Welcome to the inaugural Real Wine Fair!

The Real Wine Fair is an independent festival of natural growers and winemakers, comprising those who work organically and/or biodynamically and with few or zero interventions in the winery. That said, natural wine is relative rather than an absolute or precise term and embodies a certain spirit of endeavour in the vineyard and the winery. We understand that each grower has a highly specific approach; we should celebrate those differences. Natural wines tend to be made in small quantities by artisan or independent producers who work without chemicals (which means no artificial fertilizers, pesticides or herbicides) in low yielding vineyards and then vinify without artificial yeasts or enzymes, or recourse to acidification or other adjustments. Many are made with only tiny amounts of added sulphur and some with none at all. ‘Nowt taken out and nowt put in’, as the saying goes. The motivation is to rediscover the true flavour of wine by capturing the sense of place (terroir) and the very nature of the vintage. These wines are individual, hand-crafted, thrilling and unpredictable. They remind us that wine can be a living thing rather than a denatured product and that less intervention means more real flavour. This booklet contains details of hundreds of wines from many countries around the world presented by growers and winemakers who have stories to tell. We hope you enjoy these wines as much as we do. And if you want to buy a bottle or several or order something you have tasted at the fair there is a pop-up shop by the entrance! And wine is only part of the Fair. A fantastic schedule of seminars has been lined up with experts and real wine heroes. We are also delighted to be showing the UK première of Mondovino: The Series, throughout the three days of the Fair hosted by producer, director and writer, Jonathan Nossiter. At Aubert & Mascoli, we offer superb French and Italian artisan wines from ambitious vignerons - growers who use their intuition and savoir-faire to make truly wonderful wines. Indigo Wine – www.indigowine.com - Indigo Wine is an agency business supplying high quality wines to the on-trade and retail sectors. We specialise in fresh and balanced wines with a sense of place from family-run estates in Spain and France, with some real gems from Portugal, Italy, Austria and New Zealand. We now work with some of the most renowned winemakers in Spain, from the well-established to up and coming ground breakers creating one of the best selections of Spanish Wines in the country. This was recognised in 2009 and 2010 when Indigo was named Specialist Merchant of the Year for Spain at the International Wine Challenge. Most of our producers are small holders and grape farmers who aim to make wines that show the flavours garnered from their wonderful fruit rather than from lots of new oak. But being small hasn’t stopped us from importing, distributing and representing exclusively the finest organic and natural artisan winemakers from Croatia and the Adriatic. Just 2 hours from Venice, our Istrian wines are hugely accessible to the British palate with a range of exciting indigenous as well as some much-loved international grape varieties. Above all, our winemakers and their families produce wines in small quantities with precision, passion, panache and pride. Their products reflect the core and heart of the land, its people and the culture of Croatia, and with some producing fewer than a few thousand bottles of a particular wine ours are exceptional, sought after, handcrafted wines created with minimum intervention and maximum care.

Vine Trail – www.vinetrail.co.uk – Vine Trail are specialist importers of artisanal, small domaine French wines. As a six strong team – Nick, Cath, Andrew, Robert, Lionel and Joe, we research areas in depth by travelling to France, visiting growers and immersing ourselves in their work both in the vineyard and cellar. Using no agents or brokers, we have developed a very individual selection of wines. These include an excellent selection of top growers’ champagnes, fine selection of Rhône and Loire, and little gems from areas both well-trodden like Bordeaux and Burgundy, and off the beaten track such as Savoie and Jura. Finding wines that are natural, well-balanced and accurately reflect their terroirs is our aim; wines made by growers who through hard work in the vineyards, minimal chemical intervention, and good touch and judgement are able to transfer the maximum potential from soil to glass. Whilst the quality of the wine in the bottle is paramount, many of the wines are made by organic or bio-dynamic viticulture.

Portuguese Story - http://portuguesestory.com – We are traders and story tellers who want to give a Portuguese narrative to the world, to change people’s perceptions and to bring the diversity and uniqueness of Portugal out. One of the ways we want people to engage is through the local and unique and characteristic quality products. Wine can be a strong ambassador of native character and for Portugal this could not be truer. Our vision is that by bringing wine to other markets we will help and encourage people to discover and value Portugal, and help Portugal find its true respected place in the modern world.

