Two musicians make a duo; three make a “crew”. So says John Brue, lead guitar and vocalist for The Brue Crew, a local Jersey Shore group who’ve been playing in the area for over two decades. Mixing various music genres, the band has been entertaining fans at most popular venues, throughout the Shore area. Read more about Brue Crew in this issue’s Band Profile. Listening to the requests of our female audience (roughly 50%), we have made a decision to increase the focus of our popular monthly Mixologist-of-the-Month feature to include more male bartenders. Meet Brian McGrath, a young man with a vision for his future, and tending bar at the Asbury Ale
House is helping Brian move forward in the right direction. While attending college (and paying his own way), Brian is planning to make a career for himself within the hospitality industry. Learn more about Brian in this issue’s feature. I’m pleased to say that our newest editorial feature in Venues NJ (Bill Griner’s All That’s Beer) has been warmly received by our readers and is generating a very good response. In this issue, Bill gives us a little history on NJ Brews and Breweries. Take a moment and learn a bit. The Brue Crew has rocked the Jersey Shore with its amazing talent playing songs from various music genres for two decades. The group boasts to have one of the best guitar players on the Jersey Shore, and rightfully so.
This Ocean County trio consists of John Brue on guitar/lead vocals, Adam Niedzwiecki on lead guitar/backing vocals, and Bobby Lame on bass guitar/backing vocals.
How it all began: Over twenty years ago, John Brue was taking guitar lessons from Adam and the two decided to start a duo. Later, Bobby joined transforming them into a “crew”. They are not exclusive. Other talented New Jersey musicians have joined them on stage including John Hawes of the CSN songs band, Mike Dalton of The Mike Dalton Band, and
John Hanney. John quips, “All three of us enjoy jamming with Jersey Shore Legend Mike Dalton when we have the chance”.
The Crew’s style is, according to John, “everything”. The band knows over 850 songs and continues to learn new ones. “We will close in on a 1000 songs this year and pride ourselves on playing it all”, John says. The band readily takes requests and if they don’t know a particular song, there is a very good chance the group knows at least one song by that particular artist. The Brue Crew adheres to one rule, “The songs we play are not about what we want to play, but what the audience wants to hear”. The band plays Blues, Country (both old and new) Classic Rock, Southern Rock, etc… John’s musical influences are Bruce
Springsteen, Johnny Cash, and The Eagles. Adam credits
Eric Clapton, Mark
Knopfler, and David Gilmour, while Bobby says, “anything with a melody and a harmony”.
A typical play list for a Brue Crew performance would include The Eagles, The Beatles, America, Bruce Springsteen, Eric Clapton, Grateful Dead, and the Dire Straits. A few of its favorites are “Nowhere Man”, the Beatles, “Toes”, Zac Brown Band, and any song by Glenn Frey and the Eagles. The reason behind this favorite list is “the harmony”.
At the end of a performance, there are three things the band wants the audience to say (or think): “wow, those guys are a lot of fun”; “what sweet vocal harmonies”; and “the guitar player is incredible”.
By the way, The Brue Crew’s nickname for lead guitarist Adam Niedzwiecki is “The Best Kept Secret on
the Jersey Shore”

Brian McGrath has a vision for his future and tending bar at the Asbury Ale House in Asbury Park, is helping that vision come to fruition. McGrath began working in the restaurant industry at Bonefish Grill in Brick as a server. He then moved to bartending to become more familiar with the industry. “Once you know how to bartend, you can get a job for the rest of your life,” says McGrath, of Brick. He left Bonefish Grill and worked as bar back at Shore House Bar & Grill in Point Pleasant for about six months before moving onto bartending at Asbury Ale House. Both eateries are owned by the Gullace family. McGrath, a student at Ocean Community College in Toms River,
majoring in business management, says bartending is helping him to pay his way through school with no student loans. After getting his degree, McGrath will most likely pursue a career in the hospitality industry. Initially, I was indecisive about what I wanted to do,” admits McGrath. “But, working with the Gullace family has sparked interest in the industry for me. I now have a plan for the future.”McGrath enjoys bartending at the family-owned-and-operated Asbury Ale House as opposed to working in a corporate-owned venue.”When you work in a corporate business you don’t really get a chance to become your own bartender,” he said. “You have to follow specific rules and
regulations right down to the letter. You don’t have the opportunity to express your own personality.” The Asbury Ale House provides McGrath with the opportunity to be his “own kind of bartender.” “Working at the Shore House allowed me to transition to the Asbury Ale House,” McGrath says. “And, working with the Gullace family has allowed me to learn so much. They’ve been in the industry for years. They know all the ins and outs.” McGrath also currently tends bar part-time at the Mantoloking Road
Pub in Brick. In between working and attending school, McGrath makes time for a favorite sport, fishing, something he finds “fun, exciting and very, very relaxing.”He enjoys fishing “very early” in the morning at Island State Park, among other venues. He enjoys attending football and baseball games to see his favorite teams, the New York Mets and the New York Jets. He also enjoys watching the games on TV which works out well for McGrath since he works in a sports bar.”It helps,” he teased.

