CAKE (continued):• Order up tiramisu for dessert, and you’ll receive layers of ladyfingers soaked in espresso liqueur and layered with a custard mixture, topped with choco-late shavings. Ladyfingers, light sweet sponge cakes about four inches long, have been around since the late 1400s, when they were created to celebrate a visit of the King of France to Italy. They are also used in trifles, a layered dessert that incorporates cake, jam, custard, fruit and whipped cream. The trifle is served in a clear glass bowl so that all the beautiful layers can be seen. • Bundt cakes have been around since 1950, when the fluted tubular pan was created by the founder of the kitchenware manufacturer Nordic. A group of Jewish women in Minneapolis approached David Dahlquist, asking him to design a pan based on an old European kugelhopf mold brought from the old country. The name “Bundt” was derived from the German word bund, which translates “community” or “gathering of people.” • German chocolate cake, that rich chocolate layer cake with coconut pecan filling topped with choco-late frosting and more coconut, has nothing to do with Germany or its inhabitants. Back in 1852, an employee of the Walter Baker chocolate company developed a milder, sweeter baking chocolate than the bittersweet chocolate that was commonly used. That employee, an Englishman, was named Sam German, and the Baker company named the inven-tion after him.

• Do you know where the pound cake gets its name? Developed in England during the 1700s, the recipe called for a pound each of butter, eggs, flour and sugar. Maybe it could also mean how much you’ll gain from eating this delicious confection!

• Smith Island, Maryland, located in Chesapeake Bay, is home to that state’s official cake, aptly named Smith Island Cake. The recipe dates back to the late 1600s and consists of 10 to 12 thin layers of yellow cake sandwiched together with chocolate fudge icing.

• A dome-shaped cake filled with mousse and/or custard is known as a bombe, from the French word meaning domed or rounded. The cake is flipped from its dome-shaped mold onto a plate, then cov-ered with a layer of chocolate or meringue.

• What’s full of spices, frequently “re-gifted” and the subject of comedians’ jokes? That’s right, a fruitcake! Although this dense cake dates back to Roman times, its popularity increased greatly in the 1800s, when it became the preferred choice at Christmas gatherings and weddings. Loaded with glazed dried fruit, raisins and nuts, fruitcakes are often soaked in brandy, whiskey or liqueur.

Cleaning Windows Inside and Out

Q: I’m pretty regular about cleaning my home’s windows on the inside, but as a new homeowner I’ve never cleaned the outside of the windows, and they’re getting pretty grungy. The first floor shouldn’t be a problem, but what about the upstairs windows? Also, is there a faster way to clean than with paper towels and spray cleaner? -- Brad in Knoxville, Tenn.

A: “Fast” depends on just how grungy the outside of the windows are, but I can get you to “effective and efficient” which will make the task of cleaning windows easier. On a side note, spring and fall are great times to clean the outside windows, if you don’t do them more frequently. These are typically the seasons when screens are replaced with storm windows and vice versa, and while dual screen-storm windows are more common, it’s still a good guideline to fol-low.First, inspect all your home’s windows to make sure they’re undamaged, including storm windows and screens. Next, remove screens or storm windows and place them on a clean, sunny spot of the drive-way or walkway to be cleaned.Take a look at the home’s windows from the inside. Newer double-hung windows can be unhooked and either lifted out of the frame or swung inward to access the outside of the glass. Older windows are sometimes held in the frame by a thin strip of wood, which should be carefully removed. Then the bottom sash can be lifted out of the frame. Being able to swing out or remove the bottom sash makes cleaning the outside of upstairs windows easier and much safer than climbing a ladder to reach them.To clean windows, brush away loose dust and debris first. Then fill a bucket with warm water and mild detergent. Place a waterproof liner (like a tarp or sheet of plastic) underneath the window to protect the floor and walls. Wear rubber gloves to keep your hands clean and less pruney. Dunk a clean sponge in the soapy water and wash the windowpanes, repeat-ing as necessary to remove built-up dirt. Once the window is clean, grab a lint-free cloth, a chamois or for a really old-school way to dry a window, some newspaper. Dry the glass completely; for your fi-nal pass, wipe back and forth, then straight up and down, to minimize streaks.I usually start cleaning the outside of windows first. Yes, it grunges up your water and sponge faster, but it also gets the hard work out of the way first. I can clean the sponge and refill the bucket for the inside of the windows.Finally, clean the screens and storm windows that were set aside, brushing away cobwebs and loose dirt before using soap and water. Close up all of the windows and reset either the screens or storm win-dows, ready for the next season.

HOME TIP: Avoid drying windows in direct sun-light, as the glass is more likely to streak.

• The first boxed cake mix in the United States ap-peared around 1930, distributed by a molasses com-pany, O. Duff and Sons. Seven other companies fol-lowed suit over the next 15 years. Betty Crocker and Pillsbury didn’t hit the grocer’s shelves until the late 1940s. • When Charles and Diana wed in 1981, they had 27 wedding cakes. Their official wedding cake was pre-pared by the head baker of the Naval Armed Forces, a process that took 14 weeks. Two identical cakes were made, in the event one might be damaged. The bottom layer required 12 hours to bake. • A roulade is what most of us know as a jelly roll, a sponge cake that is filled with buttercream, fruit, lemon curd, whipped cream or ganache, then rolled up. At Christmas, you might see a Buche de Noel, or Yule Log, a roulade filled with chocolate buttercream and frosted with yet more chocolate, then decorated with chocolate branches to resemble a tree log.

