Younger years: The 6ft 7in Glaswegian began his working life as a lumberjack and was working as a painter on the Forth Bridge just before landing his first acting job.

Acting career: Although starting life as a labourer, Rory feels acting is his call and is willing to do anything to succeed, including returning to lumberjack work in 2009 to pay the bills in between acting work.

Infamous TV roles: Rory’s still widely recognisable from his advertising campaign with Scott’s Porage Oats in which he was the hunky Scotsman in the white vest and kilt. These three ladies working as successful chefs are proving they’ve got what it takes to make it in a man’s world. Words by COLLEEN REID

A woman’s

esley started her life in the world of art and attended Art College in Dundee before a

swift change of career landed her in the kitchen. Having always had

a passion for cooking it seemed like the perfect vocation for Lesley, however, she was the last person to realise this. ‘Having discovered that my health didn’t enjoy ceramic dust, I needed to make a living doing something I’d always enjoyed and shown a flair for,’ she explains. She started her first professional chef job in The Albannach in 1990 and has been there ever since. Having to learn along the way with no training was challenging, however, it gave Lesley a real opportunity to take her past hospitality background and transfer it into presentation and content of her menus and food. ‘Beginning this career so late has been challenging but once again maturity comes with many overlooked advantages,’ she says. ‘Credibility as an untrained chef and as a woman in a male-dominated industry was also difficult to achieve in the early days.’ Now with several years behind her

Tart:4oz savoury short crust pastry // 10oz white crab meat (preferably hand-prepared, as chunky is good) // 1 beaten egg // 1fl.oz double cream // wedge of lemon squeezed // 1 tsp dry sherry // minimal seasoning of sea salt and freshly ground black pepper

Avocado Dressing:1 ripe but still bright green avocado // juice of a lime // 3 each of basil and baby spinach leaves // pinch of sea salt and caster sugar // approx 1/2 fl.oz best quality extra virgin olive oil or avocado oil // 1 garlic clove roughly chopped // optional ¼ chopped chilli or dash of Tabasco, but spiciness not required

LESELY’S CRAB TART WITH AVOCADO DRESSING (Ser ves 4)

Method: At Gas Mark 4, blind bake 4x4’ diameter buttered fluted tart cases, with removable bases if possible, for 15 minutes. Gently mix together all of the ingredients, keeping the crab meat as lumpy and identifiable as possible. Fill cases, ensuring no mixture spills over. Bake for 20 minutes. Rest the tarts at room temperature, they’re best eaten just warm, not hot. Whiz these together, adding the oil gradually and last, to judge the preferred amount. The mixture should be stiff, smooth and very bright green. Serve the tarts immediately, with a generous ‘dod’ of the dressing alongside.

as an established chef, Lesley and co-chef Colin have seen the accolades roll in starting with The Good Food Guide and The Macallan Taste of Scotland Award in 1998. Since then, The Albannach kitchen has received a Michelin Star in 2009 and various other awards for the hotel itself. Working in a male-dominated industry can be daunting for many women but Lesley is confident times are changing and women are becoming increasingly successful in professional cooking. ‘It’s become quite a trendy career choice of late and it’s attracting men and women of high calibre,’ she says. ‘Encouraging talent at an early stage in adult life, and presenting the option to learn to cook will make this look like an appealing choice of career.’The Albannach Hotel, Baddidarroch, Lochinver, Sutherland, IV27 4LP, 01571 844407, www.thealbannach.co.uk

he Coll hotel in the Hebrides was inherited as a wedding gift from Julie’s parents-in-

law in 1984 and now along with her husband Kevin, she has transformed the hotel into an award-winning business. ‘The beginning could hardly have been less glamorous,’ she remembers. ‘The hotel didn’t have much of a kitchen at the time: it was painted bright orange, there was a big wooden table in the corner, some rickety old shelves, a stove and a little cooker. ‘Taking ownership of the hotel presented an opportunity and we took it with both hands to make it a very successful business.’ Julie has always been passionate about food but didn’t imagine a career as a chef. ‘I was handing round the bread baskets to guests at my parents’ hotel in Eastbourne almost as soon as I was able to walk,’ she says. ‘I’d worked in hotels since leaving school and done every other job in the trade after finishing college with a diploma in business studies. ‘But I’d never cookedprofessionally until we took over the Coll Hotel. Kev’s dad gave me one of Mrs Beeton’s cookery books and I was thrown in at the deep end!’