I’ve been doing a little more traveling around the state lately, and everywhere I go, I see more breweries popping up all over the place. For a craft beer guy this is such a welcome change, as New Jersey has had a tumultuous beer history. Before New Jersey was even called New Jersey, there was a brewery here. Historical records indicate the first NJ brewery being in the area of Hoboken around 1643. However, a short time later it was destroyed during a conflict with the local Native Americans. As the nation continued to grow, so did New Jersey and its brewing community. Throughout the 1800’s and early 1900’s, Newark, NJ and the surrounding area exploded with German immigrants as they brought with them their love of beer. Prior to prohibition, Newark alone w a s home to over 2 5 b r e w e r i e s and beer p r o d u c t i o n accounted for a large sector of the economy. Then the unthinkable happened. Puritans high-jacked the country and passed the Prohibition Act
which took effect in 1920. A few breweries, Anheuser-Busch for one, were granted special permits by the government during prohibition to brew beer with less than one half of one percent alcohol. All the other “legal” breweries were forced to close and organized crime took a hold of the beer business for the next 13 years. When prohibition was finally repealed in 1933, the number of breweries in NJ had dwindled significantly. The next few decades saw both growth and recession for NJ breweries. Larger breweries such as Pabst and Ballantine, called New Jersey home until industry and economic changes forced them to close their doors in the late ‘70s and early ‘80s. This was a difficult time for Jersey beer. By 2010 there were just 28 breweries open in New Jersey. For the past 5 years New Jersey beer has been on the fast track to a remarkable comeback. Since 2011, the amount of breweries in New Jersey has nearly doubled. Currently there are 52 operating breweries in the state, another 16 brewpubs, and at least 2 dozen
more breweries in planning or under construction. The beer being made in New Jersey
today rivals nearly anywhere else in the country. Next time you’re looking for a

Within the past couple of years, there has been a movement afoot that keeps growing -- that of eating locally and in season. This is what is driving the increasing number of farmers markets, farm-to-table eateries, and local food festivals. There are several reasons for this: sustainability, health, freshness and taste.
Variety Our proximity to more than 100 miles of ocean, plus bays in our northern and southern regions, allows us Jersey residents to indulge in a wide variety of fresh, healthy and popular seafoods -- scallops (bay and ocean), crab, clams, lobster and oysters, to name several.
Edible fish we can catch and find at local markets and restaurants include fluke, striped bass, tilefish, and herring. According to a state report found on jerseyseafood.nj.gov, over 100 different species of finfish and shellfish were harvested in the Garden State. “Local product is shipped to some of the most discerning seafood markets in the world. New Jersey monkfish are on display at wholesale markets in Seoul, South Korea. New Jersey tuna is sliced in sushi bars in Tokyo. New Jersey squid is served in tapas restaurants in Madrid.”
And people in other states are loving New Jersey-caught seafood too. Most of the harvest of Fishermen’s Dock Cooperative in Point Pleasant Beach is sold to wholesale markets in the Mid-Atlantic states and southern New England. According to the co-op’s website, “They primarily target fluke, silver hake and squid but in the past have also had significant landings of winter flounder, bluefish, monkfish and scallops.”
The other co-operative, Lund’s Fisheries Inc., in Cape May, catches a wide variety of both finfish and shellfish, from the well known like bluefish, sea scallops, black sea bass, summer flounder, mackerel and herring, to the lesser known butterfish, Atlantic croaker and ilex squid.
And according to the Garden State Seafood Association, the region of Cape May and Wildwoods is the second strongest commercial fishing port on the Eastern seaboard, harvesting approximately 43 million pounds of finfish and shellfish. For the entire state, we netted approximately 162 million pounds of finfish/shellfish tallying nearly $180 million. All this done without overfishing (depleting) species. And -- we don’t need solely to rely on our commercial operations; residents are allowed and often encouraged to “go fish” for themselves. Fishing, crabbing and clamming can be done, just check for any rules and regulations.
Preparing & Cooking If catching your own -- or buying fresh from local vendors or even dockside, there are some great tips
to understand when preparing them. One significant question many people have is if it’s safe to consume raw fish and seafood (many folks think of sushi). According to jerseyseafoodnj.gov, a number of people choose to eat raw seafood, such as oysters on the half-shell, sushi, sashimi, and ceviche. That said, the site warns, “consumption of any raw or under-cooked animal protein poses a risk of food borne illness to the general population. However, certain segments of the population who are considered at high risk, should avoid raw or under cooked animal proteins, including raw fish and seafood. At-risk individuals have weakened immune systems and cannot effectively fight bacteria. Therefore, those who are considered to be “at-risk” should only enjoy seafood in the cooked form. The at-risk groups include people with the following conditions: liver disease from viral hepatitis or other causes; diabetes; cancer; immune disorders, including HIV infection; long-term steroid use (as for asthma and arthritis); and an iron disorder.”
Further, many people may want to know when cooking fresh fish and seafood for the first time, how do you know your food is cooked and ready to eat? The website has compiled outstanding information about how to prepare your Jersey-caught sea vittles, as follows:
“Jersey seafood is one of our region’s original fast foods. The key to delicious seafood is to cook it quickly. Unlike meat, fish and shellfish do not need to be tenderized by cooking. In fact, overcooking toughens seafood and dries it out because its natural juices are lost. The Food and Drug Administration recommends cooking most seafood to an internal temperature of 145°F (63°C) for 15 seconds. A meat thermometer is the best way to determine if fish and shellfish are safely cooked.
“If you are cooking whole fish, fish steaks and fillets, measure the fish at its thickest part. For every inch of thickness, cook 10 minutes. If less than an inch, shorten the cooking time accordingly. There are also ways to visually assess cooking. For fish, insert the tip of a sharp knife into the flesh and pull aside. The center should have flakes that are beginning to separate. Let the fish stand three to four minutes to finish cooking and check at the thickest part of the fish.
“When preparing shrimp, lobster and scallops, check color. Shrimp and lobster turn red and the flesh becomes white. Scallops become a milk white color and firm. The shells of clams, mussels and oysters, open when they are done. Throw out those that stay closed.
“Purchase shellfish carefully. Buy raw oysters, clams and mussels only from reputable sources. If in doubt, ask to see the shipper’s tag or check the shipper number on the container. Keep live shellfish alive until ready to prepare. Refrigerate live shellfish properly. Live clams, mussels and oysters should be stored under well- ventilated refrigeration, not in air- tight bags or containers.”