ViniVeri - www.viniveri.net In a world where everything has a label, ViniVeri has chosen to remain loose in its definition. Even the group’s motto, Vino Secondo Natura (Wine By Nature), leaves one questioning. To some this is a useful tool, to others it sends a negative message. For this reason, I will try, if possible, to explain the philosophy of this group of anarchical naturalists. In 2004, a group of four small organic winemakers – who had already been working this way for years – found itself tired of participating in wine fairs where the quality of a wine was judged more on the beauty of the stands surrounding it, than on the wine itself - where packaging became more important than content. Together the group decided to host a wine tasting where a minimalist approach to the décor would better reflect the spirit of the winemakers and how they work back in their cellars. This idea proved successful and the group began to grow. Now, there are almost twenty members in the ViniVeri Consortium. We can ask ourselves what do wines made in Tuscany have in common with those produced in Piemonte of the Veneto? What makes us feel at home in each others’ company, if we are all so different? Even before our first official meetings, we realized that we were all doing the same things in the vineyard, that our wines all expressed the same care and dedication and that we treated our clients with the same respect and warmth. We became fast friends. We all have the same sensibility and approach to the land. We all believe that our value is based on what was given to us by the earth and what we are able to give back to it in return. It came as a pleasant surprise that all of us felt so foreign when compared to the rest of the market. We found that, at times, we no longer wanted to explain to people who we are, what we believe in and what we want out of our short existence on this earth. Finally, we had become a real group. We were no longer bound by the uninformed anarchism that had robbed our countryside of the best minds and the strongest arms.

Finally, we were proud to tell the world that, even if we are not batting for the right team, it is possible to live, grow and improve. We prove this every day. So here is what we are (not). We are not organic, even if the rules of our consortium are even more restrictive in terms of both the vineyard and the cellar than those pertaining to organic certification. We are not biodynamic, even if many of follow Steiner’s philosophy. We are not any these things because we know that, unfortunately, rules often become trends and rules are made to be broken. Real wealth is created another way. It is easy to take advantage of the naivety of others is. We realized this when we were told that if we made certain compromises and used industrially produced chemicals, we would get “quick” results and would not impoverish the land or our own minds. We were no longer learning from nature and growing more knowledgeable because, at some point, we were offered a perfect little package with simple instructions for how to grow grapes. We decided to revolt and to return to making wine as it had been made in the past. We pledged to not simply accept what we hear, but to question and study what is around us. This is ViniVeri.

Green & Blue is a fiercely independent Wine shop and Bar in East Dulwich, specialising in the sale of organic, biodynamic and natural wines. We believe passionately in selling these in an environment which is as relaxed and friendly as possible and you can either buy to take away or have a glass or bottle in our splendid bar. We do a range of carefully sourced bar snacks or you can eat a full meal made from deliciously seasonal produce, some of which is also organic. Our commitment to this way of eating and drinking extends to the education of our customers and we hold regular tastings and wine courses.

Domaine Peyre-Rose, Marlène Soria, Coteaux du Languedoc Region : Languedoc Agent/Distributor : Roberson Wine Table : 7 When Marlène Soria purchased a property near Pézenas in the early 1980s, it was as a holiday home rather than a vocation but 30 years on she has become one of the finest winemakers in the Languedoc. Yields are very low (<20 hl/ha) and the viticulture is completely organic (although Marlène would never bother with certification). The rugged vineyards are full of indigenous grasses, herbs, flowers and the big pink rocks that give the domaine its name and the labels their distinctive colour. Like many of our favourite winemakers, Jean-Pierre Lacroix-Vanel uses no new oak or indeed in his case no wood at all, preferring to ferment and age his beautiful wines in tank. He has been producing his organically certified wines on his 10 hectare plot since 1998. He also uses biodynamic treatments and uses no chemicals at all. He uses all of the permitted AOC varieties in his wines but Fine Amor is around 60/40 Grenache/Syrah and Ma Non Troppo is 90% Mourvèdre with a bit of Grenache and Syrah. Having been fermented with natural yeasts and foot-trodden, the wines are aged for up to 18 months in tank before being bottled unfiltered and unclarified. Set amongst the garrigue scrubland and chestnut groves is a parcel of old vines, Mas d’Alézon. Owned and run by Catherine Roque from Domaine de Clovallon, this tiny vineyard produces her only appellation controllée wines. She acquired it shortly after setting up Domaine de Clovallon and it is only a few miles away, just over the Faugères border. Le Presbytère is made from Grenache, Syrah and Mourvèdre. Over 10 years ago, architect, Catherine Roque, bought a house with vines and orchards, on the edge of Faugères, one of the finest appellations in Southern France. At this time, the area was considered too cold and northerly for appellation status. Catherine used this to her advantage planting non-appellation grape varieties – Pinot Noir, Clairette, Riesling, Petit Manseng – and producing, from them, outstanding Vin de Pays. Domaine de Clovallon wines are certified as being fully organic. The reputation of the Pinot grown there is that it is the best in the region.

