Blueberry Squares
Ingredients:
3 cups all purpose flour (450 grams)
1 cup granulated sugar
1 teaspoon baking powder
1 cup chilled unsalted butter (8 ounces)
1 whole egg
1/4 teaspoon salt
1 lemon both zest and juice
4 cups fresh ripe blueberries
1/2 cup granulated sugar
4 teaspoons cornstarch
Directions:
1. Pre-heat oven to 375 degrees and grease a 9x13 glass baking
dish. In a medium bowl, mix together the flour, sugar, baking
powder, salt and lemon zest. Using a pastry cutter or fork cut the
butter into the flour mixture along with the egg.
2. Texture of the dough should be moist crumbs. Using half of the
dough crumbs, press them into the bottom of your baking dish to
form a layer.
3. In a separate mixing bowl prepare the blueberries. Take sugar,
cornstarch, lemon juice and carefully work in the blueberries un-
til coated well. Spread the blueberries mixture evenly over the
bottom dough then top the blueberries with the remaining dough
crumbs.
4. Place into preheated oven and bake for approximately 35-45
minutes or until slightly brown and deliciously bubbly. Cool and
let stand for a 20 minutes before cutting. Enjoy!
