1 tbls green tea leaves2 tbls sliced fresh turmeric or turmeric paste2 tbls sliced fresh ginger2 ltrs spring water or filtered water1 sprig lemon thyme (optional but a great addition)

Place all the ingredients into a large mason jar or jug that will easily hold 2 ltrs. Stir. Cover with a lid or clean teatowel. Place on a windowsill or in direct sunlight for approx 4 hours. Stir occasionally.

Strain into a serving jug, add sliced lime, fresh mint and pour over ice.

WATERMELON ACAI BOWL with fermented custard apple

Serves 2-3

100g frozen acai pack225g watermelon flesh75g frozen banana pieces75g frozen blueberries1 tablespoon lime juice1 tablespoon liquid sweetener of choice1 tablespoon raw almonds, chopped2 teaspoons goji berriesberries, to garnish

Place the first 6 ingredients into a blender and blend until smooth and thick.

Pour into bowls, top with goji berries, chopped almonds and fermented custard apple and berries. Use fresh custard apple if you wish, or replace with ripe, sweet pineapple.

CARROT & CARAWAY BREAD makes 24 slices

100g ground golden flaxmeal100g whole golden flaxseed200g grated carrot100g pepita2 teaspoons miso paste300ml water5 teaspoons caraway seed2 tablespoons olive oil1 teaspoon salt

Place all the ingredients in a bowl and mix well.

Spread to 5mm thickness on a dehydrator tray lined with baking paper.

Dehydrate at 45 0C for 6-8 hours. Remove from dehydrator, flip upside down, remove the baking paper and return to dehydrator for a further 2-4 hours.

The longer you dehydrate, the less bread like the mix will become and more cracker like. It’s up to you how you prefer, they are delicious either way.

COCONUT HIBISCUS RIPPLE GELATOMakes 2 cups

30g hibiscus flowers100g raw sugar100ml water400g thick coconut cream120g light agave syrup3 tablespoons lime juice3 teaspoons lime zest2 tablespoons coconut oil¼ teaspoon salt

Place the hibiscus flowers, sugar and water into pot. Heat over low heat until the sugar has dissolved.

Increase the heat and boil rapidly for 5 minutes. Allow to cool before blending smooth. Refrigerate.

Place all of the remaining ingredients into a food processor and blend until smooth. Transfer to an ice-cream machine and churn until thick, or pour the mixture into ice block trays and freeze. Once frozen place, the cubes into a food processor and blend smooth. Do not over process as you do not want the mixture to melt too much. Spoon into a tub, pour over the hibiscus syrup and fold through to create a ripple effect. Freeze overnight.

1kg firm red tomatoes, chopped 1 small red onion, thinly sliced1 tablespoon capers4 anchovies, chopped2 yellow capsicums 6-8 basil leaves1 teaspoon dried oregano75ml red wine vinegar125ml extra virgin olive oil1 teaspoon salt4 thick slices of gf bread 1 clove garlic300g cuttlefish, cut into 2cm pcs1 teaspoon fennel seeds1 teaspoon cracked black pepper1 tablespoon oil, extra

PANZANELLA SALAD WITH BBQ CUTTLEFISH

Turn on the BBQ, when hot chargrill the yellow capsicum until starting to blister. Set aside. Next toast the slices of bread on both sides. Remove from the heat and rub with the clove of garlic. Tear the bread into pieces.

Place the tomatoes, onion, capers, anchovies, capsicum, basil leaves, oregano, vinegar, oil, salt and bread into a large bowl. Toss well and allow to macerate whilst cooking the cuttlefish.

Combine the cuttlefish, oil, fennel seeds & black pepper. When the BBQ is smoking, cook the cuttlefish for just 2-3 minutes. Toss through the salad and serve immediately with wedges of lemon.

2 broccoli heads2 green apples2 large celery sticks1⁄4 cup pepitas, toasted1⁄2 cup cranberries3 tbls fresh parsley, chopped 1 large avocado3⁄4 cup green tahini dressingCut the broccoli heads into tiny florets. Cut the stalks into matchsticks, as well as the celery and apples.

