CEO MESSAGE: Provincial Update Summer 2019

n preparation for this editions CEO Message, I started writing about

how extremely tough the last couple of years have been for our membership and the association itself.I was once again listing off all of the things that continue to sweep over us. The further I got into it, the more it began to occur to me that it had all been said before and to everyone I

have met with or had a conversation with. From the prospective of the SHHA and our financial situation, it was getting pretty easy for me to whine and moan and to look at our situation as a glass half empty.I also realized that what had actually happened last year was anything BUT a glass half empty and was pretty remarkable. Sure we got pounded in some areas but we also made some incredible headway in others. Going into 2016 we knew as an organization we had to change, to evolve. We came up with a plan on how we could not only survive, but to eventually thrive. We also knew that Saskatchewan was the perfect environment for growth and that growth was in tourism.If we did everything in our power to support our partners in the tourism and hospitality industry, we would see more heads in beds, more bums in seats, more customers at our tills, more employees for our businesses and fatter stacks in our bank accounts. We came up with a “Growth Plan” of our own and we were going to stick with it. As it turned out, it was a helluva good plan. As we concentrated on the strategy, we saw ourselves moving towards becoming an industry association. An organization that could speak with a single voice for those in the tourism, hospitality, and service industry.We could not just be hotels, motels, taverns, bars and night clubs. If we were to survive as an organization, we had to become much more. We had to redefine the idea of who we are. As of May of 2019, we are branded restaurants like Chop, Rock Creek and Earls.

• We are Quick Service Restaurants like McDonalds and Tim Hortons.

• We are RSP’s.

• We are tourism attractions like Wanuskewin and the SK Science Centre.

• We are casinos and spa’s like Dakota Dunes.

• We are tech companies and taxis, and now, the cannabis industry!

• We are tourism and all the service agents that support it.

Our members are hard working, they are VERY passionate, they are entrepreneurial, they take risks and they employ THOUSANDS OF PEOPLE!

We are going to stick to the plan and work on the opportunities that lie before us. We are going to continue to be very creative and explore ALL potential benefits for our membership and the association.

We will continue to bring our perspective to government and VIGOROUSLY advocate for positive change. We will continue to take the Saskatchewan perspective to the national table and show them how it’s really done.

We get things done here that others can’t because we are small. We are nimble and we are very connected. Perhaps because of our intimate tether to our land, we understand better than most that we are in this together.

It is because of our sense of community and connectedness that, I believe, we are uniquely positioned to collaborate in incredibly effective ways and drive the change that needs to happen in this province.

We will never take our eye off the ball and will continue to Advocate, Collaborate and Educate.

When we combine those 3 elements, ADVOCACY, COLABORATION AND EDUCATION, we can come together and achieve anything we set our minds to….IT’S ALL ABOUT THE PLAN RIGHT! Because, as we know, Hope is not a plan! ■

RESTAURANTS CANADA ANNOUNCES New Association Partnership with the SHHA

estaurants Canada, a national association representing more than 30,000 foodservice and hospitality businesses across Canada, is thrilled to welcome the Saskatchewan Hotel & Hospitality Association (SHHA), who for over 85 years has been representing the hospitality industry to government, suppliers and the public provincially, into its growing network of association partners.

Through this partnership agreement, SHHA’s foodservice operators will be recognized as Association Members of Restaurants Canada, gaining access to benefits including national affinity partner programs, digital communication, education and research assets, as well as access to Restaurants Canada industry events.

“The hospitality industry wins when we work together,” says Jim Bence, President and CEO of the SHHA. “Partnering with Restaurants Canada gives us a stronger voice that can advocate more effectively on behalf of the foodservice and hospitality industry in Saskatchewan. BETTER BUSINESS BUREAU: Do a Digital Declutterhile clearing clutter is an ongoing ritual for many businesses, the

National Cyber Security Alliance (NCSA) and Better Business Bureau (BBB) have teamed up to remind all businesses not to be digital hoarders and to freshen up their online lives. By conducting a digital cleaning and taking care of overdue online maintenance, you

will be safer and more secure.