Thomas Teibert was better-known in Roussillon as the agent for Austrian Franz Stockinger’s barrels than as vintner, but this has now changed. He founded his Calce estate in 2006, after taking a degree in Geisenheim and having been involved with prominent wineries in south-eastern Germany, St. Emilion, South Africa and northern Italy. With the help of German partners, he now has a few acres of old vines, a proper cellar, and the means to pursue biodynamic viticultural methods. He has also benefited from a close relationship with Gérard Gauby and Tom Lubbe of Matassa, as well as an insider’s insights into the work of many others of Roussillon’s most talented vignerons. Clos du Rouge Gorge, Cyril Fhal Region : Roussillon Agent/Distributor: Vine Trail Table : 24 Cyril settled down in 2002 in Latour-de-France, having worked with Mark Angeli and Charlie Foucault in the Loire. When he took over his vineyards there were no other vignerons working organically. Now all the 10 other independent vignerons in Latour de France have followed Cyril’s lead. He is nicknamed the ‘gardener’ by his fellow vignerons for his meticulous work in the vineyard. The domaine Clos du Rouge Gorge consists of 6 hectares of hillsides, planted mainly with carignan (3 ha), as well as grenache and cinsault for reds, and maccabeu for whites. Most of Cyril’s vines are between 50 and 100 years old and the yields are around 15 hl/ha. A rocky soil based upon gneiss, at an altitude that averages from 200 to 250 metres, and an exposition to the North are a few of the conditions which assure freshness in his wines. “I go through everything in the vineyard in maximum detail,” Cyril explains. “I wish to express the roots rather than tannins and matter. I look for juices that are very pure, close to the fruit. Edouard Laffitte acquired his experience vinifying at the Cave d’Estézargues before installing himself in small six hectare domaine in Lansac south of Maury and the Côtes du Roussillon Villages. The domaine is jokily called le Bout du Monde referring to the fact it is situated in the back of beyond (somewhere near the end of the world). The vineyards, scattered amongst various parcels, are situated between 150m and 400m on a terroir of schists and granites. The vines are cultivated organically without pesticides. Harvests are carried out by hand whilst vinification is as natural as possible with carbonic maceration at low temperature. Stéphane Morin created Domaine Léonine when he purchased a twelve hectare estate of old vines in Banyuls à Passa. Clos Lojen is a fresh example of Bobal grown in this way and is a great introduction to his wines. PF (which stands for Pie Franco) is made solely from ungrafted vines from 65 to 85 years old, on limestone and sand. Pino is from a cool sited vineyard of 30 years which produces very elegant fruit. Finally the stronger more masculine Estrecha comes from a single limestone vineyard of 75 years.

We have two small vineyards which we farm organically near Madrid: the first one in Carabaña is planted to Airén and Tempranillo, about 1 hectare, 750 m asl with poor calcareous soil. The other vineyard in Villarejo is planted to Malvar, is less than one hectare, also 750 m asl, with a richer, clay soil. We also buy in organic Garnacha from the Gredos mountain range north of Madrid. We make several young wines, both by carbonic maceration, and traditional vinification, and also cask-aged Crianzas. We strive to produce wines that express our terroir, so no unnecessary interventions or additions of chemicals in the winery. In fact, we usually just crush, press and rack; and by default add no other substances at all.

