There are also two new fun and original activities to experience: a flight simulator for lots of thrills and a new excursion between Paris and Disneyland ® . The restaurant of a top hotel gets a makeover and among other things opens a new type of bar. Finally, a renowned events venue in the east of Paris is revamped blending tradition and modernity. Accommodation // The hotel Pradey, all the refinement of a Parisian address Le Pradley with its discreet facade has just opened in a quiet little street in the heart of Paris, between the Louvre and Opéra. The 28 bedrooms and suites are tastefully decorated with a high level of comfort. Interior decorator Vincent Bastie has paid particular attention to the materials used: the zinc of the Parisian rooftops, the stone of Haussmanian facades, the natural oak of wood panelling, and the waxed concrete of the Louvre … the hotel therefore encapsulates and distills distinctive elements of this district of Paris. An entire floor is characterized by creations from the maison Hermès, which is in evidence from floor to ceiling, with for example a screen in straw marquetry, a ceiling lamp in the famous silk ‘head square’, or a sofa in saddle stitched leather. Four unique suites offer comfort and understated luxury. Two other surprising suites have been decorated by Chantal Thomass and stamped with her vision of Paris. One takes opera and ballet as its theme, with ballerina’s tutu, satin ribbons, Empire dressing table and a bathroom decorated in pink. The other is quite different and is decorated on the theme of the cabaret, all in red, a symbol of glamour and femininity for the designer, with heavy wall hangings, a huge heart, comfortable wing chair, etc. Additional services are available to guests: selected glass of wine, gourmet chocolates, branded champagne, VIP access to the neighbouring spa ‘After the rain’. The new decoration carries the hallmark of the Napoléon era as does the rest of this neighbourhood. Architect Alexandra Danan has in fact taken the Empire style as a theme which is reflected in the marble, soft velvet, decor of gold leaf, copper and silver, Venetian lights and even the mirrors on the ceilings. The overall look is that of Napoleonic luxury and grandeur brought up to date and mixing historic references with contemporary technology. Silhouettes on the walls of each bedroom by the artist Vuk Vidor are a reference to French painting. The 35 bedrooms and 5 suites offer the highest level of comfort and amenities: king size bed, iPod station, Nespresso machine and Japanese toilets. Finally, a lounge bar and a terrace with a view of the Arc de triomphe round off the facilities at the Hôtel Champs Élysées Mac Mahon, which is certainly the new luxurious address to try in the Champs-Élysées district. Events venues //The new look of Les Salons de l’Aveyron at BercyA new bright contemporary feel and warm atmosphere for this space, which mixes grey colours with touches of

beautiful luminous orange and warm honey. The new identity of the Salons was entrusted to interior decorator

Andrés Atela and the agency La Suite 314 for the comfortable, ergonomic and designer 900 chairs and furniture,

The management of the Salons seeks to encourage client fidelity by offering an exemplary price quality ratio,

Paris loves organic. The capital is going green: eating organic, staying at a hotel which integratesenvironmentally-friendly principles into its design and management, and buying sustainable goods is possiblein Paris, even in the most swish places. Some top restaurants have joined the trend offering upscale meals orsimply a Sunday morning brunch. Not to be missed.

Good and organic restaurants//You don’t have to travel to the other side of Paris to find a good organic restaurant. Today, the Left and Right

Bank of the French capital have a varied choice of friendly places that will satisfy all gourmet tastes. In its 16

Parisian restaurants, the popular Cojean offers fresh and well-balanced menus that put the emphasis on organic

fruit and vegetables. In an up-and-coming district, Le Kloog Café, a delightful cafe-restaurant decorated in

acid colours, has opened. A Norwegian cook prepares light and creative dishes. Sésame on the canal Saint-Martin

is a perfect culinary stopping off point for walkers with its flavoursome New York style bagels and brownies.