A digital refresh is a relatively simple process. Here are our top, trouble-free tips

• Keep a clean machine: Ensure all software on internet-connected devices – including PCs, smartphones and tablets – is up to date to reduce risk of infection from malware.

• Lock down your login: Your usernames and passwords are not enough to protect key accounts like email, banking and social media. Begin your cleaning by fortifying your online accounts and enabling the strongest authentication tools available

• Declutter your mobile life: Most of us have apps we no longer use and some that need updating. Delete unused apps and keep others current.

• Do a digital file purge: Perform a good, thorough review of your online files. Tend to your digital records, PCs and phones and any device with storage just as you do for paper files. Remember to clean up your email, and back up important data.

• Own your online presence: Review the privacy and security settings on websites you use to be sure that they remain set to your comfort level for sharing.

RETHINK YOUR SERVICE OFFERING and transform your business

he hotel and hospitality industry in Saskatchewan is

facing a tipping point, particularly in rural communities. Traditional markets and revenue sources are being challenged by economic realities, new policies, and new competition. When facing uncertainty like this it’s natural to consider cutting costs, or, exiting altogether. However, the

opportunity exists in the short term to rethink your service offering and transform your business into one

that aligns with the biggest disruption occurring in the tourism/travel space, the move from an attraction and sightseeing focused model into a transformative experience-based economy. An investment into rethinking your strategy can open new markets and strengthen your existing business. It will provide some clarity as the industry rides out the current storm and set you up for

success as Saskatchewan gets into the game. Here’s some low hanging fruit to get started:

– Become a curator of local experiences: Many travellers today are deciding what to do once they have arrived at a destination rather than booking activities ahead of time. Spend some time learning about local offerings and experiences and engage your customers with suggested experiences. You don’t need data analytics to learn about your customers’ needs or desires; you can simply engage them in a conversation as part of the check-in/ seating process or develop a survey to learn about what experiences would motivate them. If you want to take it to the next level form partnerships with local operators delivering experiences and help craft itineraries for your guests on the fly. The goodwill created by those experiences will flow back to your business as the curator.

Craven Motor InnThe Craven Motor Inn in Craven, SK is nestled in the scenic Qu’appelle Valley along Highway 20. It is a favourite spot for local residents to have a drink, an appetizer or two, and enjoy great company.

“I think we picked a good hotel. The area is growing, there is a lot new housing on this side of the lake and along Saskatchewan Beach and Kanata Valley. We get a lot of people stopping in,” said Wayne McKay.

He and his wife Carolyn bought the hotel in 2002 but first became involved in the hotel/bar industry in 1992 when they invested with partners in a bar at Regina Beach. In 1996, they bought the hotel in Punnichy, SK, and then the Craven Motor Inn in 2002. They ran two hotels for five years, then sold the hotel in Punnichy in 2007 to focus on their business in Craven.

The Craven Motor Inn is a tavern, and patrons must be of legal drinking age to visit the establishment. Along with alcoholic beverages, appetizers and fried foods are available. The hotel’s steak pit is open Thursday through Saturday and is a popular choice for groups looking for fund-raising events.

The business also has six rooms and living quarters that are rented out. All the rooms have been redecorated and modernized. Three have private bathrooms while the other three share a community bathroom. Workers in construction, mining, and other industry are steady renters of the rooms and living quarters.

While the Craven Motor Inn is in close proximity to the hustle and bustle of the annual music festival that takes place just across the highway, the town of Craven itself remains a place for quiet relaxation.

“The festival used to give us more business years ago, but I think it’s more self-confined now,” said McKay.

A member of the Saskatchewan Hotels and Hospitality Association, McKay finds the association to be a valuable ally for smaller business owners like themselves especially when negotiating with government about business concerns. “They are quite pro-business, and they’ve been good to us. We have cheaper pricing for our beer supply and those kinds of things by being part of the group,” he noted. “There are a couple of things I’d like them to finish up on, hopefully that will come.”

