until the day when a small

    side project brought them together

    in a unique endeavor.

    We were driving down the road

    when I saw an old barn and mentioned

    to my husband that I wish I had been

    able to use the wood on a recent proj-

    ect, says Emily. In an odd turn of

    events, Adam knew the owner of the

    barn, gave him a call and was told that

    if we dismantled the wood ourselves we

    could use what we wanted. That was

    in 2011, the day after their annual

    New Years Eve barn get-together.

    Days later, Adam and Seth were har-

    nessed on the side of the barn taking

    it down piece by piece, and a business

    was born.

    Both families already had comple-

    mentary skills to get their repur-

    posed wood business in motion. Emi-

    ly, a graphic designer by trade, created

    a logo and got to work on their web-

    site. After a few months, she decided

    to transition to work full-time. At the

    heart of what we do, our goal is truly

    to grow relationships with any type

    of building restoration project, says

Seth carries planks of recently collected barn wood from their shed and introduces us to another member you may see running around the property. Emily welcomes us into her cozy stone walled office and gives us a tour of the backyard and open area.

    Starting with barn sales and fur-

    niture shows, Heritage built a client

    base and a reputation around town as

    skilled craftspeople. It took a few years

    to catch on, but through a combination

    of perseverance and a commitment to

    quality, the business finally started

    to pick up steam last summer. Since

    what we do is truly our passion we all

    decided we needed to push through

    it and thats when we saw that people

    were starting to catch on. says Seth.

    It was completely worth it to keep at

    it, says Adam with a contagiously up-

    beat smile. You never quite know what

    is around the next corner unless youre

    brave enough to move forward. And

    lucky for us, we were all brave enough

    to take that step together.

    While the vision of giving a new life

    to the scenic barns of the Midwest

    might sound romantic, the process is

    much more arduous, and less glamor-

    ous, than it might seem. After remov-

    ing the wood from the barn, frequently

    in challenging weather, the wood must

    be prepped. They must first clean off

    the cobwebs and years of dust and age.

    Then, all the nails must be removed

    from the wood before it is taken back

    to the barn where it is dried, milled,

    sanded, sculpted, and evened out. Only

    then, after hours of prep, are they able

    to get to work on their clients custom

    orders.

    There is always a process where

    you start to think: is it worth all the

    labor just to get one single piece of

    wood? says Emily, But once you push

    through the toughness of what it used

    to be, you are able to make it what you

    want it to be. Heritage creates tables,

    floors, fireplace mantles, countertops,

    frames, and almost any custom finish-

    ing you might want to add to your next

    renovation or home construction proj-

    ect. Heritage is also happy to weigh in

    on design considerations and give sug-

    gestions in order to keep things moving

    forward.

    When asked, why they decided to

    use the word heritage in the name of

    the business, Seth told us that, The

    history of something is always an inter-

    esting part of any story. Carpentry has

    been in my family for generations and

    while it was exciting for me to learn

    it, what made it important to me was

    knowing the history of it within my

    family; that it was something my father

    taught me, and his father taught him

    and something Im going to teach my

    sons.

    And as the business continues to ex-

    pand, and the families grow closer to-

    gether, they never forget the day when

    it all started. In the company of their

    closest friends and loved ones, they

    take the opportunity every New Years

    Eve to gather in their once vacant barn

    to look back for a moment and re-

    charge for another year of reclaiming

    their own piece of history.

    Growing up on a horse farm meant growing up on meat and potatoes. My mom use to cook the BEST short ribs anyone could ever have. They would melt in your mouth.

    I continued the tradition, but added a twist. You cant beat sharing these pull apart ribs with friends and a bottle

    of red wine on a fall night! Enjoy!