Nearby, the wonderful Zuzu’s petals, an ‘eco-responsible organic restaurant-caterer’, makes soup, eggs baked with

cream, burgers and other simple and delicious dishes. More central, near to the Grands Boulevards, Bioboa, a

restaurant cum delicatessen, serves inventive cooking in a trendy atmosphere. At Vert Midi, the ecological

concept of the restaurant rests on recycled wood. Customers are invited to make up their own salads and desserts

with seasonal and local produce. After a cultural visit to the Centre Pompidou, Le Potager du Marais with its

friendly atmosphere and onion soup will satisfy hungry appetites in the Marais district. Here in the heart of one

of the busiest shopping streets in the district, the ample menu of the Passage obligé will appeal to meat eaters

and vegetarians. Fans of modern and organic gastronomic cuisine, head to the 1st arrondissement. On the outskirts

of the Palais-Royal, chef Caroll Sinclair cooks up refined dishes at La Table d’hôte du Palais-Royal, and near to

Place Vendôme, the luxurious Hôtel Lotti**** serves a succulent 100% organic menu in the hushed atmosphere

of its restaurant and its patio.

There’s more gastronomical fare, on the Left Bank at the typically Parisian brasserie of the legendary Lutetia****.Fish and seafood delight the most demanding connoisseurs in an art deco setting designed by Slavik and Sonia

Rykiel. Still on the Left Bank, in the relaxed atmosphere of Place de la Contrescarpe, Les 5 saveurs d’Anada is

organic, vegan, vegetarian and macrobiotic. Seitan, tofu, tempeh … are key ingredients here in cooking that is

original and generous. Finally, to relax after a busy day, back to the Right Bank, to Villa Spicy in the 8th

arrondissement. This quiet and cosy place has a ‘detox organic’ menu based on organic ingredients and

antioxidants, which can be followed by a massage with essential oils.

popular and cosmopolitan 10th arrondissement, is Le Local bio, an offbeat place where you can drink a

coffee while reading a newspaper, connect to Internet with free Wi-Fi, have a salad or sandwich lunch, or do

some shopping. Nearer to the centre, in an old workshop in a quiet street of the 11th arrondissement, Soyais an organic canteen, which serves light and flavoursome vegetarian cooking at lunchtime and in the evening,

plus brunch on Sunday.

The lively Grands Boulevards and Opéra district are full of great little cafe-restaurants that are frequented

as much by Parisians working in the area as visitors to the city. One such example is Lafayette Organic, on

the ground floor of Galeries Lafayette. With its gougères, open sandwiches and 100% organic soups, it is an

ideal place to stop off at for a gourmet snack inside or on the terrace after shopping. Or there is Exki which

serves sandwiches, vegetables, desserts and other cold and hot dishes all day long. Fans of the Cretan diet can

also boost their vitamin intake at Lémoni Café with steamed vegetables, wholewheat cereals, and low-fat dairy

products. Hamburger and pizza fans are also catered for. Tucked away in the delightful Passage Choiseul, Bioburgerserves delicious hamburgers, salads and quiches on three floors. As for the organic and eco-responsible GreenPizz,it makes delicious wholewheat pizzas with generous toppings on request. For those with a sweet tooth, a place

to go is the Bio Sphère Café, where Sylvie, formerly at Ladurée and Angelina, serves scrumptious cakes and

pastries and gluten-free crepes. The typically French tradition of the ‘aperitif’ also takes on an organic flavour.

Several wine bars have made it a speciality, like Le Verre volé, near to the canal Saint-Martin, where excellent

organic wines accompany appetizing little dishes. Or there is Le Porte-Pot, on the other side of the Seine,

whose wonderful wines and regional specialities delight newcomers and connoisseurs. Not forgetting Racines,the wine merchant in Passage des Panoramas, the oldest covered passageway in Paris. And a final detour to

the heights of Belleville, where Le Chapeau melon (more a restaurant than a bistro) associates organic wine

with deliciously inventive cooking.

Organic sunday brunches//Originating from the United States, brunch (a contraction of ‘breakfast’ and ‘brunch’) appeared in France in the

80s. In Paris, its relaxed and informal atmosphere has made it popular on Sunday, an enjoyable way of getting

together with family and friends. A number of organic restaurants have made it a not-to-be-missed weekly event.

