    A dancing turkey willbe part of theThanksgiving festiv-ities this year for Jai Bakerand her family.

    Baker is co-owner of both the Lincoln and Auburn Awful Annies with husband Don Baker

    and they will head over totheir son, Brians, housefor Thanksgiving.

    A tradition in their fam-ily, which was started by Bakers grandmother, is tomake that days turkey dance.

    We dance the turkey before we stuff him, Bak-er said. He goes on theside of the sink and does acan-can.

    This years turkey dance will be special because it will be the first time Baker will dance a turkey for agrandchild, which wouldbe her son, Adams, 19-month-old son.

    Her sons enjoyed it when her grandmothermade the turkey danceand so Baker wants hergrandkids to enjoy the tra-dition started by hergrandma.

    She was a fun lady,Baker said about hergrandmother. She wasalways doing something for the kids.

    Baker and her family will enjoy two turkeys forthis years dinner, onebeing cooked in the ovenand the other on the bar-

    beque.Brian will be barbe-

    quing another turkey withDon, she said, adding that there will be a battleof which turkey is juicer.

    In addition to theturkey, there will be tradi-tional Thanksgiving fare,including one dish calledCreamy Broccoli-Onion

    Bake that is featured in Awful Annies cookbook,

    Edible Encore.The cookbook is cur-

    rently sold out, but arevised edition of thecookbook will be avail-able for purchase from Awful Annies at the end of November.

    Baker said that therestaurant on 490 G St. will offer up some specialsfor the coming Thanks-giving holiday in Novem-ber.

    But dont try to havedinner on Thanksgiving Day because Awful Annies will be closed thatday.

    And the owners will bebusy dancing the turkey.

    CREAMY BROCCOLI-ONION

    BAKESERVES 6

    Ingredients:1 pound broccoli florets3 medium onions, quar-tered-cup margarine2-tbs. flour-tsp. salt1 cup milk3-ounces cream cheese1 cup cheddar cheese,

    grated1 cup soft breadcrumbs

    Instructions:Cut up fresh broccoliand cook until al dente.Cook onions in boilingsalted water until ten-der.Drain.In saucepan, melt halfof the margarine.

    Blend in flour, salt anddash of pepper.Add milk.Cook, stirring in creamcheese until smooth.Place vegetables in a 1- quart casserole.Pour sauce mixture overand mix lightly.Top with cheddarcheese.Melt the remainingmargarine, toss withbreadcrumbs.Sprinkle crumbs oncasserole.Bake at 350 degrees

    until heated through,40 to 45 minutes.For breadcrumbs, tear 3or 4 slices of sourdoughor wheat bread intosmall pieces and place inblender.Run on high for 2 to 3minutes, until crumbly.

    FOUR-LAYERPUMPKIN CAKECake ingredients:1 yellow cake mix1-cup canned pumpkin-cup milk4 large eggs1/3-cup oil- tsp. Pumpkin pie spice

    Frosting ingredients:8-ounces cream cheese,softened-cup powdered sugar- tsp. Pumpkin pie spice3-cups whipping cream1-cup canned pumpkin- cup bottled caramelsauce-cup whole pecans

    Cake Instructions:Preheat oven to 350

    degrees.Grease and flour two 9-inch round cake pans.Mix cake mix, 1 cuppumpkin, milk, eggs, oiland tsp. pumpkin piespice in a mixer untilwell blender.Pour into pans and bake25 minutes or untiltoothpick comes outclean.Cool completely.Run knife around edgesof pan and place on twoplates.

    Frosting instructions:Beat cream cheese untilsmooth and creamy.Add powdered sugarand pumpkin pie spice.Mix well.Add cream and 1-cup

    pumpkin.Beat until smooth andthick.Cut each cake layer inhalf horizontally with asharp-serrated knife.Put one layer on a plateand spread cream-cheesemixture between thelayers.Stack and frost top. Useall of the whippingcream and cheese mix-ture.Chill.Just before serving, driz-zle cup of caramelsauce over cake (storebought is fine) and topwith toasted wholepecans.

    PUMPKIN CHIPOTLE SOUP

    Ingredients:2 tbs. Canola oil1 onion, chopped3 stalks celery, chopped3 green onions, chopped2-tbs. Chipotle chilies-tsp. Ground Cumin1-tsp. Chili powder-tsp. nutmeg3 tbs. Brown sugar7 cups low-fat chicken broth1 29-ounce and 1 15-ounce cannedpumpkin-pie mix-cup half and half

    Instructions:Saute both onions and celery until

    tender, about 10 minutes.Add spices and chilies, mix well.Add remaining ingredients, excepthalf and half.Bring to a boil.Thicken with Annies Roux (seebelow).Puree in batches in a blender on

    low speed.Add half and half and stir to mixwell.