    KIND OF LIKE MOMMAS BBQ RIBS / by Rio Haman1 rack of pork ribs

    cup brown sugar2 Tbsp butter

    2 Tbsp Olive Oil

    A pinch of salt and pepper

    1 tsp chili powder

    1 tsp garlic powder

    1 clove of minced garlic

    1 cups of your favorite BBQ sauce (I like to add a little hot sauce)

    Pat dry and remove membrane from

    ribs Drizzle olive oil over them

    Season with salt, pepper, garlic pow-

    der and chili powder. Mince a clove of

    garlic and spread on ribs

    Rub ribs in 1/2 cup of brown sugar or

    enough to cover ribs. Place 2 Tbsp

    butter on top of ribs

    Fill pan with an inch of water, place

    ribs in pan, put in oven and cover with

    tin foil. Bake for 21/2 hrs at 375 degrees.

    After baking apply desired BBQ sauce

    to ribs

    Clean and spray grill with pam. Grill

    each side for about 15 min on low to

    medium heat. Enjoy these finger lickin

    good ribs! SERVES 4

    OLD FASHION PUMPKIN PIE/ by Joyan Sanios

    FOR CRUST:

    cup lard or vegetable shortening1 cups all purpose flour teaspoon salt cup cold water Mix shortening, flour, and salt together

    with a fork or a pastry blender until

    very crumbly. Add as much water

    as needed to hold together, and mix

    lightly with a fork.

    Roll gently on a floured pastry cloth

    to about an inch larger than pie plate.

    Fold carefully in half, lift into pie plate,

    and unfold. Press into pan. Flute and

    trim excess with a small knife.

    FOR FILLING: Mix the following in-

    gredients with a whisk:2 cups cooked pumpkin (Cut a pie

    pumpkin in half, take out seeds. Cover

    the half with plastic wrap or a plate

    and microwave for 10 minutes. Scoop

    the pulp into a food processor and

    work until silky smooth. Do the same

    with the other half. Measure out 2

    cups. If you have additional pumpkin,

    freeze it until next time.)

    1 cups (1 can) of evaporated milk 1/4 cup brown sugar cup white sugar teaspoon salt1 teaspoon cinnamon

    1/4 teaspoon nutmeg1/8 teaspoon clove

    2 beaten eggs

    Pre-heat oven to 425 degrees. Pour

    mixture into uncooked pie crust. Bake

    15 minutes. Reduce heat to 350 de-

    grees and bake about 45 more minutes

    or until a knife or toothpick comes out

    clean. Allow to cool and serve with

    whipped cream. SERVES 8

    CORN AND BLACK BEAN SALSA/ by Debbie Cobian

    1 can of sweet corn (drained)

    1 can of black beans

    (rinsed and drained)

    3 tomatoes

    1 red pepper

    2 avocados from Mexico

    2 limes

    1/4 cup onion1 tsp salt

    1 tsp sugar

    3/4 cup cilantro

    Combine the corn and beans into a

    medium sized bowl. Dice the onion,

    pepper, avocados and tomatoes then

    mix them in the bowl. Cut the cilantro

    and mix that in with the salt and sugar.

    Squeeze fresh lime juice over the top.

    Stir and enjoy with tortilla chips or

    wheat thins. SERVES 6

    MAMAW CORDIAS SWEET BREAD/ by Tonya Hostelton

    1 egg

    2 Cups Sugar (brown or white)

    Cup OilVanilla

    Cinnamon to taste

    2 Cups Flour

    Mix with a little milk

    Mix egg, sugar, oil, vanilla and cin-

    namon. Add flour slowly, mixing milk

    and kneading. Ending mixture should

    be thick enough to spoon out onto a

    cookie sheet. Bake at 350 until golden

    brown. SERVES X

    4 Tablespoons of Butter

    1/4 Cup of Additional Flour

    1 Cup of Milk

    DUMPLING MIXTURE:

    1 Cup of Flour

    2 Teaspoons of Baking Powder

    6 Tablespoons of Butter

    Cup of Milk

    Wash chicken inside and out and pat

    dry . Cut into 8 to 10 pieces.

    Place enough oil in a large fry pall. (one

    that has steep sides and a cover) to

    cover the bottom of pan; heat until the

    oil is simmering.

    Dip each piece of chicken in flour to

    cover and add the pan. Brown on both

    sides.

    Wash celery and carrots and cut into

    1-inch pieces. Peel red potatoes and

    cut into 1-inch cubes. Dice onions.