Several luxury hotels have also put organic brunches on their menus to the delight of guests looking for tranquillity

and refinement. At the Hôtel de Sers*****, for example, in the 8th arrondissement, chef Christophe Hay, an

ardent supporter of organic products, concocts an upscale brunch that includes Viennese pastries, bagels, pancakes,

Ecologically responsible hotels//Although small in number in Paris, hotels wanting to limit the impact of their activity on the environment are

beginning to gain a following. The basic principles of sustainable development are gradually being applied:

energy saving (low consumption lighting, solar panels, etc.), water saving (recuperation of rain water, water

economy taps, etc.) limitation and sorting of waste, use of biodegradable cleaning products, paint without

solvents, natural materials, etc. Representative of this trend, the Hôtel Jardin de Cluny*** can pride itself on

being one of the few establishments to have obtained the Ecolabel, the only official European ecological

label, for its commitment to ecotourism. It informs its clients of the organic breakfast products that it offers,

like the Hôtel Ducs de Bourgogne****, which serves a buffet breakfast with organic and fair-trade products.

In a more budget category, the Solar Hôtel**, near to Place Denfert-Rochereau, offers comfortable well-equipped

guest rooms at a flat rate of €69, including organic breakfast, as well as the loan of bicycles to get around

in an eco-responsible way. An offer which authorizes it to claim, (with the approval of the WWF), the status

of being the first ecological and budget hotel in the capital. The latest arrival on the eco-scene, the Himaticopened last spring in the Bastille district. Created by the famous designer Matali Crasset, this urban eco hotel,

which makes extensive use of wood and rubber, provides a modern and trendy stopover. Mixing the codes

of town and country, its 42 rooms, called ‘cabins’, are furnished with modular elements which give several

possibilities for using the space. Still in the 11th arrondissement, the Hôtel Gabriel*** devotes its services to the

well-being and generation of the body through sleep and healthy eating. The first ‘detox’ hotel in the capital

has contributed to the protection of the environment by using a naturally biogradable material for its refined

and pared down interior space. As for the oh so elegant Hidden Hôtel, a short stroll from the Arc de Triomphe,

it also works in favour of the environment by using noble and natural materials, that have not been treated

and which have often been hand-made: slate, coconut, wood, linen, leather, etc.

Organic shopping//Organic shopping is easy in Paris with all arrondissements having their share of independent or affiliated stores of

organic products. These stores, like the capital’s numerous minimarkets – which also sell organic products – also

sell a wide range of foodstuffs and non-foodstuffs.

Naturalia is perhaps the most immediately apparent to passers-by as there is at least one in every arrondissement

of Paris. This brand sells organic and natural products, from bakery products to cooked meals and face and

body care products. But there are also two cooperative networks of 100% organic shops in France. Founded in 1946,

La Vie Claire was a pioneer in organic trade. It has 11 sales points in Paris, that sell around 1,200 products.

Biocoop has 11 stores as well and was created at the end of the 70s to support organic farming. It imposes strict

rules on the products that it stocks: no GMOs, no PVC, no texture agents, a minimum of packaging, priority

to French produce to limit transportation, etc. Paris has more than 10 Biocoops, to which a new concept has been

added, Lémo, specializing in gourmet organic foodstuffs. Bio c’Bon first opened in the 15th arrondissement.

Specializing in fresh products and groceries, this new brand opened another three stores here, including one

of the biggest organic supermarkets and has now opened stores in the 11th and 17th arrondissements. More

recently, Les Nouveaux Robinson, has just opened a sales outlet right in the heart of Paris, offering a wide range

of organic and ecological products. Alongside the big names in organic, several independent shopkeepers have

succeeded in establishing themselves by emphasizing their particular speciality. Touch of Bio, opposite the Ile

Saint-Louis, is one of these. Claiming to have the widest choice in the capital, this ‘organic grocery’ puts the

emphasis on original products of irreproachable quality, mostly from small producers; it suggests ideas for recipes,

organizes tastings, etc.

The same local policy and conviviality can be found at Hédonie, in the Saint-Sulpice district. Here you can order

baskets of organic fruit and vegetables, taste new flavours, have your coffee beans ground … As for Paris Bio, this

grocer, in the 2nd and 14th arrondissements, has become a landmark in Paris in terms of seasonal fruit and

vegetables, and also dairy products. Finally, not to be missed and one of the most popular places for shopping

with all generations of Parisians is the market. Two days per week in general, one market, even several, takes

place in each arrondissement of Paris. All of them have several stallholders who sell organic products. On one day

at the weekend, three markets are entirely devoted to organic produce: Batignolles and Brancusi on Saturday,

Raspail on Sunday.