After studying various cookbooks and mastering the basics, Julie began experimenting with raw ingredients from Coll and testing her recipes on locals and friends, thriving on positive feedback. Not only did Julie’s confidence in cooking grow but as did the reputation of the Coll Hotel. ‘We were voted Scotland’s top islands hotel for two years in succession in 2008 and 2009 and National Restaurant of the Year,’ she says. ‘In 2010 I also won Gold Medals for Real Food and Hospitality in the Scottish Hotel Awards. Our guests are fond of good, locally sourced food.’ Being at the top of a male dominated career can be challenging but the Coll Hotel finds its kitchen abundant with female chefs. ‘As

a general rule I’ve found women more focused and hard working,’ Julie says. ‘Men tend to palm things off and can be full of themselves; women get things done! ‘There are lots of good women chefs around and plenty of opportunities for them to shine.’ Julie feels role models will encourage women to get involved with cooking on a professional level and believes a lot of credit is due to chefs like Jamie Oliver for keeping it simple: ‘Some chefs try to make themselves look good by creating tricky dishes but he makes it easy for people to cook.’

Ingredients:Fresh pasta (or make your own) // 750g lobsters // parmesan shavings // cream // lightly dressed salad

JULIE’S LOBSTER SPAGHETTI

Stock:1 onion // 2x cloves of garlic // slosh of olive oil // slug of brandy & sweet sherry // 2x tsp tomato puree // salt & pepper

Method: Plunge the lobsters into a pot of boiling water, bring back to the boil and cook for 5 minutes. To make the stock, put the lobster shells & head meat in a large heavy bottomed pan with the onion, garlic and slosh of olive oil. Place over a medium heat until you smell the

sweet aroma of lobster. At this point add the brandy, sweet sherry, tomato puree and boiling water to just cover the shells. Add salt and pepper, bring to the boil then down to a simmer for 20 minutes. Take off the heat and leave to brew for a couple of hours. Check the seasoning, then strain to be left with just the liquid. Put the stock in a pan and reduce until you are left with a rich aromatic sauce, add a little cream and check the seasoning again. Turn off the heat and add the lobster, just to warm through. Cook the spaghetti for a couple of minutes in salted boiling water. Add the spaghetti to the pan and move it until it is coated in the lobster sauce. Serve with Parmesan shavings and a lightly dressed salad.

’ve definitely always had a passion for food,’ she says. ‘Eating it if not cooking it! I

was brought up in the North East of England and my mother was a good, plain cook who instilled the basics in me. She’s still turning out tasty dishes at the age of 80.’ With her father working in airport fire services in Uganda and Nepal, Jo frequently holidayed in Africa and Asia giving her grounding in international cuisine and an appreciation of delicious meals made from local, simple ingredients. Whilst managing the Aurora Hotel in Windsor for 16 years, Jo’s enjoyment of cooking flared as she encountered chefs and kitchens on a daily basis. ‘I enjoyed cooking at home for my husband Dave and our daughter as well as for guests at dinner parties,’ she explains. ‘I regard myself as a cook rather than a chef. No airs and graces here!’ After seeing the tremendous potential of a boutique hotel overlooking Tobermory Bay, Dave and Jo designed and built Highland Cottage to their own specifications. ‘It seemed a natural move for me to take on the kitchen role rather than employ a chef,’ she says. ‘The menus

