Other than roti, she makes tiffin items with ragi. She makes sweet adai, savoury adai, idiyappam, puttu, kanji(porridge) both sweet and salted and these dosas. Those days, I was not so fond of those tiffin items. My mom will remind me that I used to drink sweet kanji when I was a baby and used to be chubby then.During my teens I was so so lean and weak and she used to struggle a lot to make me eat nutritious food and I used to escape in all ways! But after I started cooking, I buy ragi flour and make at least dosa with it once in a while. But now, my kid wont even touch it, my hubby also is a big enemy to healthy food items like ragi, oats! So I make this only for myself. Its easy to make in morning times also we will feel full tummy to kick start the day. I simply eat with buttermilk and idli podi . I have given the best combo chutney how ever, goes well with this dosa. The ingredients given makes 5-6 dosas. DESCRIPTION

Ragi is a millet known to provide strenth to bones. South Indians like Dosa and hence it is suggested that they eat Dosa made of Ragi. The recipe from the Rak's kitchen is yummy.

    Take ragi,wheat flour, chopped onions,green chilli, torn curry leaves, cumin,salt in a bowl and addenough butter milk or water to make thin batter.

    Heat dosa pan, drizzle with oil and pour as we do for rava dosa,drizzle some more oil and cook bothsides in medium flame.

  • Serve hot with your favourite chutney! Tangy,hot or simply coconut chutney or milagai podi!

    This chutney is very nice combo for ragi dosa. Easy to make too! My mom makes this with even idli /dosa. The chutney requires simplest ingredients in your pantry and the key is to balance all the three chilli-salt-tamarind. Its perfect for the bland ragi dosa.

    Red chillies 5-6

    Tamarind 1 tblsp tightly packed

    Salt as needed

    Onion,chopped 2 tblsp

    Oil 2 tsp

  • Mustard 3/4 tsp

    Urad dal 1 tsp

    Curry leaves few

    Grind red chillies, tamarind and salt with 1/4 cup water until very smooth. transfer to a bowl.1.

    Temper with the items given under To temper table and add onion and fry till golden brown andmix it to the chutney we ground.

    2.

    For Ragi dosa, adding water or buttermilk is your choice. I usually mix with water as I dont liketo mix with butter milk. But my mom always uses butter milk, atleast a little.

    If you have left over sour idly/dosa batter, you can add a laddle full of that to this batter.

    You can replace wheat flour with rice flour too. But wheat flour is recommended if you makefor diabetic.

    For the chilly chutney, its very important to balance the hotness,tanginess and salt to get theperfect taste. If its too hot, add more tamarind or salt to tally the heat.

    Thats it! Mix well and enjoy as an accompaniment with any dosa or idly

    I wasn't a big ragi fan too but these days got to eat foods which do not only look pretty,but good forour bodies too.I make a very similar ragi neer dosa and pair it with coconut-jaggery choornam:)

    Nice and healthy dosa with a wonderful chutney as well. While I was studying in avinashilingamcollege coimbatore, we used to go to the villages and tell them about the healthy benefits of ragi andconduct workshops in making ragi recipes. I have not had it till date though hahaha

    My mom also combined ragi dosai with red chilli chutney :) so yummy. She would however make theones in which you grind soaked ragi grains with urad dhal (not instant). Looks great!

    I tried out the ragi dosa as per ur recipe...The otherside of dosa which was under the tawa wasdry...Can u figure out why ?

    Sush,You can try covering the dosa with a lid while its cooking(before flipping,untill you flip), sometimes ithappens, make sure when you pour the dosa batter the tawa is hot enough to cook it instantly, if ittakes time, then I think it has some white dry spots...

    Hey, this was nice. I make it a little differently.I soak 1 cup urad dall for 3 hours and then grind it. To that I add 4 cups ragi flour, salt, zeera andmake dosa. This also tastes good.

    I made this. It tasted awesome. Dosa didn't come out perfect like yours. But I was not using thetraditional dosa pan. Is that the reason.?

    Dosa did not come out well. I used a stainless steel tawa not the dosa pan. I guess that is the reason.

    Oh ok, if other dosas come out good, then this too has to come out rite. Either too thin(more water)stick to pan or too thick (less water) will break. Do try in nonstick or iron pannext time...

    IF U WANT U SOAK HALF A CUP URAD DAL , GRIND N ADD INTO RAGI FLOUR. IN THAT CASE U DONT ADDWHEAT FLOUR . THEN U MADE DOSA LIKE ORDINARY DOSA ALLWAYS U DO !!! IT IS VERY DELICIOUS NTASTY !!!

    Hi raks..Just wondering if wheat flour and atta flour is the same? The chilies used is the fresh redchilies or the dried ones? Thanks..Love ur blog very much..: )

    Yes atta and wheat flour same. I used dry red chillies

    Yes sure, because ragi flour by itself has that texture and we are adding wheat flour too, so

    Have been searching for instant ragi dosa recipe. Visited your space half an hour back.made it for myfamily. Total yumm it is. i did nt add atta as i had one Laddle left over dosa Batter. Was so hungry thati did nt temper the chutney. But taste is awesome. This is going to be now part of everyday meal.Thank you raji.

    hey Raji My commetn did nt appear here. my search for instant ragi dosa took me here and I made itfor my family in less than 30 minutes time. very tasty and then chutney is superb.Thanks a lot andragi dosa would be part of our regular meal.by the way I found your photos and recipe used elsewhere.If in case you are not aware about it pleasehave a look at it .http://jaysactivity.blogspot.in/2012/10/health-benefits-of-ragi.html