The Beaubourg district, culture and avant-garde An extension of Les Halles, the Beaubourg district expresses the modern side of Paris whilst at the same time

retaining all the charm of bygone Paris, with its narrow streets and former mansion houses. The Centre Pompidou,which gives shape to the whole of the west of the arrondissement, was built in the 70s. Characterized by tubular

architecture, designed by Renzo Piano and Richard Rodgers, it houses one of Europe’s most dynamic museums

of modern art and attracts more than three million visitors every year. It opens onto a ‘piazza’, a huge square

always full of activity, and its southern part is home to the Atelier Brancusi, a major 20th-century sculptor. Attached

to the Centre, it is a faithful reconstitution of the studio that this Romanian sculptor occupied in Montparnasse,

in the 15th arrondissement. The district boasts many landmark historic monuments, like the Tour Saint-Jacques,a vestige of flamboyant Gothic architecture of the former church Saint-Jacques-de-la-Boucherie and an important

stage on the road to Compostella, and the Maison de Jacques Cœur, one of the oldest houses in Paris, or the

Eglise Saint-Merri, which houses the relics of the hermit Médéric, the patron saint of the Right Bank. An emblem

of the capital, the Hôtel de Ville (Paris City Hall), situated on the former Place de Grève, is regularly open to visitors.

As elsewhere in the capital, there is a huge choice of accommodation to choose from. Particularly welcoming,

The Saint-Paul district Bordered in the north by rue Saint-Antoine and by the river Seine in the south, the Saint-Paul district has undergone

important changes in order to improve the flow of traffic. Nevertheless, it has retained its particular character and

benefits from the ever lively rue Saint-Antoine and rue de Rivoli, both busy shopping streets. The Église Saint-Gervais-Saint-Protais, situated behind the City Hall, was originally reserved for the corporation of ... wine merchants!

It boasts a magnificent 16th-century vault. Built in 1627 (Richelieu laid the first stone), the Église Saint-Paul,situated behind the City Hall, has a striking monumental facade. Its 50-metre-high cupola is decorated with an

amazing work, in trompe l’œil. The district has conserved wonderful mansion houses like the Hôtel de Beauvais –

one of the finest buildings in the district – whose courtyard can be visited, and the Hôtel de Sens, which, with its

fortified appearance, is one of the last references to medieval civil Parisian architecture. Also in the district, Le

Mémorial de la Shoah comprises a museum and a documentation centre to understand the past and enlighten the

future. Those who like to hunt around for bargains or simply explore will enjoy strolling around the myriad

of little pedestrian courtyards in the Village Saint-Paul, where more than 80 designers, antique dealers, and

gallery owners have their stores. For fans of art and cultural visits, the Maison européenne de la photographie(MEP), is a major centre for contemporary photographic art; it houses an exhibition centre, a library and a video

library with films on or by photographers. More offbeat, the Musée de la Magie et de l’Automate, in the village Saint-

Paul, has a unique collection of amazing objects. Great for a family visit! More to the east, the Pavillon del’Arsenal, traces the history of Parisian architecture from ancient times to today in a pedagogical and highly-

documented way.

In terms of accommodation, there is a huge amount of choice in the district … For film goers, the Hôtel du 7e Art**,with its guest rooms featuring exposed beams, takes the inspiration for its decoration from great films and actors.

Paris’s two islands Two of the jewels of the French capital, these two islands are a reminder of how much the Seine is its heart and

soul. Linked by its northern bank to the Parisian ‘continent’ by the bridges au Change, Notre-Dame et d’Arcole,the

Île de la Cité was the home of the Gallic tribe the Parisii, which populated Paris 250 years BC. It is especially

the site on which was built 850 years or so ago the Cathedral of Notre-Dame, one of the most visited monuments

in France. The two towers may also be visited. 422 steps lead to the southern tower from which a wonderful

view can be had of the entire building. The treasury of the cathedral, situated after the southern transept, on

the right of the building, houses Christ’s Crown of Thorns and a fragment of the Cross. The archaeological crypt,situated under the square in front of the cathedral, is one of the largest in Europe and presents exceptional Gallo-

Roman remains. Built in 1962 at the end of the Île de la Cité, the Mémorial des martyrs de la déportation,a huge hexagonal crypt, is a touching memorial. Smaller in size, the Île Saint-Louis is home to many wonderful

mansion houses with fine interior courtyards. They are relaxing places to stroll during the day. The Eglise Saint-Louis-en-l’Île, built in 1644, contains interesting paintings on wood as well as a remarkable monochrome golden

bas-relief. In the same street, the gallery L’Île aux images shows exhibitions of contemporary works but also prints

and lithographs by the greatest artists from 1850 to 1950, from Honoré Daumier to Félix Nadar.

