WINE MENU

Spiaggia is dedicated to presenting our guests with the most authentic

and inspiring wine experience possible. We continuously strive to select

wines that are thought provoking, balanced and socially significant. Our

collection includes compelling wines from archetypical producers with

centuries of history as well as trailblazers sourcing indigenous grapes on

the verge of extinction and utilizing innovative methods.

Wine is a constant companion to all foods savory and sweet, as well as the

perfect addition to life’s significant occasions. If you put yourself in our

capable hands, we promise to find the wine or wines that will delight and

surprise you. Our list is a bit of a maze but do not fret, our wines are

thoughtfully selected to complement each of our guests needs and the

food our chefs passionately present.

CHAMPAGNE

GROWER CHAMPAGNE Farmer Fizz or Grower Champagnes are estate-produced and bottled wines. The same people, who grow the grapes, also vinify and age the wines. They have 100%

control over the product from vine to wine.

CÔTES DES BLANCS Chardonnay is Queen of the Cotes des Blancs and thrives on the chalk soils of these great white slopes. The wines are graceful at their core with a perfume of florals and

all the finesse of a high fashion Parisian.

GROWER CHAMPAGNE

AUBE This is the Wild West of Champagne, an autonomous region where Pinot Noir is

king. The clay limestone soils and warmer climate define the lush wines of this exciting region.

29 M.V. Blanc de Noirs ‘Les Ursules,’ Roses de Jeanne, Cedric Bouchard, Celles-sur-Ource 264

31 M.V. Blanc de Noirs ‘La Parcelle,’ Inflorescence, Cedric Bouchard, Celles-sur-Ource 280

40 M.V. Blanc de Blancs, Extra Brut ‘Vignes de Montgueux,’ Jacques Lassaigne, Montgueux 136

CÔTES DE SÉZANNE Like the Côte des Blancs, the Côtes de Sézanne is mainly planted with Chardonnay

but the soils are what make the wines so very different. The Côtes des Blancs soils are rich in limestone resulting in mineral driven wines while the Cotes de Sezanne is

comprised of clay and silt giving the wines a more voluptuous body and spirit.

PIEMONTE

GATTINARA Gattinara is located to the north of Barolo and Barbaresco in the Alpine foothills.

Although the grape is the same, nebbiolo, the expression is much different. The soils are comprised of volcanic rock instead of clay and limestone resulting in lighter

bodied, highly aromatic wines

397 2007 Gattinara, Antoniolo 100

369 2007 Gattinara ‘Osso San Grato,’ Antoniolo 200 An imposing wine with great structure and piercing mineral backbone

LESSONA & BRAMATERRA Lessona and Bramaterra are two tiny, somewhat unheard of regions to the west of

Gattinara at the foothills of the Alps. The dominate grape is nebbiolo with the secondary grapes being vespolina and croatina. The soils consist of red marine sand

in Lessona and decomposed crystallized volcanic red-brown soils in Bramaterra. The wines are lighter than Barolo or Barbaresco with funky rusticity wrapped in elegance. 382 2008 Bramaterra, Tenuta Sella 120 Nebbiolo & Vespolina

BARBARESCO The area of Barbaresco is divided into three distinct regions based on the townships of Barbaresco, Neive and Treiso. The soil and climate of the three areas are quite

similar to each other which create a greater consistency than is found in the 11 communes of Barolo. It wasn’t until the 1960’s that Barbaresco emerged from the shadows of Barolo because of two inspired Barbaresco vintners, Angelo Gaja and

Bruno Giacosa.

NEIVE This township is known for making some of the most powerful and tannic expressions of Barbaresco. That is not to say that all of these wines are big and brooding but that

certainly does exist. The vineyards of Starderi live up to this reputation whereas Gallina has a harmonious elegance.

309 2004 Barbaresco ‘Gallina,’ La Spinetta 450 Giorgio Rivetti, one of the most innovative vignerons in Italy, is a force of nature. Each wine is as distinct as the soils in which they are grown; the graceful Gallina, the sumptuous Valeirano and the powerful Starderi are the epitome of enlightened Barbaresco.