have become more sophisticated over the years and I concentrate on making dishes look as good as they taste. It’s important to work hard and like the people you’re serving.’ Jo’s attention to detail and Dave’s great hosting skills have seen Highland Cottage win numerous awards. ‘We’re very proud of our Thistle Award – Scotland’s Tourism “Oscar” – also of our AA Red Stars and 2 Rosettes, our EatScotland Silver and VisitScotland Gold awards. Dave’s front-of-house skills [he was voted ‘host with the most’ in the 2009 Scottish Hotel of the Year Awards] have helped a lot too.’ As a successful female chef, Jo feels more women are surfacing than ever before: ‘Women are now seen to be successful and recognised in this role. It’s already happening and will naturally evolve as women chefs “make it”. There are after all, fewer and fewer bastions of male dominance!’

JO’S CHOCOLATE AND ORANGE

TRUFFLE TORTE (Ser ves 4-6)

Ingredients:450gms/1lb dark chocolate (70% cocoa solids) // 570mls/1pint double cream // 5 tbs Cointreau or Grand Marnier liqueur // 4 tbs golden syrup // finely grated zest of 2 oranges

Method: Line a 23cm spring-form cake tin with greaseproof paper and brush the sides with oil. Put the chocolate, liqueur, syrup and orange zest into a large bowl and place over a pan of water, simmering over a low heat. Leave to melt gently over the heat. Once melted, leave to cool for approx 10 minutes. Whip the cream in a separate bowl to a floppy stage where it’s not too firm and still slightly runny. Fold the cream carefully into the chocolate - a little at a time. When completely blended in, spoon into the prepared cake tin. Cover with cling film and chill overnight in the fridge.

Fashion Awards to celebrate all things fashion and Scottish. Held at the Glasgow Science Centre, the unique venue played host to the likes of judges Brian Duffy, President of Ralph Lauren Europe, Dolly Jones, Editor of Vogue.com, designer Amanda Wakely and guests including Paolo Nutini, Diana Vickers and Gabriella Cilmi. Hosted by MTV Europe presenter Laura Whitmore, the glitzy ceremony was followed by an exclusive Gala VIP dinner, Swarovski catwalk show and exclusive after show party, finishing off a fabulous evening perfectly.

After hearing about the competition through her modelling agency Stolen, the six-foot-one-inch schoolgirl from Dunfermline was shocked to even make the first stage of the competition. ‘I was so happy, I didn’t expect it at all,’ Terri says. ‘I didn’t even expect to get into the top 20.’ The fifth-year student at Woodmill High School has always had a keen interest in modelling and is very happy to finally be achieving her dream. ‘I’ve wanted to be a model since I was little,’ Terri says. ‘I always thought it looked really glamorous. In reality, it’s not actually as glamorous as I thought but it’s still really cool. My mum loves me modelling and my dad is very protective of me so he is wary but very proud of me for doing so well in the competition.’ Terri describes her shock as she won her award: ‘I just remember hearing my name then I hugged the other girls and started to shake. I couldn’t breathe and just knew I had to make a speech but didn’t know what to say. ‘I think I said “amazing” about six times, I didn’t know what else to say. I was so happy!’ The Scottish New Face award, sponsored by fashion website Boohoo.com boasts an impressive prize haul for the catwalk beauty. Terri won a modelling campaign with Boohoo.com along with £1000 to spend on the site. She also won the use of a Smart car for the year, £250 worth of Swarovski jewellery, free haircare courtesy of Toni & Guy plus Bobbi Brown make-up lessons. After scooping Scotland’s New Face 2010 and a busy schedule to look forward to, Terri’s dream career is truly off to a model start.