However, there are few accommodation options on the two islands. Interesting in its immediate proximity to the

Cathedral of Notre-Dame, and its situation within the Hôtel-Dieu, the Hospitel Hôtel-Dieu has 14 rooms of which

two are reserved for disabled people. On the main street of the Île Saint-Louis, the Hôtel du Jeu de Paume****also has a wonderful location. This elegant establishment has understated elegant design with tastefully appointed

guest rooms with exposed beams, as well as two spacious apartments facing away from the street.

Of the restaurants on the Saint-Louis, Nos Ancêtres Les Gaulois is certainly the most original: meals are served

here in a typically jovial and informal Gallic spirit! Finally, before leaving the island, a visit to the famous ice-cream

maker Berthillon is de rigueur. The famous ice-creams have been delighting Parisians for more than 50 years and

there is also a wonderful tea room for gourmet snacks.

The heart of the Marais Straddling two arrondissements, it is in the 4th that the spirit of the Marais is more apparent. It is delightful to

wander through the numerous narrow streets of this busy shopping district full of interesting things. The old

Jewish quarter of Paris has retained its soul, culture, and … delicious food: traditional restaurants falafel sellers

and pastry makers abound in rue des Rosiers … The not-to-be-missed Place des Vosges, one of the finest squares

in Paris, is reason enough to stroll in the area. Here, at number 6 is the house of Victor Hugo, which shows a

number of souvenirs and documents relating to the life of this French writer and politician. The Hôtel de Sullyis the headquarters of the Centre des monuments nationaux and at the bottom of its garden there is a little-

known passageway leading to Place des Vosges. The heritage library, housed in the main building, has retained

its magnificent 17th-century wood decor. The Marais is also and above all a favourite place to shop. Open on

Sunday, there are boutiques galore. Particularly lively, the rue des Francs-Bourgeois features many much-loved

brands. And for a trendy shopping outing, there is Madeva. The designer is at the boutique every weekend!

And why not shop for a romantic or saucy gift at Passage du désir, which has turned the sex toy into a cult object

… Practical for those wanting to stop off to check their emails or use the Internet, the Web 46 is a friendly cyber

cafe. This ever lively district is full of places for an evening out. Le Double Fond, a cafe-theatre for magic, stages

a dozen or so shows all on the theme of magic and its mysteries, in the afternoon for children, or early evening

for the public in general. And for going on later to a restaurant, there is lots of choice. Between Place des Vosges

and Place de la Bastille, the brasserie Bofinger, established in 1864, is one of the finest brasseries in Paris.

Specialities from the Alsace and seafood platters are served in a magnificent belle époque decor. There is also

the Petit Bofinger, in the same spirit, in the building opposite. Also in the Bastille district, Chez Clément offers

a cosy setting with a choice of romantic alcoves or large tables d’hôtes. A short stroll away, the Hippopotamus Bastilleis the place to go for fans of red meat and opens until 3am in the morning. In the delightful Place Sainte-

Catherine, the Soprano serves Mediterranean cuisine with flavours of Italy and Sicily.

As for accommodation, there is a lot to choose from. For groups or visitors on a small budget, the MIJE (Maisons

internationales de la jeunesse et des étudiants) runs three establishments for young people at low prices, all

within close proximity to each other in authentic aristocratic 17th century residences. In the east of the district,

the Hôtel de la Herse d’Or* welcomes guests in a superb 16th-century residence, with cosy furnishings. More

central, the Hôtel de la Place des Vosges** offers beautifully decorated guest rooms with antique furniture,

Venetian mirrors and marble. Guest rooms with open beams are full of character and charm. Close to the bustling

shopping streets, the Hôtel Turenne le Marais***, housed in a beautiful Haussmann building, offers spacious

and luminous cosy guest rooms. A haven of peace in one of the liveliest districts of Paris.