BARBARESCO

BARBARESCO DI BARBARESCO The wines tend to be relatively light in color and body but well-structured and

aromatic because of the mineral rich soils. The soils are fundamentally clay based with limestone also known as Tortonian. This soil type brings high acidity to the

wines and bright tones of fruit.

BAROLO The region of Barolo can be separated into two distinct regions and soil types. The Serralunga Valley to the west consists of Helvetian soils which are older, less fertile

limestone based soils resulting in bold, intense wines. The Central Valley to the east is made up of Tortonian soil which is fresher containing a greater amount of sand

and limestone with the resulting wines being more perfumed and elegant.

SERRALUNGA VALLEY RODDI

The wines of Roddi are characterized by fine soils, steep slopes and the south/south-west exposure. Utter elegance is achieved in the right hands from this relatively

unknown commune. 865 2005 Barolo ‘Bricco Ambrogio,’ Paolo Scavino (magnum) 464

CASTIGLIONE FALLETTO The wines straddle the line of medium-bodied to powerful. They can possess great weight, with bold fruit and velvety texture. On the whole they tend to be full-bodied

and concentrated with rich aromatics.

BAROLO DI BAROLO The quintessential expression of Barolo is often thought to be a blend of vineyards from across the different townships of Barolo; by blending mulitple vineyard sites you acheive a true sense of Barolo as a whole. The wines are an ethereal blend of

power, elegance, refinement and texture. 488 2003 Barolo, Bartolo Mascarello 440 Bartolo Mascarello was one of Barolo’s great traditionalists. As Decanter magazine said upon his death in 2005, “Bartolo Mascarello never accepted any method of making Barolo other than low yields, long maceration, big oak casks and minimum intervention in the cellar. His dedication to the preservation of Barolo’s true character and above all its longevity, made him the patriarch of traditional Barolo and gained him an international cult following.” The tradition continues under his daughter, Maria Theresa, who like her father, assembles a single Barolo each year from the family’s ancient hilltop vines in Cannubi, San Lorenzo, Rue and Rocche.

CHIANTI Throughout the years the grapes allowed in wines of Chianti have been the cause of

much controversy but at long last Sangiovese has been deemed the all important backbone of this iconic region. The wines can be delicate and floral or dense and

luxurious depending on the style of the winemaker. 501 2007 Chianti Classico, Castello di Ama, Gaiole 234

ROSSO DI TOSCANA During the 19th century the Baron Ricasoli, later the prime minister of Italy, decreed

that Chianti must contain not only Sangiovese but also white varities. This act was seen as the monarchy overstepping its authority and started a rebellion that resulted in a new category of wine, Super Tuscan. The law was later reversed but not before the new category of non-regulated wines found an audience. These wines contain

both new and old world varietals and are made using traditional and modern methods.

BOLGHERI The success of Bolgheri success largely due to a few pioneers. Tenuta San Guido, also

known as Sassacaia, began in the 1940’s but it wasn’t until 1994 that the region was recognized as a designated appellation. Ornellaia, Michele Satta, Le Macchiole and of course Marchesi Antinori followed and invested heavily in this region. The region is primarily planted to cabernet sauvignon and other Bordeaux varietals with just two percent of its 2,500 acres planted to Tuscany’s native sangiovese. The soils are a

plethora of rocky stones at higher elevations and descending to calcareous clay soils and grey clays at lower levels.

BRUNELLO DI MONTALCINO The wines of Montalcino are defined by their elevation, exposition, a mosaic of soil types and cultural phenomenon. The region is small, spanning only 10 miles across

and resembling a large square. There are four major slopes of Montalcino that rise to a peak in the center of the region to an elevation of 2,200 feet above sea level. The vineyards sitting on the lower altitudes generally have younger, looser more active

soils with clay and marine deposits while vineyards on higher altitudes have a smaller active layer consisting of limestone and are moderately stony with sand.

NORTHERN MONTALCINO The altitude in the north ranges from 650 to 1,315 feet above sea level creating a

multitude of micro zones and topographies. In the northwest the vineyards are fewer because of the wooded nature of the area. The soils are more fertile with lime rich mud and active amounts of clay. The cooler weather and susceptibility to fog can be troublesome to grape ripening, resulting in leaner more elegant wines with refined aromatics. To the far north we come to the cru of Montosoli, a rounded hill with altitudes of 650 to 1,150 feet above sea level. The wines have a certain refinement

because of the elevated altitude but are ultimately known for their muscle and depth of fruit. In the northeast the slopes are diverse in soil types; the lower slopes are clay

and marl limestone and ascending up to richer soils of sandstone.

