Operation and Description

Cooking equipment generates large plumes of hot air,

loaded with grease particles, grease vapours, water,

and odours. These plumes or convective flows naturally

rise toward the hoods (1).

The front Capture JetTM technology creates an air curtain

(2) which helps to capture and contain these thermal

plumes and remove them as quickly as possible.

When the sides of the hood are open to provide large

lateral passings and facilitate the loading of the fryers

or grills, side Capture Jets (3) prevent very efficiently

side smoke spillage. With or without lateral passings,

the exhaust airflow rate hence remains the same. In

addition to the Capture Jets action, the bottom edge of the exhaust plenum is aerodynamically designed not to disturb the rising up of the thermal plumes.

This unique combination of features and the fact that

KSR hoods are designed to be installed closer to

the cooking appliances ensure the best capture and

containment capacity in the Capture JetTM range of

hoods. Exhaust airflow rates are reduced by up to 40%

to 50% compared to traditional hoods to remove the

same heat load.

After capture, the convective plumes generated by the

cooking appliances go through KSA multi-cyclone filters

(4). The largest grease particles are then removed

efficiently.

The standard KSR/S kitchen hood includes front Capture

Jets, a Capture Jet™ centrifugal fan, an IP65 light

fitting, adjustable exhaust dampers, airflow

measurement taps and KSA grease filters. All visible

parts of the hood are manufactured from polished

stainless steel AISI 304. Joints on the lower edge are

fully welded. KSR/S can be equipped as an option of

AccuFlow console to monitor the actual exhaust airflow.

The KSR/F model includes the same feature in a

freestanding version which does not need to be fixed

on the ceiling or wall. In addition to the front Capture

Jets, it is equipped with Side Jets allowing a large

opening of the hood sides. This provides a large passing

for the fryer baskets without compromising the final

efficiency. The back of the hood is also equipped with

an integrated services distribution unit. This all in one

model provides a complete solution for Quick Service

Restaurant.

Testing And Balancing (T.A.B.TM) taps for flow

measurement are fitted to the exhaust and Capture

Jet™ supply air plenums.

The Capture Jet™ technology consists of one set of

vertical nozzles located on the front of the hood. These

nozzles form a curtain which increases the containment

volume and prevents vapours escaping from cooking

areas.

The bottom edge of the exhaust plenum is aerodynamically designed not to disturb the rising up of the thermal plumes, thus further improving the Capture Jets action.

The absence of spillage lead to a better indoor air quality and to minimal heat load transmission to the kitchen. The exhaust airflow rate leads to huge energy savings while limiting the risk of drafts and facilitating the temperature regulation.

Combination with Side Jets(KSR/F freestanding version only)

• Allows a large opening of the sides of the hood hence

providing a large passing for the fryers baskets

• Better ergonomic and working conditions without

compromising the capture efficiency

The Side Capture Jets consist of a set of inclined

nozzles, at the level of the cooking surfaces, on both

the right and left sides of the cooking appliances block.

They allow a large opening of the hood sides hence

providing a large passing for the fryers baskets.

The nozzles have been designed to create an air curtain

able to gently push the smoke toward the exhaust

plenum without dispersing them.

The Side Jets modules are removable without tool for a

total ease of cleaning.

KSA Cyclonic Filters• Cyclonic effect provides a high filtration grade

The KSA cyclonic filters are composed of honeycomb

profiles, which forces the air to swirl inside the profiles.

The centrifugal effect is significant and, above all,

continuous – especially in comparison to the action of

traditional filters. Particles are thus pushed against the

profiles. The collected condensation flows naturally

towards the extraction plenum drains.

The KSA filters are 95% efficient in removal of 10 µm

particles. They are UL-accredited as flame-resistant and

have NSF hygiene and safety approval. Constructed

from AISI 304 (1.4301) polished stainless steel.

KSR/F model integrates an electricity distribution unit

on its back equipped with sockets/plugs for the cooking

appliances. This All in One solution makes the KSR/F

footprint accessible for cleaning and the back of the

cooking appliances accessible for maintenance.

It eliminates the coordination of other trades allowing

minimal preparatory work in bringing electricity to a

‘single point’ of connection for final ‘hook up’. It facilitate

also any potential modification due to a modification of

the cooking block.

The KSR/F is freestanding and don’t need to be hang

to the ceiling and the wall. It is therefore easy and fast

to install.

Low Velocity Make-up Air and Comfort Limit Height

The make-up technology and design are both vital in

order to guarantee the final total capture and

containment of the hoods and staff comfort. Poor

design would lead, inevitably, to drafts, thermal plume

spillage, sensation of discomfort and greasy floors,

walls and equipment.

It is highly recommended to use low velocity units,

installed on the ceiling or wall mounted, to supply make

up air and balance the exhaust airflow rates. Halton’s

range of stainless steel low velocity diffusers allows the

kitchen air to be renewed on the principle of air

displacement. Fresh air naturally falls to the ground and

fills the working area from that level. The absence of

flow disturbances prevents this fresh air from spreading

the convective flows generated by the cooking

equipment.

A comfort limit naturally appears in the kitchen’s air

levels through stratification. Below this height, air

quality is optimal.

Commissioning, Safety and Maintenance• Components are easy to access and clean

The Capture Jet™ hoods are designed to reduce the

number of external stainless steel components thus

reducing the number of joints to be cleaned for

maximum hygiene. The joints of the lower edge are fully

welded to be liquid-tight, avoiding harmful dripping of

condensation. The bottom edge of the exhaust plenum

is aerodynamically designed to limit the condensation

risk and also improve the hood efficiency.

Testing And Balancing (T.A.B.TM) taps allow fast control

of the exhaust and supply airflows during the

commissioning phase or maintenance operations during

the life cycle of the kitchen.

The KSR hoods are equipped with a full length access

hatch allowing a large access to the internal components

for maintenance.

All these features give to the Capture JetTM hoods a

high level of hygiene, safety and ease of maintenance.