ELECTION SEASON HOLDING

he unemployment rate in

Canada fell to 5.4 percent

in May of 2019, the lowest it’s

been since 1976, according to

Statistics Canada. With a 5%

unemployment rate being the

oft-held ideal rate with a perfect

balance between job seekers and

talent hiring, Saskatchewan perhaps trends a bit higher than the

national. April 2019 unemployment rates in Saskatchewan are,

according to Service Canada, as low as 4.4% in Swift Current-

Moose Jaw region and 7.3% in Prince Albert and north region.

Regina’s unemployment rate of 5.7% is actually the second lowest

in the province.

Lack of local and national talent and lack of basic labour in

Saskatchewan have a fairly direct impact on our immigration

trends. It is employers seeking employees outside of our country that create the majority of the numbers in our Saskatchewan Immigrant Nominee Program. Anecdotally speaking it appears that employer direct hires under this program have slowed down, with the numbers now being filled by skilled workers designated ‘in-demand’ in the Province. These occupations currently include such titles as Medical Sonographer, Psychologist and Accounting Technician, amongst a longer list that does change regularly.

Some smaller centres are again feeling frustrated by lack of labour, whether it’s a Cook or a Room Cleaner. Rural areas tend to suffer under national policies and pleas for the Province to intervene have been largely unanswered.

Restaurants Canada “People, Planet & Profit”

1. The restaurant industry contributes 89 billion to the Canadian economy and this is predicted to grow to 100 billion by 2021.

2. The restaurant industry employs 1.2 million people; the 4th largest industry employer in Canada and continues to provide more first-time jobs than any other industry.

3. Operator surveys show that 86% are concerned about labour, 61% about food cost and 55% about shortages,

4. We currently have about 63,000 vacancies, particularly in the “back of house”. There are fewer youth to hire and we cannot find people with the right skills. We count on immigration to fill the gaps.

5. 2017 data shows that for every $10.00 dollars spent, $3.00 goes to wages, $3.59 to food cost, $2.88 to operational costs leaving about $0.53 in profit.

6. Sales of alcoholic beverages and catering which have been in decline are expected to show modest gains from 2020 to 2024.

Sysco Prairies “Millennials / Gen Z – Feeding the Future”

1. Restaurants in Canada have 22 million visits a day.

2. Five generations in the customer base; traditional, boomers, Gen X, Gen Y(Millennials) & Gen Z

3. In Canada, 53% of our population was born after 1980.

4. In Regina, 36.4% of the population are millennials.

5. 41% of millennials eat out a minimum of 2 times a week. 78% of Gen Z eat out 4 times a week.

6. Traditional advertising does not work with millennials – they look to mobile and word of mouth.

ith many great conversations and informative sessions which included amazing guest speakers, and the largest tradeshow in our history, the Saskatchewan Hotel & Hospitality Association/Saskatchewan

Liquor & Gaming Authority’s Hotel, Liquor & Restaurant Conference & Tradeshow was a huge success.

This very well attended one day event was held in Queensbury Centre and the International Trade Centre, EVRAZ Place, Regina on Tuesday May 28th.

The concurrent sessions included “SLGA Information Sessions for Liquor Retailers”, which was comprised of a review of their regulatory services, the Saskatchewan liquor market, guest speakers and a Q & A session.

Guest speaker Roberto Sarjoo, Director, Marketing and Brand Communications, Restaurants Canada presented a look at the state of foodservice provincially and across Canada in his session titled “People, Planet and Profit”

The ever popular “Meet the Regulators” included representatives

from Employment Standards, Occupational Health & Safety, Service Hospitality and SLGA. This was a great opportunity for attendees to ask questions and engage in discussions and share information with these provincial regulators.

Greg Prokopowich, Director, Business Resources, Sysco Prairies presented “Millennials / Gen Z Feeding the Future”. Greg spoke about the transforming industry and what the new generation of diners look for in their food and what their hot buttons are when making dining choices.

Patricia McLeod was back by popular demand with her presentation “Hotel Security – Are You Covered”. Patricia’s session was designed to help businesses understand the risks, trends and best practises associated with cybercrime.

The “Hotel, Liquor & Restaurant Trade Show” is the premier show for the hospitality industry and the 2019 edition did not disappoint. This was our largest

tradeshow ever with 171 booths and over 500 attendees who enjoyed an awesome day of exhibits and delicious food.

