Grate the peeledcucumber on a coursegrater and press asmuch liquid as possibleout of it with kitchenpaper. Mix the cucumberwith the rest of theingredients & garnishwith the olives, easy!

Wash the tomatoes, peel thecucumber and cut into slices.Cut the onion & pepper in rings.Place them in a salad bowl, addthe olives, oregano & salt andmix lightly. Slice the fetacheese, place it on top of thesalad and dress with olive oil.

Wash the chicken thoroughly and rubit inside and out with the salt, pepperand lemon juice. Rub the whole chickenwith mustard. Peel the potatoes. Placethe chicken and potatoes into a roastingdish, season with salt, pepper andthyme, add the remaining lemon juice,oil and a little water.

What a wonderful spring it has been for blossom.Everywhere trees and shrubs have been simplyloaded with colourful flowers, and after such a severewinter, it really has been a joy to see. After a verylate start, our gardens finally burst into flower andwith cooler nights through late April and the first halfof May, our spring displays have lasted really well. Byearly June, all this should be over, and we enter a pe-riod which British bee-keepers often refer to as the'June Gap'. The reason for this is that in most sea-sons, there is indeed a short period when most of the spring flowers have finished, and the sum-mer ones have not as yet come into bloom. Gardeners will notice this when all the spring beddingis cleared away and the summer bedding still has some growing to do before the real displaystarts. Our countryside flowers can also follow a fairly similar pattern when the fields of dande-lions have finished, and the white clover has yet to bloom, although the recent upsurge in oil- seedrape production has helped to bridge this gap somewhat for honey bees.

This June gap can be a worrying time for bee-keepers, especially if the weather also turns wetand cool. The honey bee colonies have increased rapidly during April and May, and if suddenlythere are very few flowers for them to feed on, then colonies can starve just when they are get-ting up to full strength. Our gardens can be vital to all our bees including our native bumble bees,and any plants that will flower in early June can be really important to them, especially if they offernectar and pollen. Honey bee colonies have been subject to some unexplained winter losses allover the world, and their roll as pollinators for fruit and vegetables is so important that we all needto encourage bees into our gardens whenever we can. Yes, bees can sting, but only when theyfeel threatened, and if we leave them alone to get on with their work, then it is very unlikely thatanyone will get stung.

There are lots of trees, shrubs and herbaceous plants that are good for bees, and if you are ob-servant, it will not take you long to see which ones are of special interest to them. Generally, sin-gle flowers which offer nectar or pollen are what the bees are searching for. One of the very bestplants is Cotoneaster horizontalis, a shrub suitable for both walls and borders.. The small pink-ish-white flowers appear in June just when the bees need them most, and if planted in a sunnyposition, I can guarantee they will be covered in honey bees. This will in turn ensure a wonder-ful display of deep red berries in the autumn. Apple trees and indeed crab apple trees are veryattractive to bees, as are raspberry and blackberry flowers, and again we will benefit from theirpollinating activities at the end of the summer with an abundance of delicious and colourful fruit.In the rock garden, thymes are superb bee plants. There are many ornamental varieties to choosefrom which will give a colourful display, as well as the culinary varieties for the herb garden whichare so useful in flavouring our cooking. The herbaceous geraniums are not only very easy to growand long flowering, but they also attract bees. Although bees will search out individual plants, whatreally attracts them are larger drifts of one kind. If they find these, they have an ingenious wayof telling other worker bees in the hive just where to find them. We should not forget our bum-ble bees, and during June, my garden is full of foxgloves. It never ceases to fascinate me as I seethem move from flower to flower in search of food. Foxgloves are so easy to grow, and with allthis pollinating going on, there is never a shortage of seed to produce plants in the followingyears.

It is vitally important that we make our gardens bee and insect friendly, not only for their sur-vival but also for our own. Theyshould also be covered by a good standardof kennel insurance. They should take fullcontact details for you and know which vetsyou use. If your dog has an on-going ill-ness do provide them with full details of thecondition and ensure you leave enoughmedication.

There are many different types of dogboarding facilities available from the tradi-tional businesses with individual kennelsand runs to modern ones which are more'doggy hotels'. It can seem challenging,choosing the one which is best for your petbut it is worth putting some time and effortinto checking out all your options and mak-ing sure your dog is happy and well caredfor while you are away.

Mostwill allow you to use your own dog food,which again will make your pet feel more athome, be more likely to eat and less likelyto develop diarrhoea.

Dogs are social creatures and like to knowwhat is going on around them. Kennelswith full length wire or clear perspex doorsare generally quieter places because thedogs are able to see outside the space andso feel involved. If you have more than onedog and they get one well, kenneling themtogether is a good idea so they can keepeach other company. A good boarding fa-cility will also factor in time during the dayfor staff to be able to interact with the dogs.