• In 1832, Prince Metternich of Austria was expect-ing important guests for dinner and gave his head chef the task of creating something new and sump-tuous for dessert. The only trouble was that the chef was sick, leaving a 16-year-old apprentice in charge. Young Franz Sacher set to work inventing a chocolate sponge cake cut into three layers, filled with apricot jam and frosted with a rich icing. The dessert became known as Sachertorte and endures today as Vienna’s most famous specialty, with its recipe a safely guard-ed secret.

• A 1906 romance novel was the source of the name of the lady Baltimore cake. The story, set in post-Civil War Charleston, mentioned the title character serving the dessert, a creation of tall white cake layers with a filling of chopped nuts and candied fruits, frosted with boiled white icing. The actual recipe was developed by two Baltimore women who opened a tea room af-ter the success of the novel. These days, this cake is a popular one for Southern weddings.

The Douglas County Libraries 2012 Spring Youth Reading Program, “Carry Out a Good Book!” is now open for registration and runs through March 28. Readers ages 12 and under can register for the program online at DouglasCountyLibraries.org, then visit any library to pick up a log for recording time spent reading.

Once a child has recorded 12 hours of reading or being read to, he or she may return the log to any library location and select a free book to take home. Completion will also entitle the reader to a 7-inch cheese pizza and 16-ounce fountain drink from Mama Lisa’s Little Italy Pizzeria in Castle Pines.

Reading logs must be returned to the library on or before March 28. Prizes are not guaranteed and are only available while supplies last.

Maxed Out on Your IRA and 401(K)? What's the Next Step? If you are contributing the maximum amount to your 401(k) or oth-

er employer-sponsored retirement plan each year, that’s good. And if you’re also “maxing out” on your Individual Retire-ment Account (IRA) annually, that’s even better. But what then? If you’re already fully funding your 401(k) and IRA, can you put away even more for retirement? Should you?

The answer to this last question is almost certainly “yes” — because you could spend a long time in retirement. How long? Consider these statistics from the Society of Actuaries:

A man who’s reached age 65 in good health has a 50% chance of living 20 more years and a 25% chance of living to age 92. A 65-year-old woman has a 50% chance of living to age 88 and a 25% chance of living to 94. There’s a 50% chance that at least one member of a 65-year-old couple will live to 92 — and there’s a 25% chance at least one of them will reach age 97.

Because you have a reasonably good chance of spending two, or even three, decades in retirement, you clearly need to accumulate substantial financial resources before you retire. So, if you consist-ently reach the contribution limits on your 401(k) and IRA, you’re making a smart move, as both these vehicles offer the potential for tax-deferred earnings and a variety of investment choices. But if you can still afford to put away more money, or if your income level prevents you from contributing to a Roth IRA, you may want to look at these possibilities:

Life Insurance Retirement Plan — A Life Insurance Retirement Plan (LIRP) is essentially a life insurance policy that can potential-ly help you generate tax-advantaged income during your retirement years. Until you begin taking withdrawals, the cash value of your policy has the potential to grow tax deferred. Then, when you retire, you can take tax-free payouts from your principal. (After the entire principal is paid, payouts are treated as loans against the contract.) And your beneficiaries will receive the balance of the death benefit income tax free, minus any loans or loan interest. Annuities — You might find that a fixed annuity can be an appro-priate way to supplement your retirement income. Like a LIRP, a fixed annuity’s earnings have the potential to grow on a tax-deferred basis. Also, fixed annuities generally offer some type of guaranteed rate of return over the life of the annuity contract. And perhaps most importantly, you can structure your annuity to provide you with an income stream you can’t outlive. (Keep in mind, though, that an-nuities are generally more appropriate for investors who are at least 45 years old.)

While you can certainly get some key benefits from a LIRP and a fixed annuity, you need to fully understand all aspects of these in-vestment vehicles and make sure they are suitable for your situation and individual needs. Consequently, before investing, consult with a financial professional.

But don’t wait too long. By preparing for your retirement well ahead of time, you can boost your chances of enjoying the type of “golden years” lifestyle that you’ve envisioned.

¥ I’m sure you’ve seen photos of those picturesque cov-ered bridges. It seems that they would have provided a welcome haven for people driving buggies caught out in the rain. You may be surprised to learn, though, that the bridges weren’t designed with a roof for the comfort of travelers. Being made of wood in an era before protective sealants, the bridges themselves needed to be protected from the elements.

¥ Most frogs lay their eggs in the water; that way, when the tadpoles hatch they are already in their element. The red-eyed tree frog, however, protects its eggs from aquatic predators by attaching its eggs to the underside of leaves

that hang out over a body of water. Once the eggs hatch, the tadpoles fall into the water.

¥ The next time you travel to the United Kingdom, if you visit the university towns of Cambridge or Oxford, you should keep off the grass. Professors are the only ones al-lowed to walk on most of the green swards in those towns.

¥ In ancient Rome, it was widely believed that holding in gas could cause a person to catch a disease or become poisoned. This was such a concern to public health that Emperor Claudius went so far as to pass a law making it legal to fart at banquets.
