Basil’s deep green color and fresh, herbaceous flavor make it a perfect match for tomatoes, another summer favorite. The flavonoids in basil have antibacterial properties and have been shown to protect cells from damage by free radicals. Eugenol, an oil in basil, is an anti-inflammatory agent. Enjoy fresh basil in sandwiches and salads, or grind it up with garlic, pine nuts and olive oil to make a classic pesto. Feel-Good Fitness Don’t feel like working out? Do it anyway. ‘The People’s Princess’Diana, Princess of Wales, would

have been 50 years old on July 1.Diana’s untimely death at the age of36 in a 1997 car crash sent the worldinto mourning, but the bright spirit of“the people’s princess” lives on. Hereare some facts about Diana:

Royal courtship. Prince Charleshad known Diana for several yearsand had briefly dated her older sisterSarah. But Charles never consideredDiana as a potential bride until onesummer weekend in 1980, when thefuture princess watched the princeplay polo. In the winter of 1981, Dianaaccepted Charles’ proposal ofmarriage.

Worldwide wedding. On July 29,1981, 20-year-old Diana wed32-year-old Charles, with3,500 guests in attendance, at St.Paul’s Cathedral in London. Twomillion spectators lined the route ofDiana’s procession to the church, and750 million more people around theworld watched the ceremony on TV.

Little princes. The union of Dianaand Charles produced two sons,Prince William in 1982 and PrinceHarry in 1984. Despite theirdifferences, the royal couplereportedly made a good parentingteam and shared responsibility for theboys after divorcing in 1996.

Lasting legacy. Her openness mayhave roiled the royals, but Dianamodernized the monarchy. Shecampaigned against the use of landmines, raised awareness of eatingdisorders and held the hands of AIDSpatients, confronting the prejudices ofthe time.

Pour on the KetchupWhether you spell it ketchup or

catsup, the tangy tomato-basedcondiment is in peak demand duringthe summer as Americans take aim onhot dogs and hamburgers.

A forerunner to ketchup known aske-tsiap or kecap originated withIndonesian and Asian cultureshundreds of years ago as a spicypickled sauce for fish made ofanchovies, walnuts, mushrooms andkidney beans. British seamen broughtthe condiment home with them in the17th century and changed its name tocatchup. By the 18th century, NewEnglanders were adding tomatoes tothe mixture.

Full-blown commercial productionstarted in 1876 when Henry J. Heinzstarted bottling ketchup. Although hewas not the first to produce ketchup,his recipe caught on and remains thesame to this day. Competitors soonwere bottling their own formulas underthe names of catsup, katsup, catsip,cotsup, kutchpuck, cutchpuck andeven cornchops, which was brieflyproduced by Hunt’s for the stateof Iowa.

Ketchup does have healthfulproperties. Its base is cookedtomatoes, which contain lycopene—shown to have cancer-fightingproperties. Still, the scientific worldrebelled when ketchup was declared avegetable on school lunch menus fora brief period in the 1980s. It would beabsurd to declare a hot dogsmothered in ketchup a health food,but it’s summertime—the timeto indulge.

Riding With the WindIf you’ve ever wondered what it’s

like to fly as free as a bird, floating in ahot air balloon is about as close asyou can get. Hot air balloon festivalsabound in summer as a feast for theeyes. For the adventurous,commercial hot air balloon rides areincreasingly available.

The first hot air balloon took flightin 1783 in France, with a sheep, aduck and a rooster on board. In 1793,George Washington witnessed thefirst balloon launch in North America,piloted by Frenchman Jean PierreBlanchard.

The three basic components of theaircraft are the envelope, burner andbasket. The envelope is the actualballoon that holds the air. The burneris the equivalent of an engine anddrives hot air into the balloon. Thebasket is where the pilot andpassengers stand. To drive theballoon upward, the pilot opens thepropane valve. To move it downward,the pilot uses the parachute valve. Tosteer the balloon, the pilot moves thecraft up or down, depending on thelocation of wind currents, and rideswith the wind.

A commercial ride in a hot airballoon generally costs from $150 to$275, but often rides in tetheredballoons are available for muchless at festivals. Check outHotAirBalloon.com for a list of balloonfestivals around the world.

Creamy Mini TartsIngredients:• 1 8-ounce package cream

cheese, softened• 1 14-ounce can Eagle Brand

Sweetened Condensed Milk• 1/3 cup lemon juice• 1 teaspoon vanilla extract• 4 1.9-ounce boxes mini phyllo

shells• 2/3 cup blueberry preservesDirections:Beat cream cheese in large bowl

until fluffy. Gradually beat insweetened condensed milk untilsmooth. Stir in lemon juice and vanillauntil blended. Spoon about2 teaspoons into each mini shell.Refrigerate 2 hours or until firm.

Make a slight indentation in thefilling using the back of small roundmeasuring spoon. Fill with1/2 teaspoon preserves. Refrigerateuntil ready to serve.

Variations:Fresh fruit. Top mini tarts with fresh

fruit such as strawberries, blueberries,bananas, raspberries, cherries, kiwi,grapes or pineapple. Garnish withmint leaves.

Hot fudge. Place 2 tablespoons hotfudge topping into corner of resealableplastic bag. Cut small corner off bag.Squeeze to drizzle over top ofmini tarts.

Preserves. Use different flavors ofpreserves or orange marmalade tocreate a colorful assortment. Garnishwith mint leaves.