Jett, 22, from Edinburgh, who has just completed her BA (Hons) degree in Fashion Design was shortlisted for the award along with three other Scottish graduates. ‘It’s amazing,’ she says. ‘The Scottish Fashion Awards have given me a great opportunity that wouldn’t have normally been available. ‘It’s really good for those who deserve it to have recognition. There’s a lot of talent coming out of Scotland and it’s hard work trying to make a name for yourself.’ The category was sponsored by top British high street brand Marks & Spencer with a prize of a one-month’s internship with their design team in London. Not only did Marks & Spencer sponsor the award, but they also set the graduates a task. To compete for the honour, the finalists had to design an evening dress suitable for the broad spectrum of the high street store’s customers. It was Jett’s classic design that caught the eye of the judges and she is delighted that her dress will soon be available to buy across the UK. The young graduate always knew she wanted to study art at high school but wasn’t quite sure what she wanted to pursue as a career. ‘I wasn’t quite sure what I wanted to do,’ Jett remembers. ‘After high school I studied an art foundation course at Edinburgh’s Telford College. By then I knew I wanted to design and decided to go on and do my degree.’ She describes her designs as edgy but chic whilst being very modern and wearable. Jett names Mark Fast as an influence: ‘I love his work; it’s really contemporary and wearable yet edgy too. I also like the Scottish designer Christopher Kane. ‘It takes a lot of hard work and dedication to get to where they are. Holly Fulton was my tutor at college and she’s been a great inspiration

seeing how hard she’s worked and how successful she’s become.’ Jett’s placement with Marks & Spencer is set to take place before the end of the summer and they’ll be working on making her chosen evening dress fit in with the Autumn/Winter Limited Collection range. ‘This placement is my next big project,’ she says. ‘But I will keep working within the industry and see what other opportunities arise. ‘To make it you need to have the talent, a unique look and be doing something in the industry that nobody else is.’ Jett says her future aim is to gain as much experience as possible in the industry to further her career. ‘I’d like to eventually have my own label,’ she says. ‘But I’ll need a lot of experience. You need a lot of drive with a lot of hard work.’

Unexpectedly the 32-year-old originally from Edinburgh, but now living in London, had originally planned to become a vet. ‘It was a tenuous route,’ Holly remembers. ‘As I wanted to become a vet, I didn’t switch to art until later in the day.’ I went on to study at the Edinburgh College of Art and then The Royal College of Art in London.’ The young designer was surprised to be nominated again: ‘I hadn’t anticipated that but I was obviously delighted to win again. It’s a lot of recognition not just for me but also for everyone in the team. ‘As I now teach at the Edinburgh College of Art I see a lot of talented graduates out there, including Jett who I taught. It’s encouraging with our strong Scottish textile heritage.’ Holly notes her mother as a big influence in her designs: ‘Mum always had issues of Vogue from the 1960s onwards around and I would always be messing about with her vintage pieces. ‘Vivienne Westwood is a key influence as she appeals to people, as is Galiano’s work in the early 90s. ‘As a new designer I try to be flamboyant and get my work out there but am completely committed to producing something women can wear.’ Ensuring her collection is wearable is a priority for Holly in her designs: ‘I would describe my designs as a ready to wear interpretation of

couture with an emphasis on attention to detail. ‘I prefer a clean, simple modern silhouette with a strong emphasis on graphics.’ And it’s this use of graphics in her designs that makes Holly’s range so distinctive. Not only does she design her own collections but Holly also has a range of accessories out with Swarovski and a diffusion range with fashion website ASOS.com. Holly’s future looks bright with so much recognition already and she says she is committed to making it work as a business: ‘I want to make it a viable business as it can be easy to be creative and not think about the longevity. ‘We are getting more industry connections and I’d love to push my collections abroad more. We are currently stocked in 14 stores in New York and have seen our turnover treble this season compared to the last one.’ Currently working on her Spring Summer 2011 collection, which she is massively excited about, the young designer says she prefers these collections as she gets to use more colour. Holly says she also has some more collaborations coming out later this year and interestingly reveals she is exploring other avenues that are not ‘strictly fashion based’ while remaining tight-lipped on the details. Definitely a young designer to watch.