    ANNIES ROUX

    Ingredients:-cup butter-cup all-purpose flour

    Instructions:

    Melt butter in saucepan, slowlyadding flour.Stir constantly with wire whisk,until thick and smooth. (it bindsquickly).Add this by the tablespoonful tosoups to thicken, whisking untilmelted.

    This roux can also be made withmargarine but it is definitely notas rich tasting!

    Lincoln Manor is askilled nursing facility at1550 Third St. since 1987.

    Lincoln Manor resi-dents will celebrateThanksgiving with thetraditional holiday meal.

    Family members areinvited.

    Jennifer Bonner, 62Jennifer Bonner said

    that her favorite memo-ries of Thanksgiving hadbeen when she and herlate husband would haveher parents over forThanksgiving.

    We always had my mom and dad come to

    Thanksgiving and wemade a big Thanksgiving dinner, Bonner said.

    She said that they would make her dad asteak for dinner becausehe doesnt like turkey.

    Hed eat the things that went with it, Bonnersaid. He cooked theturkey but didnt eat it.

    The family would usu-ally sit around and watch

    television after dinner,Bonner reminisced.

    Im thankful for my family, friends, church,Lincoln Manor and thestaff, she added.

    Evelyn Beach, 81 A favorite Thanksgiving

    memory for Evelyn Beach was the year that she andher family took a trip to

    Washington D.C.My husband waited all

    year long to take a vaca-

    tion and we waited untilThanksgiving, Beachsaid.

    She said they took thekids out of school for thevacation and it snowed.

    It was her favoritememory because, Beachsaid, he didnt get to takea vacation until then.

    This Thanksgiving,Beach said she is thank-ful.

    Im grateful for what Ihave, Im happy, Beachsaid. Im thankful for my family.

    B.J. Vancleve, 87For Lincoln Manor resi-

    dent B.J. Vancleve, theThanksgiving holiday isimportant to her.

    (It means) the chanceto get together with rela-tives and friends, and

    share a meal, Vanclevesaid.

    She said that the tradi-tional turkey is herfavorite food from aThanksgiving feast.

    I guess because wealways did a turkey forThanksgiving, Vanclevereplied, when asked why turkey is her favorite partof the meal.

    She has cooked many Thanksgiving dinners, Vancleve said, and the

    end result is her favoritepart of cooking the meal.The end result is

    bringing in that beautifulturkey on a tray, Vanclevesaid.

    Mary Odum, 85Mary Odum said that

    her favorite Thanksgiving

    memories are from going to her mom and dadshouse with her family.

    We really made a day of it, she said, adding that her family wouldarrive for the Thanksgiv-ing festivities around 10a.m., and they would usu-ally eat around 2 p.m.

    Odum said that she would make the stuffing every year, and that her

    mom would always takecare of the turkey.She said that her family

    did this just about every year.

    What we always did was get together withfamily, Odum said. It was always noisy andhappy.

    For Odum, Thanksgiv-ing is about family.

    Its a time of family get-

    ting together, and wealways thank God for hisblessings throughout the year.

    Georgia Miller, 94Thanksgiving for Geor-

    gia Miller means being thankful for a few differ-ent reasons.

    First, its to be thankfulfor the many things inlife, Miller said. The oth-

    er is family getting togeth-er, caring and sharing.

    When preparing

    Thanksgiving dinner inthe past, Miller said, sheenjoyed the fun of prepar-ing for the wonderfulThanksgiving dinner.

    She also said sheenjoyed the time during the dinner itself, fromhugging and loving the lit-tle ones, to hearing thestories of the older one.

    Ruth Breckenridge,87Ruth Breckenridge saidthat her favorite part of Thanksgiving is the din-ner itself. But she isnt tookeen on what after din-ner entails.

    I just like the wholething, except washing thedishes after, Brecken-ridge said.

    Breckenridge hascooked Thanksgiving din-

    ner many years and herfavorite part of the meal isthe pumpkin pie. Most of the time, she said, herfamily would serve aturkey for dinner but they sometimes had chicken.

    Other favorite parts of Thanksgiving for Breck-enridge are that every-ones so happy and allthe little kids running around.

    First, its to be thankful forthe many things in life. The