ON YOUR FEET! The recipe may be familiar, but the flavor is fresh in “On Your Feet!,” the half-formulaic, half-original and undeniably crowd-pleasing musical about the lives of Emilio and Gloria Estefan playing at the Marquis Theater in NYC since last November. To cite the most unusual element: Many a musical could be described as a car crash, but I can’t think of any in which such a calamity figures as a dramatic turning point. Still, it’s no spoiler to say that the show includes the accident that threatened Ms. Estefan’s life and might have ended her career. Fans of hers will recall that 1990 incident, which darkens the second act and brings some gravity to this mostly flashy, salsa-splashed show. The musical, which stars a vibrant Ana Villafañe as Ms. Estefan and a commanding Josh Segarra as her husband and musical collaborator, neatly showcases the boppy dance-floor hits and swoony ballads that made Ms. Estefan and the band Miami Sound Machine a radio and MTV staple in the 1980s. Like the Carole King musical, “Beautiful,” albeit with a built-in audience of a different

generation, “On Your Feet!” offers a music-business bio-drama laced with hurdles, and a score stuffed with familiar songs, in this case “Conga,” “Rhythm Is Gonna Get You,” “Don’t Wanna Lose You Now” and many others. But it also depicts the struggles of its Cuban-American characters with honesty, if occasional shorthand. We meet the young Gloria in Miami, where she and her parents moved after the Cuban revolution. Singing improvised compositions and strumming her guitar, she listens to encouraging words recorded on a tape by her father, José, who is away fighting in Vietnam: “You’re a born artist, my angel. And one day you’re going to be a big star!” Once back from the war, José develops multiple sclerosis, and one of the musical’s most affecting scenes finds Gloria confessing her love for Emilio to her father, who’s unable to speak. As Gloria’s mother gives a vivacious, tart performance as a sort of anti-Momma Rose, whose disapproval of Gloria’s ambitions stems partly from envy; her father quashed her chance early in life to become
the Spanish voice of Shirley Temple. At the same time, Gloria’s grandmother, or abuela furtively supports Gloria’s burgeoning career. Mr. Dinelaris’s book includes welcome kernels of wit, as when Emilio, whose band is established in the Latin market but is fighting for crossover success, tells a promoter how well one of the songs went over in Sweden. “You know how white those people are?” he says. “It was like watching a room full of Q-Tips bouncing all over the place.” The energy sags a bit and the invention flags when the musical reverts to the story of Gloria and Emilio’s path to professional success. “You’re Emilio Estefan. You play music with the Miami Latin Boys,” Gloria’s grandmother helpfully announces when Emilio comes looking for the young woman whose musical talent he has heard about. He invites her to audition informally for his band, and Gloria, naturally, wows them.
The wrinkles on their upward path are ironed out quickly. Gloria’s shyness and awkward dancing melt away in
the course of a single number. After the band has begun to climb the charts in Latin markets, a record executive dismisses their dreams of recording in English. “You should look very closely at my face,” a heated Emilio says, “because whether you know it or not … this is what an American looks like.” Emilio and Gloria fight taking the promotion of their song into their own hands, as their struggles bring them closer together. Ms. Villafañe sings with a timbre similar to Ms. Estefan’s and gives a feisty and funny performance that blossoms emotionally; Mr. Segarra brings a forceful magnetism and swarthy good looks to his performance, although his scruffy singing voice does no favors for ballads. Still, there’s no lack of zest in the musical, which has been directed with button-pushing professionalism by Jerry Mitchell.

