Rodeo a fun event

competitionRodeo participants put their lives

on the line each time they enter a competition. Drawing thousands upon thousands of spectators eager to watch the awe-inspiring skills of roping and riding various livestock, a rodeo is a series of events that tests competitors in a variety of ways.

It is believed that rodeo arose as a sport out of the necessities of working with cattle herding in areas all around the world, including Spain, Mexico, Canada, Australia, and the United States.

In North America, professional rodeos are established and sanctioned by the Professional Rodeo Cowboys and Women’s Professional Rodeo Association, while the Australian Bushmen’s Campdraft and Rodeo Association is the largest rodeo organization in Australia.

When thinking of rodeo, it’s easy to envision cowboys atop bucking broncos, and this is a classic rodeo event. However, rodeo also encompasses bull riding, which is one of the sport’s most popular and dangerous events. Bareback riding, steer wrestling, team roping, ladies barrel racing, and rope and tie are also popular rodeo events.

Warmer weather usually marks the beginning of rodeo season across the United States. Rodeos typically draw large crowds, and they may be held in conjunction with county fairs and other warm-weather events, making for a well-rounded celebration.

When the competition has ended, the attention then typically turns to fun and food, most notably barbecue. For many, barbecue means savory ribs cooked and seasoned with savory sauces. This recipe for “Spicy Pork Ribs” from

Jacqueline Bellefontaine’s “What’s Cooking:Barbeque” (Thunder Bay Press) is a delicious way to prepare and serve barbecued ribs.

Spicy Pork Ribs(Serves 4-6)

2 pounds pork spareribs2/3 cup sieved tomatoes2 tablespoons red wine vinegar2 tablespoons dark muscovado

sugar1 clove garlic, crushed1 teaspoon dried thyme1/2 teaspoon dried rosemary1 teaspoon chili sauce Red chilis, to garnish Mixed salad greens, to serve

1. If you buy the spareribs in a single piece, carefully cut them into individual ribs using a very sharp knife.

2. Bring a large pan of water to a boil and add the pork ribs. Cook the ribs for 10 minutes, then drain them thoroughly. Place the ribs in a large, shallow, nonmetallic dish.

3. To make the spicy sauce, combine the sieved tomatoes, red wine vinegar, sugar, garlic, thyme, rosemary, and chili sauce in a bowl until thoroughly blended.

4. Pour the sauce over the spareribs and toss to coat on all sides. Marinate in the refrigerator for 1 hour.

5. Remove the spareribs from the sauce, repurposing the sauce for basting. Broil the spareribs over hot coals for 5 to 10 minutes, then move them to a cooler part of the barbecue. Cook for a further 15 to 20 minutes, turning and basting with the remaining sauce.

6. Transfer the spareribs to warm serving plates and garnish with the red chilis (if using). Serve with the mixed salad greens.

Chef’s tip: For authentic Southern-style ribs, make sure you buy pork spareribs and not rib chops. Pork spareribs are often sold cut into individual ribs, but it is easy to cut between the ribs with a sharp knife if you cannot find them already seperated.