atholic Nun Sr Placida has spent the past two decades in

Africa creating and maintaining a community-based organisation called the Live With Hope Centre. The centre is a HIV integrated project in the slum areas of Kericho and offers both medical help and community support for HIV victims in the impoverished area. ‘My main work is in the administration and coordination of the four departments,’ Sr Placida explains. ‘They are the home based care and HIV clinic, HIV prevention programmes, voluntary counselling and testing and finally orphans and vulnerable children.’ Sr Placida’s aim is to bring hope to people who live in devastating circumstances in the extremely deprived area.‘The housing is pathetic and the signs of poverty and unemployment are evident everywhere you look,’ Sr Placida says. ‘This leads to many other problems such as prostitution, the brewing and selling of illegal alcohol, crime, hopelessness, and of course, high incidences of HIV infection.’ The area is still struggling after suffering tribal unrest following the elections in 2007. Although starting to die down over the last three years,

violence and danger are feared to escalate again with the coming elections in 2011 unless crucial reconciliation links between tribes are established. ‘This past year has seen a rise in the number of violent crimes,’ Sr Placida says. ‘In December 2009, our friend, Fr. Gerry Roche, was brutally murdered by a group of hired thugs in his own home in the neighbouring parish. It gave us all a terrible shock and has made us more security-conscious.’ The Glasgow born missionary believes most of the areas problems are due to political corruption in Kenya. She often sees projects starting but failing due to donor money not being used in the way intended. She feels the Live With Hope Centre has succeeded thanks to showing exactly where funding is being used. ‘It is vital that we try to let people know that is it possible to run a project with accountability, transparency, efficiency and integrity,’ Sr Placida says. ‘The funds we are

given must be scrupulously accounted for and all the programmes monitored and evaluated so that the donor funding is put to the best use.’ Despite the centre having support from family, friends and school children, Live With Hope now receives funding from the U.S. President’s Emergency Plan for Aids Relief (PEPFAR), which has allowed expansion of the departments within the centre. This expansion is vital to the people of Kericho and a recent project shows exactly why. ‘We recently opened a transitional care and training centre for HIV positive adolescents who were having problems at home,’ Sr Placida explains. ‘We took in 10 boys and girls who were quite weak and sickly. After only one month of good care, the change in these kids was absolutely amazing! ‘They had all put on weight, looked happy and healthy, they also learned the importance of taking their anti-retroviral drugs frequently and, best of all, they felt loved and accepted. The happy faces you see when you visit the home gives you a feeling that money just can’t buy.’

Sr. Placida and the whole voluntary team at the Live With Hope Centre continue their efforts to reduce the prevalence rate of HIV and creating programmes in which the people help themselves out of poverty.

rt teacher Frances had often made jewellery as a hobby but

the idea to turn that into a business came after accompanying her husband on a two-year engineering consultancy assignment in India. Staying in the capital of Rajasthan, Frances and her husband encountered the incredible poverty that much of India faces amidst the vibrant and colourful backdrop of Jaipur. And Frances noted it was the women and children in particular that seemed to suffer the most, despite legislation in place which makes it illegal to discriminate against women.‘I saw countless women living under incredible hardship,’ Frances recalls. ‘Many women work in jobs where heavy labour is required – they work on the roads, on construction sites and as gardeners in parks.’ Frances remembers watching women bringing their young children and even babies to a construction site near to where she lived: ‘They arrived very early in the morning and proceeded to lay out a breakfast which they had prepared before they left their homes that morning. ‘They would then start a full day’s work carrying heavy cement, bricks and water. When the day’s work was over the women would wash all the clothes for their families and begin to cook dinner. All this done while they watched their young children.’

It was this suffering that motivated Frances to do something to help the women and their difficult situation. ‘Jaipur has a long history of jewellery making, going back for centuries,’ Frances says. ‘And when I arrived and saw the wonderful stones, silver and jewellery, I knew that other women, if they saw it, would love it too.’ Frances found a new factory building on the outskirts of Jaipur that had policies in place to ensure workers were treated fairly. This factory was the start of her ethical jewellery business. She also met a businessman, Mr Aziz, who held her beliefs of fair workers close to his own heart. ‘The workers are paid a fair wage, given a good lunch every day, time off and most important for me, the factory runs a small school for the worker’s children,’ Frances explains. ‘They are also very skilled craftsmen and I was able to work closely with them on our “Designer” and “Classic” Collections. ‘And apart from being very creative, Mr Aziz is a devout Muslim and provides destitute Muslim women with shelter, food and schooling for their children in return for the work that they do.’ Alongside her business, Frances is also a strong supporter of a charity called Bal Rashmi Society and donates money from sales to the cause. The charity, founded by Alice Garg, provides women in India with the tools to help themselves. Frances was impressed by the charity’s ongoing projects such as the rehabilitation of ponds in desert villages. The ponds in the villages often dry up meaning the women and

