INTRODUCTION TO POSTHARVEST MAINTENANCE OF CELLULAR INTEGRITY WORKSHOP PAPERS A workshop on Postharvest Maintenance of Cellular Integrity was held at the United States Army Natick Research and Development Command (NARADCOM) at Natick, Massachusetts on October 18 and 19, 1978. This workshop was sponsored by the Committee on Food Stability of the National Research Council. It was designed to (1) ex- plore the problems presently associated with delivering fresh fruits and vegetables, especially salad items, to the military and (2) to review recent and ongoing research and development on the maintenance of postharvest integrity, especially as it might relate to these problems and (3) to propose research aimed at solving the problems. Short review papers presented by four active research workers in postharvest physiology and biochemistry were a key part of the work- shop. The organizers of the symposium felt that these four papers would be useful to a wider audience. The editor of the Journal of Food Biochemistry agreed and somewhat modified versions of the four papers are printed below. A technical report will be issued in mid-1979. This report will in- clude an additional paper by D. E. Westcott outlining the present status of research and development on fresh fruits and vegetables at NARADCOM, modified versions of the four review papers printed here and a summary of the discussions and research recommendations of the workshop.