Trying to interview Kevin Downey Jr. (don’t ask, the answer is no) is a little like trying to make a snowball in July …. somewhat elusive. I met Kevin when he was performing at MJ’s Buttonwood Manor in Matawan, NJ. Prior to our meeting I had seen him on television and in a bunch of videos. He also made something of a name for himself on America’s Got Talent.
This particular interview column will be a little different than most of the ones you may have read in the past in that Kevin’s answers were very much like his comedy, quick one-liners. Here’s an example:

Okay, I think you get the idea of where this is headed. I’m going to fill in the blanks in Kevin’s own words from one of his videos. Kevin is originally from Detroit and when he was 18 he came to New York City to try his hand at stand-up comedy. As often happens, life gets in the way of best laid plans and he ended up spending the next 17 years as a switchboard operator until he was unceremoniously downsized. At this point he decided that he been given a new lease on life and figured to jump into comedy full steam ahead.
V-NJ: You seem to be a fairly well rounded guy, in the aesthetic sense, not weight-wise. You write, you perform, TV, one man shows, USO performances. Who’s the real you, what do you like best?
KD Jr.: I like hiking, long romantic walks on the beach and clubbing Seal, the singer.
When Kevin jumped back into the comedy scene a realized that playing it safe was not who he was going to be. He is funny, irreverent and, well let’s just say, a tad unusual. He has said that mine is “…not conventional stand-up comedy!” So here he is, “swinging for the fences”.
V-NJ: I don’t know if you care for comparisons but I like your one-liner technique. You remind me of Steven Wright. Anyone in particular who you think you’ve emulated or tried to fashion your comedy after?
KD Jr.: H.H. Holmes.
Yes, I had to look it up. H. H. Holmes is known to be one of the first documented serial killers in the modern sense
of the word. Like I said, Kevin is definitely what you’d call unorthodox.
V-NJ: What’s coming up in the next few months in the NY-Metro area? TV?
KD Jr.: You can see me on NYC Crime Report with Pat Dixon, on the Anthony Cumia Network fairly often and Red Eye on Fox News in June.
While performing on America’s Got Talent, Kevin was extremely flattered to have been impersonated by both Howard Stern and Howie Mandel.

About Fight4Autism: Fight 4 Autism is a NJ 501(c)3 Non Profit Organization founded by Autism Moms dedicated to making a difference and giving back to families living with autism every day in northern NJ. Fundraising at special events and online donations will help us raise money to help others and raise awareness for Autism. If you are in need of assistance, please let us know. All registration submissions will be reviewed and a family and or/families will be chosen to receive our assistance. All donations made to TGM for Fight4Autism.org will be added to the total proceeds from the “Bite Me Autism!” show and presented to Fight4Autism.

It can refer to an action, a thing or an attitude. How many times have you heard the phrase “….. he’s / she’s refreshing” or, “that cold drink was refreshing.” This time of year, as the seasonal weathers change, I think of virtually clearing out the cobwebs from my mind, stimulating my brain and renewing my attitude toward those with whom I come in contact on a daily basis.
As a matter of habit, going through our daily chores and routines, we tend to get caught in a rut (as it were). Our attitudes become lifeless and it often reflects in our words and actions toward others. In the hospitality business, this can be detrimental. Our staff sees a change in attitude, vendors notice a negative tone and customers “feel” a change in our personality.
We are all in the business of serving people, dealing with them on a daily basis and seeing to their needs and desires. That’s what we’ve chosen to do and our business and success depends on doing it to the best of our abilities. So, as the season changes, the weather brightens and the prospects of a busy summer percolates in our minds, take a step back, reflect and make the effort to renew, stimulate and restore that positive approach toward life and everything in it.. Go ahead, give it a shot.

About The Goddess Monologues: The Goddess Monologues gives women of all ages and walks of life a place to share their stories, their triumphs, their struggles and their experiences. Each monthly stage production will be dedicated to a different subject matter, with 16 women telling their own story in their own words.