FRANCES BAKER young girls must walk for miles to find a source of clean water which can be dangerous. ‘Bal Rashmi gives the women food whilst they work long hours every day in 45 degree heat to desalt and deepen their ponds and plant trees to stop erosion and reduce evaporation. ‘The strong sense of community spirit engendered by working together has benefited the villagers in many other ways.’ Frances’ designer range of jewellery has been received well in Scotland and she has plans to expand the business in the near future: ‘We are thrilled with the positive comments we’ve had. ‘We’ve now expanded from internet sales and are proud to be selling in the Gleneagles Hotel, the Scottish Antique and Arts Centre in Doune, and are working on finding new outlets in Scotland.’

Leone in recent years, Joyce has been working with Oxfam in Gaza since May this year. As partnership advisor with Oxfam, she finds herself working with local partner organisations to improve their financial and purchasing systems. She also helps to improve communications and supports them through their planning processes to ensure they are effective. ‘For so many people in so many countries in the world they don’t have the access to opportunity,’ Joyce explains why she devotes her life to humanitarian issues. ‘They don’t have the chance to demand their rights - they often don’t know that they have rights to demand. ‘And despite an abundance of natural resources and availability of productive land and seas, they don’t

JOyCE DAlGlIESH have the wherewithal to benefit from it. Access to education and health facilities that we take for granted are just not available to so many. ‘Instead of sitting at home and reading about these issues and discussing them over dinner with friends I decided that I wanted to try and do something more constructive - and here I am.’ Working in Gaza has been an eye-opener for Joyce. The war-torn country has been struggling under blockade from the Western Bank for four years. Israel introduced the blockade in order to isolate militant group Hamas and force them to stop militant fire. However, with only basic humanitarian supplies being allowed in and practically no exports allowed out, the economy has been crippled and is regressing. ‘We often hear the sound of gunfire and the deep boom of explosions which happens on a fairly regular basis along the strip,’ Joyce says. ‘What surprises me is the complete lack of a reaction from the people that I’m with because, for them, it’s such a normal occurrence and already I can

see how my reaction is changing even in such a short space of time. ‘It’s amazing how quickly we become accustomed to a new reality.’ Oxfam plays an important part in the redevelopment of Gaza by improving drinking water, establishing sewage networks and providing temporary jobs. They are also educating and have created a food voucher scheme to ensure nutritious foods are available. The blockade is now being lifted to an extent with more everyday products being allowed in, however, as Joyce explains, this falls short of a solution for the desperate people of Gaza: ‘While this means that more products are being allowed in they are still out of reach of most families who, even with the siege eased will remain without jobs and opportunities. ‘With 80% of the population dependent on some kind of aid, they don’t have the money to purchase the new products.’ Oxfam continue to fight for freedom for the Gazan people and Joyce remains hopeful of a successful future for the country: ‘In my short time here I have seen an amazing resilience in the hearts and minds of the people here – they are resourceful, educated and have hope for a positive outcome compared to the current situation. ‘The recent international attention and collective action of ordinary citizens has created the current shift in policy – with more effort more can be achieved – we need the people of the world not to forget about Gaza – and not to normalize the current situation. ‘If the blockade was lifted in its entirety then there would be an opportunity to rebuild Gaza – the economy, the homes and industries and the lives of the ordinary Gazan people.’

For the immediate future Joyce plans to remain in Gaza and continue her work with Oxfam.
