HARVEST: Manual. Double sorting process (in the vineyard and on the sorting table in winery).

WINEMAKING: 100% whole bunch. Cold maceration in thermo-regulated stainless steel tanks then fermentation.

Native yeasts. Aged 20 months in French oak barrels.