Place into a large mixing bowl with all the remaining ingredients and toss.

DRESSING100g hulled tahini30g honey or agave1⁄2 tsp mild English mustard 1⁄2 tsp grated garlic75ml apple cider vinegar2 teaspoon salt1 cup baby spinach leaves1 cup chopped parsley 100ml sunflower oilPlace all ingredients except oil into a food processor and whizz until spinach and parsley are smooth.

Slowly drizzle in the oil with the motor running. This is an emulsified dressing, meaning the oil is absorbed into the other components to create a new texture. The mixture should be thick and creamy.

BROCCOLI SALAD WITH GREEN TAHINI dressing

Turn oven on to 100oC for 10 minutes and then turn off. This is where you will place the loaf to rise before cooking.

Place all ingredients except water and extra seeds into a bowl, stir to combine. Add in the water and with clean hands start mixing the dough. It will seem very runny to begin with but within 3 – 5 minutes it will be a firm dough.

Shape the dough into an oval loaf and place onto a baking sheet lined with baking paper.

Using a sharp knife, slash the dough 4-5 times, drizzle with honey and scatter the extra mixed seeds over the top. Place into the pre-warmed oven for 30- 45 minutes. Make sure the oven does not feel too hot, it needs to just be warm.

Remove loaf from oven. Turn oven back on and preheat to 200oC. When it has reached temperature, carefully place the loaf into the oven. Bake for 1 hour. Allow to cool for at least 1 hour before slicing.

Sprouted Quinoa, honey & Sunflower Loafmakes 1 loaf

12/3 cups (260g) GF flour1/3 cup (25g) psyllium2 tbls(30g) golden flax meal1/4 cup (30g) sunflower seeds1/2 cup (85g) quinoa sprouts 2 tablespoons raw honey 1/4 cup (50g) coconut yoghurt11/2 teaspoons dried yeast

1 teaspoon salt1 tablespoon olive oil260mls warm water Extra honey to drizzle on loaf Extra mixed seeds to sprinkle on top

GLUTEN FREE “NO RYE” LOAFMakes 1 x 900g loaf

1/4 cup (35g) golden flax meal80ml water21/2 cups (375g) GF flour200g mixed sprouts*1 tablespoon raw cacao powder2 teaspoons caraway seeds4 tablespoons molasses4 tablespoons mild flavoured oil2 tablespoons unhulled sesame seeds2 teaspoons sea salt21/2 teaspoons dried yeast240ml warm almond milk

* these are sprouted mixed beans, such as mung beans, usually found refrigerated in the Fresh Produce section.

200g mixed sprouts*Preheat oven to1000C for 5 minutes, then turn off.

Combine the flax meal with the water and allow to gel for 10 minutes. Whisk the warm milk with the flax meal gel, then add the dry ingredients.

Line a 10cm x 22cm loaf tin. Tip the dough into the tin and place in the warm oven for approx 45 minutes. Make sure the oven is just warm. Once the dough has risen by about a third, remove from the oven and sit somewhere warm, away from any draughts. Turn oven back on and preheat to 1800C.

Once up to temperature, gently put the loaf into the oven and bake for 1 hour. Leave in the tin for 5 minutes, then transfer to a cooling rack. Cool completely before slicing. Keeps refrigerated for up to 2 weeks.

11/2 cups (200g) mixed dried fruit1 tablespoon brandy or orange juice1/4 cup (50g) chopped dried pineapple160ml apple juice1/2 cup (75g) chopped toasted macadamias1 teaspoon baking powder1/3 cup (60g) GF flour1/2 cup (50g) almond meal3 tablespoons coconut oil2 teaspoons orange or lemon zest2 teaspoons grated fresh ginger2 teaspoons mixed spicePinch salt

Preheat oven to 1600C. Brush 8 small cake tins with oil or line a 22cm x 10cm loaf tin with baking paper.Place the mixed fruit, brandy, dried pineapple and apple juice in a small pot and bring to the boil. Boil for 2 minutes then remove from the heat. Place all the remaining ingredients into a mixing bowl and add the warm fruit mix. Combine well.Spoon batter into tins. For the small cakes bake for 20-25 minutes. For the loaf tin, bake for 35-40 minutes. Cool on a wire rack.

