• Food safety hazards can enter the food continuum at any stage

• Significant increase of illnesses caused by infected food in both developed and developing countries.

• Adequate control throughout is essential• Food safety is a joint responsibility of all

players in the food continuum• Requires their combined efforts

• In addition to the health hazards, food- borne illnesses can give rise to considerable economic costs: – medical treatment, – absence from work, – insurance payments, and – legal compensation

• Certain countries have developed national standards for the supply of safe food