    Add all of these vegetables to the pan

    and cover with 2 cups of chicken broth

    or water. Add bay leaves and parsley.

    Cover pan and cook at a simmer for

    about 90 minutes or until vegetables

    are tender.

    In a separate pan, make roux, by melt-

    ing 4 tablespoons of butter and stir in

    cup flour. Add 1-cup cold milk and

    whisk until smooth. Using a ladle or

    spoon, add the liquid from the chicken

    pot to the roux and stir to make a

    cause. Return to the chicken pot.

    THE DUMPLINGS

    Whisk together 2 1/2 cups self-rising

    flour and 1/2 tsp. sugar in a medium

    bowl. Stir buttermilk and bacon to-

    gether into flour mixture until dough

    pulls away from sides of bowl.

    Return chicken mixture to medium-

    high heat; cook, stirring constantly

    for 2 minutes or until bubbly and hot.

    Spoon mixture into buttered 3 qt.

    ceramic or glass baking dish. Drop

    biscuit dough by level cupfuls, 1/2

    inch apart, onto chicken mixture.

    Bake at 400 degrees for 30 to 35

    minutes or until browned and bubbly.

    SERVES 4-6

    PAIGES PUMPKIN SOUP/ by Paige Sawar2 onions, diced

    4 tablespoons of butter, melted

    2 chix broth cans (15 oz each)

    2 15 oz cans pumpkin puree

    2 teaspoons salt

    teaspoons ground cinnamon1/4 teaspoon ground ginger teaspoon black pepper2 cups heavy cream (add + heat thru)

    Saute onions and butter in a stock

    pot. Place broth, pumpkin puree, salt,

    ground cinnamon, ground ginger,

    black pepper, and cream in a pot and

    bring to a boil. (Use immersion blender

    if you want). SERVES 12

    1 Halibut Fillets

    1 Cup of Milk

    1 Sliced Onion

    1 Bay Leaf

    Simmer the fillets in milk with onion

    and bay leaf. Drain, remaining liquid.

    Remove onion and bay leaf and flake

    the fish. Prepare the cream sauce us-

    ing the fish liquid for part of the milk.

    Add the hard-cooked eggs, fish and

    mustard. Season with 1/2 teaspoon of

    salt, 1/8 teaspoon of pepper and butter.

    Wash spinach, cook until wilted and

    drain. Season with 1/2 teaspoon of salt, 1/8 teaspoon of pepper and butter.

    Arrange spinach in bottom of shal-

    low 6 cup casserole dish. Cover with

    the creamed eggs and fish mixture.

    Sprinkle with grated cheese. Bake in

    the oven at 425 degrees for 15 minutes

    until browned. SERVES 4

    Ive been making this recipe for almost 20 years since I came back from my trip to Alaska I went deep-sea fishing for Halibut. The first time I made it was with the fish I had caught.

    Ive shared it at a couple of the Keefe Holiday parties and it

    has become a favorite.

    PASTA CARBONARA/ by Tom Keefe

    INGREDIENTS

    16oz Spaghetti

    3 Eggs

    10 Strips of Bacon

    1 Wedge of Parmesan Cheese (grated)

    Black Pepper

    While boiling water, cut the bacon and

    cook until crispy. Grate the cheese, put

    aside. Beat the eggs in a large bowl.

    Grind pepper (if starting with whole

    peppercorns). Boil pasta. After the

    pasta is boiled, drain, and pour cooked

    pasta over eggs. Stir thoroughly. After

    stirring pasta into raw egg, slowly add

    bacon, black pepper, and parmesan

    cheese until it is melted. Serve imme-

    diately. SERVES 4

    WINTER SQUASH SOUP WITH GRUYERE CROUTONS/ by Susan Meyer

    SOUP

    1/4 cup ( stick) butter 1 large onion, finely chopped

    4 large garlic cloves, chopped

    1/4 cup whipping cream4 cups 1-inch pieces peeled

    4 cups 1-inch pieces peeled

    butternut squash (about 1 pounds)

    acorn squash (about 1 pounds)1/4 teaspoons minced fresh thyme 11/4 teaspoons minced fresh sage3 14 ounce cans low-salt