Marcial Dorado, a young Galician winemaker, wanted to make a fine ageworthy Albarino and saw an opportunity when he found the Dorado vineyard situated near Melgaco with its 70-year-old vines, many ungrafted. Tiny yields and very careful manual selection gave him the perfect raw material to produce the Dorado wine. Elio is a quite unique producer, silent, serious and impeccable like his mighty Barolo. He would always say that his wines are made 80% of terroir and 20% of seriously long ageing period in very large barrels, 4500liters. The much loved terroir has origin in the Third Era and it is characterized by the Lequio formations from the Tortoniano-Serravalliano time, which is mostly made of compact greyish loam, with some pockets of very fine and old sands and decaying organic materials. Once the wine is made, in old fashion and natural way, Elio simply forgets it in large barrel, as the minimum ageing is around 60 months, then bottle refining for another 36-48 months or even longer depending on the vintage. Bruna Ferro is the most charming winemaker i have ever met. She is a farmer who has never dreamt of doing, or becoming anything else. She is the mastermind of the house and with husband Luigi and sons Matteo and Luca, she runs the 22 ha vineyard. Mostly planted with Barbera, her vineyards have always been cultivated in a very old fashion way, respecting every seasonal tradition, which also include the more folkloristic ones. The uncontaminated natural harmony enclosed by bushes spectacle which embraces the vineyards is the ideal scenery. Only here you can live the magic of a unique territory which gives the peculiar character to a wine that I proudly make by hand. The volcanic nature of the basaltic rock along with the calcareous ones which gave origin to the terrain assures minerals and particular salinity. The particular altitude and the presence of the bush creates an ideal microclimate, always ventilated (winnowed) and characterized with an excursion, all this is accompanied by the persistence of perfumes and winey aromas. In spite of his young age, Carlo, 32, proudly continues to be one of the very few Amarone producers who has maintained an untouched traditional style of winemaking and grape growing. 11 hectares, mostly on " pergola" and sticking to the classic grape varieties, which means at 25% of Molinara, the real delicacy of the Valpolicella blend assuring finesse of flavour and perfumes and that typical light ruby colour. The withering of grapes is made on "Arele", on which bunches are laid and checked thrice times daily during the "appassimento". Then, the stunning ageing: 72 months in old Slavonian barrels followed by 12 months of bottle refining. When Alessandra and Carlo Venturini first discovered Monte dall’Ora it was love at first sight. As children of farmers, they were excited and challenged by the hard work it was going to take to restore these ancient vineyards. Located in Castellroto, in the hills outside of Verona, the vineyards of Monte dall’Ora are planted on a base of limestone soil and form a natural amphitheatre facing southeast towards the city. In fact, portions of their vineyards are planted on ancient dry stone terraces called marogna. The Venturinis are firm adherents to biodynamic principles. AA Gatti Lorenzo is a small estate in Ponte di Piave (Treviso) making intensely pure Prosecco from organically grown grapes which are fermented in cement tank with indigenous yeasts and without temperature control. Refermentation in the bottle is with indigenous yeasts and residual sugar left from the first fermentation. This wine is a far cry from the normal tank-fermented Prosecco that one sees so often. The gum-tingling Raboso is fermented on the skins for at least 10 days with frequent manual remuage in cement tank with indigenous yeasts and without temperature control. After a gentle pressing the wine stays tanks before being bottled without clarification or filtration.

