Mr. Leonidas Konstantopoulos was born in 1930 in a small village close to the city of Kalamata in the prefecture of Messinia, Greece. Growing up in a traditional agricultural environment, he inherited from his family the passion, knowledge and love for the cultivation of olives that was the main family occupation. Leaving his hometown in a young age, he moved to Katerini and started of as a merchant of olives in 1956. His great passion made him travel all around Greece to source the best quality olives and his hard work soon led to the opening of a small warehouse, allowing him to ferment and store his own production and expand his operations. Everything changed in 1979 with the opening of the first processing and packaging facility. His younger son Prokopis, by attaining an academic degree as an engineer managed to bridge the gap between tradition and technical knowledge offering rapid growth to the company. Starting from serving the domestic market, soon the first exports commenced to the markets of central and western Europe. The second milestone was a further expansion of the company with a newer building in 1990s with fully automated packaging lines shisting the focus to the export retail business. Following a huge growth, 2008 was the year for the 3rd and biggest expansion in a newer state-of-the-art facility. Lastly in 2014, Konstantopoulos S.A. opened a new plant in the area of Kalamata focused on the processing and packaging of extra virgin olive oil.

Following the family tradition and combining the long experience, technical knowledge and passion, Konstantopoulos S.A. “Olymp” has become an internationally leading company in its industry. The company still remains a totally family company with the first, second (Mr. Prokopis Konstantopoulos as CEO along with his brother Mr. George Konstantopoulos) and the third generation, working harmoniously together in continuing Mr. Leonidas vision in offering the world the most exceptional olives and olive oil that Greece has to offer.

Katerini facilitiesFrom 1956 until today many things have changed in the cultivation, processing and packaging of table olives. Konstantopoulos S.A. “Olymp” combining the long experience along with technical and academic knowledge, has become a truly innovative company, changing the industry standards.

The main facilities of the company are located in Katerini on a privately owned area of 70.000 square metes, with the production areas and offices occupying 15.000 square meters. They consist of three main buildings, that were built in 1979, 1995 and 2008 to keep up with the rapid growth of the company. All three are now fully operational and equipped with the most modern technological equipment and machinery, optimized for the different stages of production. Specially designed areas for the reception of new crop olives and underground fermentation tanks allow for higher efficiency and quality, while the newest processing machinery allow the processing of the olives in different forms (pitted, halves, quarters, diced etc.) according to the customer requests. The facilities include eight production lines in total for the packaging of table olives in all possible forms (glass jars, metal tins, plastic kegs, plastic barrels, plastic pots, plastic trays, plastic pouches, vacuum bags) and all of them feature indoor storage areas for both the packaging materials and the finished goods. Modern technologies allow for complete traceability system from the farm to the end product and offer complete control at each production stage. The company keeps investing in R&D and cooperates with the most accredited academic institutions in the request for the newest innovations, following its vision to serve the most exceptional olives to its customers.

Kalamata facilitiesThe Kalamata facilities are the newest addition to the Konstantopoulos family allowing the company to expand its operations and focus more on the extra virgin olive oil.At this stage the facilities have the capacity to store more than 1.000 tons of olive oil, with modern filtering technologies and bottling procedures and a state of the art quality control lab with the most advanced equipment, ensuring in this way that only the finest extra virgin olive oil is produced. The facilities also have a fully equipped modern production line for the retail packaging of olives (jars and tins), while there are more than 60 tanks for the fermentation and storage of Kalamata olives.

By this acquisition Konstantopoulos S.A. has been granted the right to produce the authentic Protected Destination of Origin (P.D.O) Kalamata Olives and Protected Destination of Origin (P.D.O) Kalamata Olive Oil that are famous all over the world for their unmatched quality and taste.

Our quality control department consists of chemists, chemical engineers, food technologists and agriculturists working together to ensure the highest level of quality for our consumers. Our facilities in Katerini include 2 separate fully equipped indoor laboratories for all necessary physicochemical analysis, while our Kalamata facilities have a state of the art laboratory allowing for complete chemical analysis of each batch of olive oil we receive and export. Our quality control team has long experience in the olive industry and supported by technical knowledge observes, examines and documents all of the olive production stages, from cultivation to processing to final packaging. We imply a complete traceability system that allows us to track each product, through all its production stages, from the farm to the end packaging. According to our quality standards we imply during the production all necessary controls and procedures in order to ensure the safety of the final product. Our priority and goal is customer satisfaction all the while meeting the strictest health laws set for the food industry.

2. Reception in Factory

Upon Receiving the olives in our factory visual control tests are made from each delivery, while random samples are also being sent to external labs for chemical analysis (ensure no heavy metals or pes-ticides). The olives pass the first selection process where the leaves, stems and all damaged fruits are removed and are then sorted into three main sizes and are transferred in the tanks for the fermenta-tion process to start.

3. Fermentation

Aster the olives have been transferred to the tanks the fermentation process starts. All our olives are naturally fermented and no acid chemicals are introduced. To ensure the best possible fermentation our specialized team of chemists, agriculturalist and food technologists checks and controls the pH, salt and acidity levels in the tanks. The total number of tanks increases from year to year, presently counting at 1100 tanks of 16000 lit capacity each.

What we do

1. Hand collection

Konstantopoulos family main focus has always been the relation with the farmers and the establishment of long term part-ners. All the table olives from all varieties are hand picked with care. Nowadays it co-operates with 17 sole agents and with more than 3.000 farmers all over Greece, while keeping performance record for each of them.

5. Processing

At this stage the olives are processed depending on the customer needs to achieve the various forms.The olives can be pitted, halved, diced or stuffed with different ingredients.

7. Storage & Loading

All finished products are kept in an enclosed area. Our warehouse is equipped with state of art drive in & conventional shelving.

4. Selection & Sorting

Upon removing the olives from the tanks an optical selector is used for color classification following a hand picked selection process. The olives are then classified into sizes and are ready for the next stage of production.

6. Packaging

When ready, the olives are transferred into the packaging site and packaged according to the customer’s specifications (glass jars, metal tins, plastic barrels, plastic bags, plastic pots, vacuum bags). There are 8 production lines in total that can be used simultaneously. Before each line a final hand picked selection process is made, along with metal detectors.