    2 teaspoons sugar

    chicken broth

    CROUTONS

    2 Tablespoons (1/4 stick) butter 241/4 inch-thick baguette bread slices 1 cup grated Gruyere cheese

    1 teaspoon minced fresh thyme

    1 teaspoon minced fresh sage

    PREPARATION FOR SOUP:

    Melt butter in large pot over medium

    heat. Add onion and garlic and saut

    until tender, about 1O minutes. Add

    broth, all squash and herbs; bring to

    boil. Reduce heat, cover and simmer

    until squash is very tender, about 20

    minutes.

    Working in batches, puree soup in

    blender. Return soup to same pot. Stir

    in cream and sugar; bring to simmer.

    Season with salt and pepper. (Can be

    made 1 day ahead. Chill. Rewarm over

    medium heat before serving.)

    FOR CROUTONS:

    Preheat broiler. Butter 1 side of each

    bread slice. Arrange bread, buttered

    side up, on baking sheet. Broil until

    golden, about 1 minute. Turn over

    Sprinkle cheese, then thyme and sage

    over. Sprinkle with salt and pepper.

    Broil until cheese melts, about 1 min-

    ute. Ladle soup into bowls. Top each

    with croutons and serve. SERVES 8

    SALLYS SIMPLE SHORTBREAD BISCUITS/ by Sally Malbon

    1 generous cup flour (all purpose)1/3 cup sugar

    1 stick butter (softened to room temp.)

    1/4 tsp. salt

    Mix flour, sugar and salt in large bowl.

    Use pastry cutter to incorporate butter.

    Knead for a minute or two on lightly

    floured board then divide the dough

    into two equal parts. Shape each half

    into a rectangle about 1/4 thick by

    gently patting with palms (about

    thick ) then cut into 12 fingers, prick

    with small fork. Place on cookie sheet

    and bake at 325 for about 15 to 20

    minutes until it turns pale and golden

    but NOT brown. Watch carefully as it

    will burn easily. Allow to cool com-

    pletely on a rack before storing in a

    Good Food for Good People has been Pier 290s mission

    since they first opened in July 2012. Serving the good peo-

    ple of the Geneva Lakes area was a no-brainer for the Gage

    family when they decided to create a nautical lakeside res-

    taurant, to coexist next to the long-standing Gage marina.

    But what was going to be their particular point of view on

    Good Food?

    Recently, Lake & Country had a chance to ask this ques-

    tion, and many more, during a conversation with Pier 290s

    Director of Operations, Patrick Hurd, and new Executive

    Chef, Josh Slaughter. For them, the answer was simple: a

    commitment to using the freshest and cleanest ingredients

    around. But at this point, the use of local, organic ingredi-

    ents has permeated kitchens for years since the farm-to-

    table movement took root. So what

    makes Pier 290 different? To find this

    out, we asked Hurd and Slaughter

    about what a commitment to fresh and

    clean foods means to them and Pier

    290, and how they are taking this ap-

    proach to an entirely different level.

    When Hurd and the Gage Marine

    team started their search for a new

    executive chef, they focused on val-

    ues. Finding a chef with cooking chops

    and the experience to manage a busy

    kitchen were requisite, but more im-

    portantly, they wanted to find someone

    who truly shared their philosophy and

    values. During the process of flying in

    chefs from across the nation for inter-

    views, they met Josh Slaughter, and

    the match was made.

    Chef Joshs focus is on the finest,

    freshest ingredients, which he believes

    must come from the most local sources

    possible. After growing up on a farm

    where, as Josh says, dinner had a

    name, he developed his philosophy of

    raising an animal well, treating it well,

    doing it justice, and wasting as little as

    possible. One look at chefs t-shirt and

    the point is driven home: a picture of a

    pig emblazoned with the words, Praise

    the Lard.

    Chef Josh brings with him a life-

    time of experience. From training with

    Chef Thomas Keller at the prestigious

    French Laundry restaurant in Napa,

    California, to venturing to Seattle and

    working alongside Hunger Restau-

    rants Jaime Mullins-Brook, Slaugh-

    ters vision for Pier 290 is as impressive

    as his work resume. In the short time

    Josh has been running the kitchen, the

    menu has remained true to Piers mis-

    sion and the new Chefs vision on how

    food should be prepared.

