As we wind down summer, Atlantic City presents its in water boat show whichprovides the best deals on boats all year. The boats will be on display at FarleyMarina adjacent to the Golden Nugget.

There are very big things happening in the boat business in South Jersey. EggHarbor Yachts has been quietly acquiring other boat manufactures like Silvertonand expanding their facilities in Egg Harbor City. Once production ramps up, Eggharbor Yachts plans to employ as many as two hundred area residents.

I discussed the new facility and manufacturing process with the company’s owner,Ira Trocki. Ira is very passionate about building boats and is excited about the newtechnology they use which puts them so far ahead of every other boat builder. EggHarbor Yachts uses new vacuum infused resin composite technology the same wayBoeing does on its planes. It’s lighter, 7 times stronger and 18 times stiffer thantraditional fiberglass methods. Make sure to check out their boats at the show.Egg Harbor Yachts plans on building three hundred boats a year in virtually everysize.

Steamed sea bass in hot beer and ginger limesauce

IngredientsFor the sea bass2.5cm/1in piece fresh root ginger, peeledand cut into long thin strips (juilienne)1 spring onion, sliced into long strips1 whole wild sea bass (about 550g/1¼lb),de-scaled, gutted, cleaned and skin scoredseveral times with a sharp knife1 tbsp Shaoxing rice wine or dry sherryFor the hot ginger lime and beer sauce2 tbsp groundnut oil1 tbsp freshly grated root ginger1 lime, zest only1 tbsp Shaoxing rice wine or dry sherry330ml/11½fl oz Chinese beer or other lightbeer2 tbsp light soy sauce1 spring onion, sliced into long strips(juilienne)1 large handful fresh coriander, roughlychoppedsteamed wild basmati rice, to serve

Preparation method1.For the sea bass, sprinkle half of theginger and spring onion strips across thefish, or tuck some into the scores made inthe skin. Place the remaining ginger andspring onion into the fish cavity.

2.Transfer the fish to a heatproof plate ordish and pour the rice wine over. Place theplate into a large bamboo steamer and cover.Place the bamboo steamer on top of a pan ofboiling water (making sure the water doesnot touch the base of the steamer). Steam thefish for 8-10 minutes (depending on the sizeof the fish), or until the fish is cookedthrough (the flesh should flake easily whenpoked with chopsticks). Turn off the heatand leave the fish in the steamer to rest.

3.For the sauce, heat a wok until smokingand add the oil. Add the grated ginger, stir-frying for a few seconds. Stir in the limezest, followed by the beer and soy sauce. Assoon as the liquid comes to the boil, add thespring onions and coriander, then removefrom the heat.

Today I grabbed a bottle of Hocus Pocus,a wheat beer brewed by Magic Hat Brew-ing Company in South Burlington, Ver-mont. This was sent to me by the breweryto check out. This beer was previouslyretired but was brought out of retirementby popular vote. As the winner, it will nowbe included in Magic Hat's Variety Pack.Magic Hat worked with voter registrationorganization Headcount to not only selectthis winner but also increase voter regis-tration as we approach the Presidentialelections in November.

The label is pretty whimsical, featuring abee that seems to be mesmerized by aswirling circular pattern below him. OK.Let's check this out.

Wheat and dough and a little lemon aroma,not too strong. Lemon and citrus flavorsstand out at the beginning. Hoppy, lightlybitter to even a touch of sourness. Thereis a little wheat but not so much along withhint of crackers and toast.

Good carbonation provides a nice little nipat the palate. Fairly thin but pretty refresh-ing.

When admiring or desiring supercars or exotics it’s sometimes easy to forget avery iconic specimen….the Pantera.

Classic, exotic and typically every teenage boys love at some point. Case inpoint: A friend of mines stepfather owned a Pantera. I remember being 13years old and visiting his house with my parents. I’m not sure the purpose ofthe visit because my parents didn’t typically socialize with my buddies momand stepdad. Nonetheless, there we were, visiting and somehow the Panterawas part of that visit. I remember entering the garage, lit by a couple offluorescents in a standard Colonial style house. So we aren’t talking brightlylit, white walls, white floor showroom atmosphere. No, this was more like the“car hasn’t been out in awhile, so here it is under the car cover”. But, Iremember the anticipation as my friend’s stepdad peeled back the dusty carcover to reveal my first in person meeting with what at the time was a verycool and badass car. At least in my 1983 13 year old mind. The car as Iremember was silver and looked as though it needed a good detailing. Myfather conversed for a bit with my buddies stepdad while I just slobbered off tothe side. I remember the radical shape, the curved sharp lines, those extremelycool looking wheels. It was foreign. It was wild. And it wasn’t mine. So ofcourse I simmered the idea of maybe my dad would be buying this fantasticmachine. No such luck, but that encounter stays with me 29 years later. Andthe early 70’s Pantera’s still stir that same feeling within me.

DeTomaso produced the Pantera from 1971 to 1991. Designed by Americandesigner Tom Tjaarda, the Pantera was to replace the Mangusta. Pantera isthe Italian word for panther. The Pantera was designed using a monocoquedesign, which according to records is the first time DeTomaso used thistechnique.

The car debuted in Modena in March of 1970 and was featured at the NewYork Motor Show a few weeks later. It took about a year for the car to make itto actual customers driveways and production at the time was set at 3 per day.Which, for that time, was considered a big deal.

The interior of the Pantera was fairly well received at the time. Seats were ofthe sports car variety, wrapping the driver and passenger in exotic comfort.Leg room reportedly wasn’t bad as long as you weren’t taller than about 6feet. Since the Pantera was to target U.S. consumers as well, some optionswere considered “special” in Europe. Doors that buzz when opened, airconditioning and electric windows.

The 71 Pantera’s were built with Ford 351’s producing 330 horsepower. Themotors had decent torque curves compared to other locally built competitors.The motors were mated to a ZF transaxle which was also used in theMangusta. Power assisted four wheel discs and rack and pinion steering werestandard. Zero to 60 times were reported at 5.5 seconds.

In late 1971 Ford started importing Panteras to the American market. Thefirst handful of these imports are known for the push button door handles andhand built bodies. About 1,000 reached the U.S. that year. But, they becameknown for poor quality. Modifications in 72 included 4 bolt main 351Cleveland’s with reduced compression (to address emissions standards) andmore radical cam timing to offset the compression reductions. Factory exhaustheaders were also included in this year.

Ford ceased importing the Pantera in 1975. DeTomaso continued to producePantera’s until 1991. Performance continued to improve and offeringsincluded the GT5 and GT5S. Pantera’s continued to sport Ford V8’s andreached horsepower ratings around 500. By 1991 about 7,000 Pantera’s werebuilt. DeTomaso planned on a comeback in 2011 but has since been troubledwith financial issues and scandal. We may never see a Pantera comeback, butwe can always dream like any wide-eyed 13 year old visiting a classic Pantherat rest.