Central booking agencies for the best ratesThe golden rule for respecting a budget, however tight, is planning ahead. The earlier you get in touch with central

Hotels and accommodation, offers for small budgetsThe capital’s 1,472 hotels offer a total capacity of more than 153,000 beds. You are therefore sure of finding a

Restaurants and caterers, good menus at good pricesParisian restaurants and caterers, like private-hire venues, can come up with competitive prices for menus

and packages for groups and business travellers. The brasserie Julien (Flo group), a few steps from the

Grands Boulevards, is an unusual venue with its emblematic glass roof and its original 1900s decor. Inexpensive

menus for groups (from 10 people) include foie gras and profiteroles, with a menu at €31 per person (starter/main

course or main course/dessert, wine and water). Interesting due to its situation and proximity to the Palais

des Congrès de Paris – Viparis, the Auberge Dab offers all-inclusive menus for €36 per person. Le Grand B, close

to the Palais Garnier opera house, serves starter/main course or main course/dessert menus starting at

€16.90 around a traditional but original concept: the food – fish, fruit, poultry, beef, etc. – is roasted on a

spit overseen by the chef. In the same spirit, the famous Bouillon Chartier remains faithful to the principles it had

when it first opened in 1896: guaranteeing copious and good family cooking for the best price/quality ratio.

Food is served in a warm and friendly atmosphere (dishes from €8.50 to €13.50) every day until 10pm. On

the catering scene, La Table est Mise tailors its service according to your budget; the company, which caters

for major events like the Solidays festival (4,000 meals), also offers upmarket catering (sit-down gastronomic

dinner) as well as solutions for more technical, low budget requests, such as catering for buffets behind the

scenes for models during catwalk shows. For these kinds of events, the caterer offers packages at between

€22 and €24 per person. The caterer Honoré James and its team of passionate cooks puts the accent on

creativity and flavours and can tailor buffets to the budgets of clients.

Honoré James is the exclusive caterer of the Compagnie des bateaux à roue and has special links with

places like the Palais Brongniart, the Centre Georges Pompidou and the Cité des sciences.

Philippe Renard has been the chef of the hotel Lutetia**** kitchens for twentyyears. It is under his leadership that the reputation of the starred restaurant,the brasserie and all the restaurant areas of the mythical Left Bank hotel havespread beyond the district of Saint-Germain-des-Prés. A lively discussion witha chef passionate and dedicated to his ‘house’.

You started work at the Lutetia twenty years ago. Tell us about this institution from a public and a culinary pointof view.P. R. : The Lutetia is a veritable haven of peace! It is a grand hotel, but no paparazzi here: MPs, senators,

politicians, the literary world, the show business world … all mix very well. There is a harmonious equilibrium

between regular local customers and tourists, between artists and politicians. Around 30% of the clientele is

made up of regular customers, I know most of them, I like to go and chat to them in the evening when I have

more time, I ask them what they would like, I suggest newly-arrived products to them, they like to follow

these up. In the kitchen, there is a team of 49 people at the stove and making cakes and pastries, and 20

devoted just to washing-up. Seven days a week, from 7am to midnight, all year long! 1,200 meals are served

every day, and more than 300 recipes are created every year.

Everything is centralized in the 500 m² of kitchen on the lower ground floor, in distinct divisions. The order

goes as follows: the brasserie kitchen that of the room service, that of the menu, and finally that of the banquets.

The same organization applies to the pantry, those who make savoury things, further on hot things, and at

the end sweet things. I encourage all my team to have a real sense of responsibility for what they do, and

all of them right down to the youngest apprentices must be proud of their creations.

How would you describe French cuisine in general, and yours in particular?P. R. : Generous, authentic, creative, demanding … it is the fruit of a great deal of observation and listening.

I am very proud that it was here, in the salons of the Lutetia, that the ‘gastronomic meal of the French’ was

declared of Unesco heritage status on 16 November 2010, just a year ago.

I have been lucky enough to travel the world for years promoting French gastronomy: in Japan, Thailand, Spain,

Italy, the United States (as far as Alaska!), Malta, Morocco, Tunisia, etc.

France has the reputation of being a holiday destination where you eat well and drink well. The world envies our

gastronomy, our monuments, our wines. And it is so easy to discover these! Thanks to the TGV, from Paris you

can discover bouillabaisse in Marseille, the vineyards of Bordeaux or those of the Côtes du Rhône in less than

3 hours.