Finally, 150 people attended the Delegate Dinner & Lounge at the prestigious AGT Lounge, Mosaic Stadium. After

opening remarks from Minister’s Don Morgan and Gene Makowsky, and a welcome from Restaurants Canada’s Roberto Sarjoo, the delegates enjoyed a mouth-watering meal prepared by the EVRAZ Place staff with entertainment supplied by the Jim Gallagher Duo. The evening wrapped up with the hilarious comedy magician

Matt Gore, aka The Ginger Ninja. Matt’s sharp sense of humour and cheeky character kept the guests rolling in the aisles.

WHY ARE YOU PAYING 117% more for WCB coverage than you need to?

he Saskatchewan hotel industry is classified under the

S23 industrial rate code by the Workers’ Compensation

Board (WCB), this is for purposes of WCB coverage and

premiums. From 2017 to 2018, the hotel industry was

successful in “holding the line” on injuries with only a 2.5%

increase. Total costs associated with those claims, however,

skyrocketed 42.0% in the same year. After a careful analysis

of these claims, it is clear that the vast majority of this

increase in costs is driven by older claims; i.e., claims prior

to 2018 that are still active in 2018 are massively impacting

total costs in 2018.

In addition, legislative changes have certainly impacted

these costs. Saskatchewan introduced the most aggressive

legislation in the country on psychological health and safety

and we are already seeing an increase in claims as well as

costs. But, the real driver of these costs is that claims are not

being managed as well as they were in the past.

As an industry, this failure to adequately manage claims has

cost hoteliers approximately $600,000 in direct costs with

an estimated $2.4 million in indirect costs. Individually, this

means that 27 hoteliers are getting surcharged by WCB an

average of 52% in 2019. With the maximum discount being

30%, this means that 27 hoteliers are paying on average

117% more for WCB coverage in 2019 than they need to

be. If you are a General Manager of a hotel, I would ask you

if there is any other budget line that you (or your ownership)

would be comfortable paying 117% more than what you

need to in today’s economic environment.

You have an opportunity to positively impact that 117%

WHAT’S NEW IN SASKATCHEWAN TOURISM? Food and Beverage Person & Guest Services Representative Trades

his month, changes were made to the Workplace Trainer requirement in both of the tourism trades. Workplace Trainer has learning outcomes in five core areas;

• Planning for training

• Communication

• Training delivery

• Coaching

• Feedback

Originally, apprentices completed the mentor supported on-line program and challenged the emerit national workplace trainer examination. The new upgraded version of Workplace Trainer has learners test within the program, passing each section with 80% before completing. This makes the challenge of the emerit National Workplace Trainer examination redundant as the testing has occurred throughout. There is an alternative delivery model where apprentices very experienced in workplace training can self study the emerit National Workplace Trainer Standard and challenge the emerit National Workplace Trainer examination.

The requirements for trade certification as a Food and Beverage Person are National emerit certified in Food and Beverage Server and Bartender; Service Best or an equivalent customer service program; Serve It Right Saskatchewan (SIRS); WHMIS; Food Safe or equivalent training; Workplace Trainer; Standard First Aid and CPR “A” or better.

The requirements for trade certification as a Guest Services Representative are National emerit certification as a Front Desk Agent and Reservation Sales Agent; Tourism Visitor Information Counsellor performance review; Housekeeping Room Attendant performance review; Service Best or and equivalent customer service program; 100 hours of hotel night audit; Workplace Trainer; WHMIS; Standard First Aid and CPR “A” or better.

The changes to the requirements for workplace trainer will mean that whichever model is chosen, apprentices will be required to demonstrate their knowledge of the learning outcomes by testing only once.

CARBON TAXES HIT WHERE YOU CAN SEE THEM – and where you can’t

askatchewanians are now paying Ottawa’s imposed carbon tax, but that doesn’t mean the fight is over.

Saskatchewan narrowly lost its Court of Appeal challenge of Ottawa’s carbon tax in a split decision. The case will now move to the Supreme Court (the Canadian Taxpayers Federation is intervening in the challenge).