BOILED FRUIT cakeS Makes 8 small cakes or 1 x 22cm loaf

2/3 cup (100g) currants1/2 cup (80g) inca berries1/4 cup (40g) goji berries1 tablespoon calendula petals3 tablespoons (60g) butter2 teaspoons each of lemon and orange zest5 tablespoons combined fresh orange and lemon juice1/3 cup (100g) honey1/2 teaspoon each of nutmeg and allspice560g butter puff pastry 1 tablespoon raw sugaregg wash Place all the fruit, calendula, butter, zests and juices into a small pot. Bring to the boil and simmer until most of the juice has been absorbed by the fruit. Add the honey and simmer for 2 minutes. Remove from heat and refrigerate until completely cool.Preheat oven to 2000C. Divide the pastry into 16 x 35g pieces. One by one, roll each piece into a 10cm circle. Place 2 teaspoons of the cold filling into the centre. Brush the edges with egg wash and picking the circle up, bring all the outer edges together to join. Invert onto your baking sheet, so that the seal is on the bottom. Flatten slightly with the palm of your hand. Repeat with all the remaining pieces.

Brush the tops with egg wash, slit 3 times with a floured knife and sprinkle with the raw sugar. Bake for 18-20 minutes. Cool on a wire rack.

In our health-conscious society, fad diets sprout up everywhere. Each seems to generate cure-all miracle claims and a growing number of devotees as well as critics. While it may not be the newest diet craze, the raw food movement is on the rise. But how healthy is it?The benefits of a raw food diet really depend on a number of factors. For many people, though, eating 100 percent raw over the long term can stress digestion and cause weakness.

The basic premise of this type of diet maintains that raw foods in their whole, natural form provide the enzymes necessary for digestion and vibrant health. Raw food enthusiasts claim that cooking destroys these natural enzymes along with many of the other important nutrients in whole, unprocessed food. By eating raw, you get an abundance of naturally occurring enzymes that are said to enhance and improve digestion while leading to better absorption of other beneficial nutrients in the food itself. This leads to the claim that a raw food based diet is better for health because your cells enjoy access to the nutrients they need from pure, unadulterated food.

Ancient Wisdom PerspectivesFrom the point of view of traditional Chinese and Ayurvedic medicine, the raw food philosophy is not completely accurate. These ancient traditions assert that cooking food actually breaks down nutrients so that they are more easily digestible and available for the body to use. These traditions also state that eating cooked food protects the digestive capacity (‘digestive fire’) of the body.

With all the contradictory dietary advice out there, it’s no wonder people may be confused about which diet is best for them.

One Size Does Not Fit AllEverybody has unique dietary needs based on their health, constitution, lifestyle, etc. It is significant to note that the raw food movement is more successful and popular among those who live in warmer climates.. This correlates with the principles of traditional Chinese medicine, which assert that raw foods have a “cooling” effect on the body. So someone with a lot of inflammation or heat may find balance with a raw foods diet. In contrast, someone who feels cold all the time can likely weaken significantly if they “go raw” over the long term.

Pros And Cons Of Cooked FoodCertain nutrients are proven to be more readily absorbed when cooked. For example, lycopene, the antioxidant found in tomatoes and other foods, is most bioavailable when tomatoes are cooked. Many vegetables (such as kale, spinach, onions and garlic) are also more nutritious when cooked. Light cooking releases many of their compounds that would otherwise pass through the digestive tract undigested.

On the other hand, science has shown that overcooking many foods — especially meats — is unhealthy. Overdone foods contain chemicals such as acrylamide that contribute to inflammation and cancer.

The best cooking methods are light steaming or sautéing without overcooking at high temperatures. These methods can help make nutrients in the food more available and easier to absorb without causing many of the harmful chemical reactions that occur in foods cooked for long periods at high temperatures.