Tourists want to eat French, they want to live French – just look at the Cordon Bleu school that receives visitors

from all over the world for an immersion course in how to cook and especially understand our lifestyle.

After so much travelling, what influence does this experience have on your cuisine?P. R. : In particular, these trips have enabled me to have a better knowledge of products, which are the basis

of everything. My cooking is very centred on France and Europe. I am extremely attentive to the traceability

of products. Strict hygiene standards demand this of course, but also my customers who feel secure in what

they eat.

How after twenty years do you continue to develop and be innovative?P. R. : Several years ago, I began to use cereals other than rice and semolina to vary and also to be able to

overcome certain allergies, gluten in particular; I introduced kamut, spelt wheat, fonio, millet, etc.

Where do your products come from?P. R. : My favourite products are shellfish, seafood, fish. They are French, with a few exceptions: the tiger prawns,

which I receive alive, come from David Hervé in Marennes, between September and November; they live in fresh

water, they move and oxygenate the fine oyster which is called ‘la pousse en Claire n°2. I source another type of

prawn from Brittany, but there the season is short. Out of season, I have two types of prawns that come from

other places: one, organic, from Madagascar, the other, very fine, for the seafood platters, comes from

Mozambique. Both are foreign products but I know them well, and have seen where they are bred and fished.

The traceability is total, due to a single importer. Another example: salmon, I have been to Alaska, I was able to

appreciate the fishing methods and conditions, they are excellent fish. I also have every confidence in organic

Scottish salmon … organic Irish salmon, it comes from Connemara, I have been there – and incidentally, there is

a great golf course just next to it, to enjoy two pleasures at the same time!

In France, we are lucky to be surrounded by wonderful seas, beginning with Brittany: Douarnenez, Concarneau,

Saint-Brieuc … I go down as far as Saint-Jean de Luz where there are lovely sardines, anchovies. Further down,

the Mediterranean, rockfish – but unfortunately it is more and more difficult to find them. Going back up to the

English Channel and to the beginning of the North Sea, cod is the fish.

My lobsters are very fine, born in Norway and raised in Brittany. Did you know that a 500-gramme lobster is

already 5-years-old? And that an oyster n°2 is 8-years-old!

We fatten them up naturally, like the scallops.

The seaweeds come from Roscoff, directly by the postal system in polystyrene boxes, and they keep for a month

with just a little salt.

Every summer, I make 500 kg of gherkins, from a French producer: we prepare them in vinegar with thyme,

tarragon, pepper, garlic, carrots and small onions. We preserve them and serve them through the year at all the

tables at the Lutetia.

And nearer to us, in the Paris region?P. R : Of course, I have products that come from here, from Fontainebleau for example. I am a faithful client of

Thierry Riant, market gardener at Carrières sur Seine: he supplies me with seasonal vegetables. At the moment,

he has a wonderful butternut squash.

Do you have any requests for special dishes, for vegetarians for example?P. R : Of course! For more than 10 years now, you have been able to eat vegetarian at the Lutetia: in the

brasserie, the gastronomic restaurant, during events in reception rooms … I introduced a children’s menu and

even a ‘doggie bowl’: green beans, rice, beef, olive oil to give the coat a shine, and especially no salt or spice,

the same bowl every day, the dogs love it, they wag their tail!

With experience you therefore know your clients well and their expectations.P. R : It’s true that we don’t eat the same all year, when it rains for example; it is the clients who make our cuisine

what it is. They want spicy and savoury in summer, fatty things in winter. The weather plays a part on human

behaviour and that translates to eating. I offer tasty little dishes: sauerkraut, cassoulet pot au feu, all those

dishes that no one cooks at home anymore and which people are pleased to find on the menu. Over time,

recipes have become lighter. For example, we haven’t been putting flour into blanquette or bœuf bourguignon

for 10 years now. Why? Because the basic product is better and better so it would be pointless to overload it.

What local suppliers do you use for the Lutetia or for yourself?P. R : La Grande Épicerie de Paris, of course, a neighbour of the Lutetia, is a real grocery where I find spices

and olive oil. At the end of the street, the butcher David Fontaine is a real traditional butcher; his shop is always
