That’s why the Idaho Office of Drug

Policy and The Family Dinner Project

are encouraging you to celebrate Idaho

Family Dinner Night this year on September 22nd

and make family meals a regular event in your home!

+Easy Cheesy Enchiladas

INGREDIENTS

• 2 cups shredded roasted chicken

• 1 cup thawed frozen corn

• 1 1/2 cups grated cheese

• 8 small tortillas

• 1 cup enchilada sauce

• 1/4 cup cilantro, chopped

(optional)

• 1/2 tsp. salt

• 1/4 tsp. pepper

INSTRUCTIONS1. Preheat the oven to 400 degrees.

2. In a large bowl, combine the chicken, corn, 1 cup of cheese, 1/2 tsp. salt and 1/4 tsp. pepper.

3. Spoon the mixture into the tortillas and roll. Place them seam-side down into a baking dish.

4. Top with enchilada sauce and remaining 1/2 cup of cheese.

5. Bake 15-20 minutes, until cheese

is bubbling.

6. Sprinkle with cilantro and serve!

Serves 4-5

+Easy Turkey Skillet Dinner

INGREDIENTS

• Nonstick cooking spray

• ¾ lb. lean ground turkey

• 1 medium onion, chopped

• 3 tomatoes, chopped

• 3 Tbsp. tomato paste

• 1 tsp. dried basil,

oregano, and

garlic powder

INSTRUCTIONS1. Wash hands with warm water and

soap. Wash fresh vegetables before preparing.

2. Spray nonstick cooking spray in a large skillet.

3. Brown turkey and onion over medium heat until turkey is cooked through and onion is soft, about 10 minutes.

4. Add tomatoes, tomato paste, and seasoning. Simmer over medium heat for 10 minutes.

5. Add zucchini and cook for 5 more minutes. Serve while hot.

Serves 4

• ½ teaspoon salt

• ¼ teaspoon ground black pepper

• 2 medium zucchini, sliced

+Hot Stuff Casserole

INGREDIENTS

• 1 lb. extra lean

ground beef

• 1 can Rotel

tomatoes

• 1 small can

tomato sauce

• ¼ tsp. Chili

powder

• 1 tsp. sugar

• ¼ tsp. basil

• 12 oz. package

wide noodles

2. Add tomatoes, tomato sauce, sugar,

salt, chili powder, and basil.

Simmer for 20 minutes.

3. Cook noodles according to package

directions.

4. Mix sour cream, cream cheese,

and chives.

5. In casserole dish sprayed with Pam,

layer 1/2 noodles, cream cheese

mixture, then the meat mixture.

Repeat layers.

6. Bake at 350 degrees for 20 minutes.

Sprinkle cheddar cheese on top and

return to oven until cheese has

melted.

Serves 12

• 1 cup low-fat sour

cream

• 1 package fat-free

cream cheese, at

room temperature

• 1 Tbsp. chives

• ½ cup cheddar

cheese, reduced fat

+Tasty Italian Chicken

INGREDIENTS

• 1 Tbsp. olive oil

• 2 boneless chicken breasts, chopped

• 2 zucchini, chopped

• 1 red pepper, seeded and sliced

• 2 ¼ cups sliced mushrooms

• 1 clove garlic,

diced

INSTRUCTIONS1. Heat oil in pan. Add chicken and cook

over medium heat for 3-5 minutes until browned on both sides.

2. Add zucchini, pepper, mushrooms and garlic. Sauté for another 3 minutes.

3. Stir in the tomatoes and herbs, bring to a boil, lower heat and simmer for 2 minutes. Season with salt and pepper.

4. Place chicken and veggies into a baking dish sprayed with nonstick cooking spray. Top with slices of cheese.

5. Put dish under the broiler and cook for 3 minutes or until the top is golden.

Serves 4

• 1 can diced tomatoes with basil, garlic, and oregano

• 2 Tbsp. Italian seasoning

• Salt and pepper to taste

• 4 oz. mozzarella or provolone cheese, thinly sliced

+Apple Crisp

INGREDIENTS

• 4 apples, cored and sliced

• 1/4 cup quick cooking oatmeal

• 1/2 cup brown sugar

• 1 Tbsp. cinnamon

• 1/4 cup salted butter

INSTRUCTIONS1. Preheat oven to 350 degrees.

2. Grease the bottom and sides of a square pan.

3. Spread the sliced apples on the bottom of the pan.

4. Cut the butter into small pieces and put in a medium-sized bowl.

5.

6. Using two knives, cut the butter into the mixture until it looks like small crumbs.

7. Sprinkle the mixture over the top of the apples.

8. Bake for about 20 minutes. Serve hot (with ice cream,

if you have some!).