SOUTHEAST MONTALCINO The vineyards are mainly southeast of Montalcino in the original production zone. The altitude ranges from 1,300 to 1,700 feet above sea level where soils are mineral

rich sandstone with lime rich mud. The Brunelli found here are complex, beautifully balanced with elegant aromatics and have great aging potential. Due to the high

altitudes of this region and the severe difference in temperature from day to night, the wines possess a higher acidity level giving them a fresher more vibrant tone and

texture. 611 2005 Brunello di Montalcino, Salvioni 520

SOUTHWEST MONTALCINO With altitudes as low as 430 feet above sea level the southwest is the warmest region in Montalcino therefore producing fuller bodied wines. The soils are heavy in marine

deposits, clay and sand resulting in densely toned wines with a great concentration of fruit. The wines are more approachable upon release containing round tannins,

lavish structure and a modern sensibility. 663 1995 Brunello di Montalcino Riserva, Poggio Antico 250

MONTEFALCO SAGRANTINO Montefalco is at once one of the most exciting emerging, yet ancient, wine regions in Italy with records of its illustrious wines dating back to the 16th century. The jewel of

the region is the ancient indigenous Sagrantino grape which has been found by recent scientific research to contain the most anthocyanins of any grape varietal.

CORSICA The wines of Corsica have remained a relatively well kept secret but over the past few years this small island, which was once under Italian reign, has become the next cult

wine region to discover. Their most important red variety is Nielluccio which is thought to either be a close relative to Sangiovese grape or one in the same. The region of Patrimonio’s limestone slopes are known to produce the islands most

dynamic Nielluccio based wines. 735 2009 Patrimonio Rouge, Domaine d’E Croce, Patrimonio 100 Nielluccio and Grenache

SICILIA

MESSINA Messina is located on the northeastern tip of Sicilia just north of Mount Etna and opposite of the southern tip of Reggio di Calabria on the mainland. Unlike other

regions of Sicilia, Messina has always produced quality wines from Nerello Mascalese, Nerello Cappuccio and Nocera among a handful of other indigenous varietals.

MOUNT ETNA Mount Etna is producing exciting wines from indigenous varietals lead by the red

Nerello Mascalese and white Carricante. The region’s extreme volcanic soils are the foundation for the effusive flavors of these dynamic wines which are comparable to

Pinot Noir and Grenache. 801 2008 Franchetti, Castiglione Passopisciaro 650 Petit Verdot and Cesanese planted on the slopes of Mount Etna by the producer of the cult Super-Tuscan Tenuta di Trinoro.

FRANK CORNELISSEN Cornelissen is absolutely committed to extreme viticulture in one of the most hostile

and challenging vineyards in the world, the very limits of Mount Etna. To say that these wines are organic and biodynamic is really not enough. These wines are made without concession to modern technology and with complete respect for the

terrior. No fertilizers, pesticides, artificial yeasts, fining, filtration, stabilizers, artificial enzymes or sulfur are used in the production of these wines. This is absolute non-interventionist winemaking with one of the latest harvest dates in Europe, which often occurs in late November and sometimes December. These wines are neither for the inexperienced imbiber, nor will they resemble anything you may have previously

experienced, they are unique artful expressions of a place and one man’s passion.

GULFI Since 1996, Vito Catania has produced some of Sicily’s most sought-after wines from

the commune of Chiaramonte Gulfi in the province of Ragusa. Here one finds the true home of the grape Nero d'Avola. The wines are produced from organically

cultivated, dry-farmed, hand-picked vines. Gulfi's quartet of celebrated vineyards is in the hamlet of Pachino, one of hottest areas on the island. Days are roasting hot,

nights are cool and windy, and the area boasts the lowest rainfall on the island. This is where Nero d'Avola thrives and is the variety's classic growing area, having originated

around the environs of the nearby town of Avola.
