    How to make gyoza wrapper (25-30 pcs)

    Ingredient:

    200g all purpose flour

    1/3 tsp salt

    110 ml warm waterInstructions:

    1 mix water and salt then set aside

    2 sift flour for 2-3 times then add the water and salt

    3 Mix with a spatula or spoon until you can form the mixture into a ball with your hands

    4 add more water or flour depending on its consistency

    5 knead the dough for about 7 min

    6 shape the dough into a log then wrap in a plastic wrapper

    7 rest at room temp for at least 30 min then cut into 25-30 pcs

    8 lightly flour the surface

    9 get the cut pc, make the outer thinner than the center circle

    How to make gyoza

    Ingredient

    Filling

    10 oz (290 g) ground pork 2-3 (140 g, 5 oz) cabbage leaves 1-2 (15 g, 0.5 oz) green onion/scallion 2 shiitake mushrooms 1 clove garlic, minced 1 tsp. grated gingerSeasonings

    Tbsp. sake Tbsp. sesame oil 1 tsp. soy sauce tsp. salt Freshly ground black pepperDipping Sauce

    1 Tbsp. rice vinegar 1 Tbsp. soy sauce tsp. La-Yu (Japanese chili oil) (optional)Steps

    1 Prepare the ingredients. Chop the chives and cabbage. Peel and devein the shrimp, and grate

    your ginger and garlic.

    2 Combine the pork, shrimp, cabbage, ginger, garlic, salt, white pepper, and the oils into a large

    bowl.

    3 Mix everything together well with your hands, making sure the mixture isn't lumpy or uneven.

    Place the bowl into the refrigerator, and then leave it for about 10 minutes.

    4 Take a gyoza wrapper and place a small spoonful of the mixture in the middle. Dab a little

    water on one half of the wrapper's edge and securely fold in two to make a semi or half circle.

    While folding, pinch the two sides together like a Ziploc bag and create waves while pinching.

    Repeat this step for all the wrappers. This is called "crimping", the way to seal up the edges of

    the dumpling.

    5 Oil and heat a skillet on the stove. Put it on medium heat and carefully drop a few dumplings

    into the skillet at a time, but be sure not to overload the skillet with everything.

    6 Fry the dumplings for about two minutes, then reduce the heat.

    7Add about half a cup of water to the skillet and cover it with a pan lid. Steam the dumplings

    until the water has evaporated or boiled off and then remove the food from the heat.

    8 Place the dumplings onto a plate or serving bowl and serve with dipping sauce or soy sauce

    (shoyu). Gyoza dumplings are mainly served with a soy based tare sauce, which you can seasonwith rice vinegar. The dumplings are best served while still steaming hot

    Homemade Chocolate Recipe

    Main Ingredients: milk powder condensed milk

    Ingredients

    Cocoa powder - 5 tbsps

    Milk powder - 1 1/4 cups Butter - 1/4 cup Sugar - 2/3 cup Water - 1/2 cup

    Method

    1. Sieve milk powder and cocoa powder and keep aside.2. Heat water and sugar in a vessel and bring to a boil. Reduce flame and continue cooking till the

    syrup reaches one string consistency. Add the butter and mix well till it melts and blends with

    the syrup. Turn off heat.

    3. Add the cocoa-milk powder mixture gradually (a few tbsps at a time) and mix well till glossy.Grease square pan or plate. Pour the mixture into the pan and smooth the top with a spatula

    allow to set for 10 to 15 mts at room temperature.

    4. Place in fridge for 10-15 mts. Remove from fridge and use a cookie cutter to cut into desiredshape.

    Tips

    Wrap them in colored papers and gift to family and friends. You can add crushed nuts of your choice. You can add 1/2 tsp of vanilla essence at the time of adding butter. Alternately, 2 tsps of

    strong coffee mixture can be added. If using cinnamon, add 1/4 tsp to the cocoa-milk mixture and sieve. To check for one string consistency of sugar syrup - allow the sugar to dissolve in water.

    Continue to cook the syrup on low flame. It will begin to thicken. When you touch the

    syrup between your forefinger and thumb, a thin string will form and it should not break.

    If it breaks, the syrup should simmer for a little while longer.