The debate in the court of public opinion is even more heated. While Saskatchewan was once the only province opposing the tax, Alberta, Manitoba, New Brunswick and Ontario are now actively fighting the carbon tax and a number of other provinces are reluctantly going along with the tax only if they’re guaranteed special side deals.

In the meantime, for taxpayers and businesses, the carbon tax bills are rolling in.

Some of the charges are relatively obvious.

The carbon tax adds 4.4 cents a litre to the price of gasoline and that’s set the rise to 11 cents per litre in 2022. For diesel, it’s 5.3 cents per litre rising to 13.4 cents.

SaskEnergy estimates natural gas bills for commercial customers will go up by 17 to 21 per cent this year and annual hikes of about 10 per cent as far as the eye can see

SaskPower estimates power bills will go up by about 2.7 per cent this year and continue to rise.

But the direct costs are only the tip of the iceberg as the carbon tax is going to put pressure on truckers, contractors and suppliers to increase prices for their customers.

As those costs continue to mount, opposition to the carbon tax is increasing and the fight is growing stronger by the day. ■

HOTEL reflects the community

fter spending a few years working at a bank, a friend of Lenna Kozan suggested that she consider a job opportunity at the Regina Inn. Intrigued, she decided to give it a try and

soon found herself in an entirely new career.

“I’m a people person. I enjoy working with peoples so I went over there and started in sales,” she said. “I really enjoyed the hospitality industry and found my niche.”

Today Kozan is the General Manager at the recently-opened Fairfield Inn & Suites by Marriott, which is located on 3915 Albert Street in Regina. It’s the culmination of a career that also involved considerable time at the Delta Hotels by Marriott – including its forerunners: the Renaissance, the Ramada and the Ramada Plaza. She was instrumental in changing the brands without ever leaving the building.

When the opportunity came from the Fairfield, Kozan was up for the challenge and the change. The hotel was constructed in 13 months and it was a whirlwind of activity to get it operational.

“Working with the team, the first thing we did was to order all of the products and amenities for the hotel. We had to get it set up on the proper website and work with contractors to ensure that everything was going to work as expected. Then we hired all of the staff and di the training. Everything was last minute because we could only hire staff a few weeks before the official opening,” said Kozan.

While the hotel was under construction Kozan and the team worked on-site. Construction workers were constantly on the move and they consulted daily to ensure everything was on the right track.

All of these efforts have been worth it. The Fairfield is a two star hotel but is considered a top notch property in that category. The rooms are large and include flat-screen TVs with cable, a microwave and large work desk. The facility also includes an indoor saltwater pool and a 24-hour fitness centre. Recently, the Fairfield celebrated its 1,000 opening worldwide.

Kozan added that the hotel’s free breakfast is extremely popular and usually includes sausage, eggs and fruit. The hotel is also

home to the London Belle, which features contemporary British cuisine. The restaurant combines pub culture with British dining to create a fun, energetic environment for all ages. There’s often live entertainment in the evening.

“When I walk down the hallway and think about what it was like during construction, but knowing what the end result would be, I see that we have really come a long way. Business is good, but we have to build that business and it doesn’t happen overnight,” she said.

Since the official opening – which featured a week of dining events, private celebrations and public festivities – Kozan said the staff have been working on developing a new customer base and encouraging return clients. It helps knowing that the Fairfield has a strong brand and global recognition.

Over the years, she said it is the people that have truly made the difference in her career and have made it so rewarding. She enjoys working with the staff and meeting customers so every day is bit different than the previous one.

Another aspect of the industry that she likes is that hotel s are often a reflection of their communities. If there are large events, hotels are usually involved in some manner. If the economy is strong, Regina is on the map as one of the best destinations for successfully hosting major events.

Through it all, Kozan has helped host Prime Ministers, high performance athletes, well-known musicians and other celebrities. It’s a career like no other.

“It’s really the people that make a difference,” she said. “It’s the people you meet and the people you work with – your work family. I wouldn’t do well sitting or doing the same thing over and over. Every day is a new day and a different day in the industry.” ■