The unique territory where we produce our wine is the Carso. The approach to wine and the making of it seems more rustic, authentic and deeply rooted in tradition. The cellar is almost completely filled with aging tanks made of Slovenian oak and there is just a tiny bit of space left for stainless steel tanks. In the rear stands a 60-year-old fermentation tank that is still used for Rinaldi's Barolo fermentation. No yeast needs to be added, since the tank contains natural yeasts from all the previous vinifications. The lengthy fermentation is not temperature-controlled. Casa Coste Piane is a small estate in Santo Stefano, heart of the Valdobbiadene area. For generations their wine had been sold in bulk but since 1983 they decided to bottle the production themselves. The vineyards lie on slopes close to the cellar. The vines are on average 60 years old (some are pre-phylloxera!!) and their roots can grow up to 30-40 metres long. This Prosecco is a gem, it is one of the few made in the ancestral method wherein the second fermentation takes place in the bottle. In April the wine is bottled without the addition of yeast and sugar, subsequently the indigenous yeast contained in the wine starts a second spontaneous fermentation that lasts for approximately four weeks. After this the wine spends a further four weeks sur lie. The process of “disgorgement” is not practised, therefore the yeasts are still present in the bottle… any haziness is entirely natural. Mike and Claudia Weersing came to New Zealand in 1996, when Mike began making wine with Tim and Judy Finn at Neudorf Vineyards in Nelson. After a long and intensive search to find a site for their own vineyard, they purchased a farm in the Pyramid Valley, near Waikari in North Canterbury, in 2000. Claudia is a committed biodynamicist and she guides the vineyard activities whilst Mike studied oenology and viticulture in Burgundy. The search for the “right” terroir has been rigorous- marginal climate, clay-limestone soils, scarp slopes, eastern to northern aspect, etc. - finding their way home has been a ranging, rich and fascinating migration. Mike and Claudia have developed four vineyards over the last nine years, two of Pinot Noir, and two of Chardonnay. Their unusual shapes and differing sizes have been determined by describing, and then adhering to, discrete areas of homogenous soil and aspect. Each block is vinified and bottled separately, as an expression of its specific place. The vineyard names are derived from common names of predominant weed species in each block. As soil conditions change, the weed mix responds accordingly. The Villalobos family estate is located close to the village of Ranguili and is entitled to Colchagua Valley appellation of origin. Colchagua is a region close to the coast, recognized for its dry summer days and refreshing cool nights. The vineyard is essentially Carignan as far as anyone can ascertain, and was originally planted during the 1940’s and 50’s. Villalobos vines have never been treated; indeed, the vines have always grown wild and free from any chemical processes for sixty years amongst native Chilean flora such as maitenes, rosehip, Culenes, pine trees, blackberry bushes etc. Given this context the winegrowers wish to distance themselves from the traditional industrial monoculture. Their main goal is to produce wines which reflect the seasonal conditions and qualities of the terroir, taking advantage of the organic and wild characteristic of the aged vines. In 2009 vintage he used 100% undestemmed bunches and the wine did carbonic maceration on the stems for three to four weeks. The same block of Chenin was used from Lammershoek. His other wine, called Cortez, is also from Chenin, but in this case the grapes are sourced from an adjacent valley from a farm called The Observatory (which is also on granitic soils). Sipsmith Distillery, Hammersmith, London Distributor: Les Caves de Pyrène Bar http://www.sipsmith.com Launched in London in 2009, the first copper-pot based distillery to start up in London in 189 years, Sipsmith is one of only four gin distilleries located within London's city limits. It is the brainchild of Sam Galsworthy and Fairfax Hall with Jared Brown as Master Distiller. Sipsmith's first two spirits are a Barley Vodka and London Dry Gin. These are produced in small batches of less than 300 bottles a time, from an English Barley mash that is created off-site. Each batch is made in a traditional manner with three cuts: the head is discarded; the heart or core of the distillation run is retained; and the tail is also discarded. The heart of the distillation is diluted to its final bottling strength with Lydwell Spring water, one of the sources of the River Thames in the Cotswolds. NOPI is a brasserie, but not in the conventional sense; there are the familiar materials such as marble, brass and wood, but they all appear in new and surprising combinations. NOPI is open for breakfast, lunch and dinner seven days a week. Morito Moro restaurant opened in 1997 and lies at the heart of the vibrant pedestrianised street, Exmouth Market in Clerkenwell. Known for its award-winning Moorish cuisine, the restaurant is popular not only with diners, but with those who come in to enjoy tapas, which are served throughout the day. In 2009 Moro was voted Observer Best Restaurant by the readers and in 2011 it was runner up. Morito is the new tapas bar right next door to its bigger brother Moro. The food is within the same Moorish vein as Moro, but in little dishes. Since its opening in September 2010 it has picked up 2 awards: a Michelin ‘Bib Gourmand’ and ‘Spanish Wine Restaurant of the Year’ at the Drinking Out Excellence Awards. In 2011 it was runner up in Time Out’s Best New Restaurant award and nominated for Condé Naste Traveller Best Design award

Michel Tolmer

Michel Tolmer illustrates the famous www.glougeule.fr web-site and he is artist-in-chief of the famous wine festival, La Dive Bouteille. He is a cartoonist who draws his interest from the quirks of the natural wine world and his prints and posters adorn the walls of many a natural wine bar. Michel is also

responsible for designing the scary-looking man with the fork on our Real Wine Fair poster.

Louise Sheeran

Louise Sheeran is a London-based designer. She likes screen-printing, tasty wine and, wherever possible, combining the

two. When she’s not elbow-deep in ink you might find her in a khaki t-shirt bumping into things at Terroirs.
