Depends on the chili you use. ) Garlic – 8-10 piece ( As required) Curry leaves - few Salt – As required Recipe: 1. Heat a pan. Don’t use oil to fry. 2. Fry Black gram dhal (Ulunthu), Red chilies, Garlic and Curry leaves till it become golden brown. 3. Cool off all the fried items. 4. Then grind all the fried items and salt. Verkadalai (peanut) – ¼ cup

Red chilies – 20–25 (As Required. Depends on the chili you use. )

1. Heat a pan. Don’t use oil to fry.2. Fry Pori kadalai, Verkadalai (peanut), Red chilies, Garlic and Curry leaves till it become golden brown.3. Cool off all the fried items.4. Then grind all the fried items and salt.

Ingredients:

Pori kadalai (chana)- 1 cup

Sugar- 1/4 to 1/2 cup

Cardamom- 2

Ghee- as required

Recipe:

1. Dry grind Pori kadalai (Channa), Sugar, Cardamom and keep it aside.2. Heat Ghee and mix with grounded flour.3. Make small balls before the ghee mixed channa flour cools off. If it cools off, the flour will be dry and it would be difficult to make balls.

Serve after it cools off. It’s very easy to prepare and tasty to eat.

Ingredients:

Brinjal - 2 (tender ones) or 16 -20 cubes

Onion - 1 (small)

Tomato - 1

Ginger garlic paste - 1 tspn

Turmeric powder -1/4 tspn

Chili powder - 1 tspn (adjust to your taste)

Coriander powder - 1½ tspn

Mustard seeds and Urad dal - 1/2 tspn

Curry leaves - 1 sprig

Water - 1 to 2 cups

Salt - to taste

Oil - 2 tspn

Roast and make powder of :

Peanuts - 2 tspn

Chana dal (kadalai paruppu) - 1 tspn

Sesame seeds - 2 tspn

Recipe:

1. Cut Brinjal into small cubes. Chop Onion and Tomato into small pieces.2. Heat a tspn of Oil in a pan. Add Peanuts and Chana dal, fry till it turns into golden brown or till its cooked. Next, add Sesame seeds and fry till

it starts spluttering. Then remove from heat and make a coarse powder of this in blender.3. Heat a tspn of Oil in a pressure cooker. Add Mustard seeds and Urad dal, Once it starts spluttering add Curry leaves and Onion.4. Fry Onion till it becomes transparent. Add Ginger garlic paste and fry till the raw smell goes.5. Then add Tomato, Brinjal, Turmeric powder, Chili powder, Coriander powder, ground powder(Peanuts+Chana dal+Sesame seeds), Salt and

Water. Cover and cook for 1 whistle. You can also cook this curry in ordinary pan till the brinjal becomes tender.6. Serve once the steam is released from the cooker.

Goes well with: Plain Rice