The Enzyme DebateWhile raw foodists claim that enzymes from raw foods are critical for proper digestion, other dietary experts assert that the body naturally produces the enzymes necessary for digestion and does not need to obtain them from food. Critics claim that the amount of enzymes found in raw food have not been shown to drastically improve digestion or boost the levels of natural enzymes in the body.

However, it is important to note that with the fast-paced lifestyles of today and our typical processed food diets, many people are enzyme-deficient and can benefit from taking supplemental digestive enzymes. Enzyme supplements are typically designed to survive the stomach-acid environment and release their digestive benefits once they reach the small intestine, where most nutrient absorption occurs. For similar reasons, enzymes are important whether you eat a raw food diet or a processed food diet. We all need extra digestive support — some more than others.

As a result of this journey, two years ago my ‘Healing Space’ came to fruition - a space where Yoga and Mindfulness Meditation classes are on offer weekly. This space is nestled into a beautiful and peaceful 80 acre setting on Land for Wildlife. The Yoga and Meditation studio can accommodate around 18 students and the retreat space for residential stays is small and intimate.

My dream also included students having access to the teachings once they have completed their class or stay at the property, hence I have recorded a Mindfulness Meditation CD and a one hour yoga flow DVD suitable for all levels of practitioner. The DVD was filmed in my studio and gives a wonderful intimate class feel, just like you are taking a class at the space.

So always stay true to your dream, you may have a few detours along the way, remember the ‘process is the outcome’. My husband has been cancer free for 10 years, full circle, we still go to Kunara, and both are forever grateful for this resource. Hinchinbrook Island and the adjacent mainland coast near Tully in North Queensland. It grows to about 3 to 4 metres high and has a short trunk and corky bark. The

cylindrical flower spikes are mauve in colour, tipped with gunmetal grey. Grow in well-drained soil in a sunny or partly shaded position. Prune lightly after flowering to keep the plant shapely. Attracts birds, a long vase life

and is tolerant of salt spray and high humidity.

Melaleuca viridiflora is a shrub or small tree usually growing to 8 metres tall, with white, brownish or grey bark and an open canopy. Flowering can occur at any

time of the year but most commonly happens in winter. Stunning red flowers with a strong nectar scent is very attracting to the birds, butterflies and bees. It is suitable

for tropical and subtropical areas where there is high summer rainfall, especially in heavy clay soils.

A low-growing, evergreen, shrub with an attractive rounded habit and dense, grey-green leaves. Pale

mauve to white flowers are present for most of the year. Ideally suited to low borders, hedging, in large

patio pots and shrubberies. Grows well in coastal areas and does best in a sunny, open position in most well drained soils. Tolerant of dry periods and light frost once established. Trim after flowering to maintain

compact growth.

also needs a very sturdy structure to climb over, and room to grow. Prune each year after flowering to direct the

strong growth and keep it under control.

Always supervise dogs around water Play time in the water provides a great low impact exercise for dogs. However, not all of them are good swimmers, particularly heavy canines with short legs. You should always supervise your companions around water as they jump into swimming pools, but can't get out.

Don’t over exercise Dogs do not sweat significantly and instead control their body temperature by increasing their rate of breathing and panting. If a dog’s breathing is compromised, this increases the risk of heat stroke, so on hot days it’s important to pull back on intense exercise or stick to the cooler times of day.

Protect your canine from ticks Deadly paralysis ticks are are found on the Coast. They can be found all year round but in the southern areas they are found during the warmer months of the year. It is essential to take precautions if you are travelling up the coast this year.

Christmas food can be dangerous for dogs Most of us are guilty of over-indulging during the festive season and fatty foods are just as bad for dogs as they are for humans. A sudden change of diet or a large intake of unhealthy food can cause serious tummy upsets. Don’t feed your dog cooked bones as they often splinter and get caught in the mouth or gut. Onions, both raw and cooked, are toxic to dogs as are macadamia nuts and chocolate.

Dogs can also suffer from skin cancer and sunburn This is most common in white animals with pink skin on their noses and ears. Prevention is the best cure and dogs should be kept out of sun between 11am and 3pm. You can apply zinc to the nose.

