    Farewell to PaddyThere is movement within the Staff Ranks. Paddy, our favourite Irish Waiterhas headed home for Ireland for a family reunion. We wish him all the bestbut will miss him terribly. It is never great when you lose one of the PipisFamily members and Paddy will now & forever be a part of our Hot PipisFamily. On the upside, we welcome Matt to the kitchen team. Matt brings apassion fro desserts & pastries to our team and we are all eager to be used ashis test dummys.

    Hot P ipis Seafood CurryFOR THE CURRY:7.2 lt coconut cream100gm Garlic, crushed100gm Ginger, crushed6 Lemon Grass Sprigs12 Kaffir Lime Leaves

    1 cup (250ml) Lime Juice cup Tamarind Paste

    Method...Saut off onions.Add red curry paste and cook out until i t splits.Add tomato & tamarind paste and cook out until that also

    splits.Deglaze a pan with fish sauce, Garlic, Lime leaves & Ginger.Add Lemon GrassReduce & add coconut cream.Bring to boil add raw sugar & chopped coriander and correct

    consistency and cook for a further 10-15 minutes.Makes approx 20 serves

    Seafood for curry: (one serve) Moreton Bay bug, 80gm mussels ,100gm barramundi2 prawns, 20gm calamari, 30gm scallopsPan one serve of curry sauce, add seafood except Bug & cook off.Sear & grill the bugServe Curry in a large bowl & build up with the bug. Add SnowPea Sprouts for garnish.