    Serving upwards of 1400 meals on a

    busy Saturday during the summer is

    no easy feat when youre hand cutting

    1800 pounds of potatoes by hand. Chef

    Josh and his team take pride in the

    dedication and labor-intensive process

    that the crew puts towards making the

    entire menu from scratch. Chef Josh

    says, From butchering whole chick-

    ens, to hand making the mayonnaise

    and the dressings, everything is made

    from the freshest of local, sustainable

    ingredients.

    One can only talk food for so long

    without wanting to eventually taste

    the goods, and luckily that time final-

    ly came. Pork belly with house-made

    kimchi and sweet and sour hoisin?

    Talk about Praise the Lard! The

    server said the whole kitchen smelled

    of that days fresh basil delivery used

    in Pier 290s heirloom caprese salad.

    jus and Irish mashed potatoes fully de-

    livers for those with a meat and potato

    appetite. Meanwhile the Maine lobster

    and mushroom risotto, complete with

    a swirl of seasonal sweet corn, peas and

    topped with Parmigiano-Reggiano, was

    a decadent yet fresh indulgence that

    will surely attract repeat customers.

    Hurd, Gage, and Chef Josh are en-

    thusiastic about the current state and

    the future of food at Pier 290. Follow-

    ing their vision of Good Food for Good

    People, the combination of their val-

    ues and philosophy work to create a

    real treat for the customer. Youll leave

    taste, authentic flavors, and the true

    value behind what it means to enjoy

    After an active summer on the lake,

    some people worry that the cooler

    weather will offer fewer activities to

    keep their bodies in motion. Well, place

    zip line at Lake Geneva Canopy Tours

    is an amazing, highflying experience

    that everyone can enjoy, four seasons

    a year.

    Lake Geneva Canopy Tours (LGCT)

    is open year round on their expansive

    100 acre property, located in the woods

    just outside Lake Geneva on County

    Road H. The tour company is primarily

    known for their extensive and creative

    zip lines courses, but the options for

    adventure do not stop there. In addi-

    tion to the zip line tours, LGCT offers

    high ropes excursions, team building

    programs, as well as 9 miles of biking

    and hiking trails.

    Earlier this fall, I had the chance to

    try out the entire course for myself. Af-

    ter calling in advance to schedule our

    adventure, we were safely harnessed

    hundreds of feet above land and ready

    to take the plunge and experience the

    thrill of flying through the air. But, be-

    fore you leap off the platform and book

    your own zip lining journey, here are

    some quick tips for you to consider be-

    fore you take flight!

    Come Prepared

    First of all, be sure to make a reser-

    vation and pencil in 3 hours to have

    enough time for the full experience.

    On the day, come 30 minutes prior to

    your tour wearing the correct clothing

    to keep you safe: tennis shoes, com-

    fortable and loose pants and any type

    of exterior clothing that the weather

    calls for. The tour is outside, so make

    sure to look up the weather report be-

    fore hand and dress according to your

    comfort level.

    Pay Attention

    Every tour is led by knowledgeable and

    energetic tour guides who will be there

    to assist you every step of the way.

    Make sure to pay attention while they

    are giving instructions. During the

    tour, the guides will share a lot of fun

    facts and also give many safety tips for

    completing and navigating the course.

    Challenge Yourself

    Zip lining can be intimidating, but

    challenging yourself and overcoming

    fears is one of the greatest benefits

    of this particular adventure. Be pre-

    pared to test your limits and reap the

    rewards when you do something you

    didnt think possible. And remember,

    the LGCT team is dedicated to your

    safety, so rest easy knowing you are in

    caring hands.

    Bring A Posse

    Think the more the merrier when

    it comes time to plan this outdoor ad-

    venture. There is no requirement to go

    with a group but it definitely adds to the

    overall experience. Bringing friends on

    the tour means you can encourage one

    another and share a few laughs, or even