Keep your pooch healthy with natural supplements Active canines are susceptible to joint pain. While it is more common in senior canines, it can happen to any dog no matter what age, size or breed. Natural supplements may help manage joint pain and improve overall health and wellbeing.

Beware of hot pavements Pavements and roads can get extremely hot and can burn the pads on your dog’s paws. It’s safest to walk early morning or late evening.

Always have fresh water available Don’t use plastic bowls that can be easily knocked over, but heavy bowls instead. You should leave two bowls in case one gets finished.

Be sure that there is some shade in the yard all day Don’t forget that the sun moves so a shady area in the morning possibly won’t be in the afternoon.

Never leave your pet locked inside the car When travelling with your dog these holidays, never leave them in the car even with the windows down as the temperature can quickly rise to a deadly level.

Pests and DiseasesWith the onset of the wet season, the abundance of growth and moisture allows many insect populations to skyrocket and thrive. Now is the time to be vigilant with controlling these pests to try to break breeding cycles. Leafy greens such as kale for example will be prone to being defoliated quickly from hungry Cabbage Moth caterpillars. An effective control for these is to use an organic Neem Oil spray to inhibit their eating and reproduction. Aphids will be active on many plants and scale too become very active over citrus and many other fruit trees. Treat these pests with an organic eco-oil to smother and kill them. This product can also be used to manage mites and leaf miner.

Fungal issues also become prevalent during this period due to soil saturation and humidity. Spores can move freely, so good plant hygiene is important. For downy mildew issues on your zucchini, pumpkin, cucumber and melons use a water/milk solution to spray over your leaves. Use full fat milk diluted to1:5 or 1:10 water and use on a regular basis. Don’t use a higher concentration than this as it may lead to sooty mould problems. This formula can also be used on some other fungal issues on tomato and other veggies. For other fungal issues that this formula does not work on, try an organic eco-fungicide. For serious diseased plants, remove and destroy from garden.

Mulching and FertilisingMulching and fertilising are crucial to the health and vigour of your plants AT this time of year. Choose a good organic mulch such as Sugar Cane Mulch for example. Don’t mulch too thick and ensure that mulch does not cover stems and trunks to avoid damping off or fungal rot. Mulching helps lower soil temperature around plant roots, helps retain moisture on hot, dry days and also breaks down into valuable humus. Fertilise underneath mulch to help ensure suitable plant nutrition. It is important to maintain a good fertilising regime through these months to combat the leaching elements due to increased rain. Use mulch or plant a green manure crop in bare areas in the garden to keep the soil covered from heavy rain and to prepare the area for autumn. Mulching will also help reduce some of your weed issues. Weeds can become a major problem this time of year so ensure you spend plenty of time doing your maintenance through the garden.

VegetablesEarly summer is good for your heat loving vegetables. You can grow crops such as okra, rosella, sweet corn, snake beans, dwarf beans, capsicums, chillies, pumpkins, melons, cucumber, radishes, eggplant, sweet potato and cherry tomato. You can also grow lettuces, silverbeet and beetroots, but they will need some shelter from hot, drying afternoon heat. Container growing can be a good option this time of year for certain herbs or leafy greens to move them into shelter when needed or to remove them from heavy downpours to avoid fungal diseases.

Create shade and cool areasShade and shelter are important features to create in your summer garden. You can strategically plant shrubs or small trees in your garden in areas that can create small microclimates to assist in alleviating hot areas in your garden. Alternatively until these plants get established, you can construct temporary structures from shade cloth to cool areas down and shelter sensitive plants during the hotter months. Consider incorporating some water features in shady areas to assist in the cooling effect and to help wildlife stay cool and hydrated. Frog ponds are also a good idea to aid in pest control.

The temperature in your garden between the months of December through to February can soar and

be relentless for days or even weeks on end. With temperatures averaging between 25oC min to 31oC max

through these months, you won’t be the only living things seeking relief. In addition to higher temperatures, rainfall

dramatically increases over these months, as too does the humidity. Heat, excess rainfall and high humidity

will set plant growth alight. On the flip-side however, it too will create optimum conditions for many unwanted

explosions in our gardens.
