PERSONALITIES Jereme Leung Consultant Yen, W Taipei, China W Taipei is proud to announce that creative powerhouse chef Jereme Leung has been named consulting chef to Yen, W Taipei’s signature on-site restaurant. Chef Leung will bring his innovative style of cooking and unique approach to contemporary Chinese cuisine to the W brand’s first Chinese restaurant in the world. Yen will feature Cantonese and Taiwanese cuisine reflective of Leung’s vision of introducing revolutionary ways to approach Chinese cooking while preserving its core traditions. An expert in all four schools of Chinese cooking – dim sum, barbecue, wok cooking and knife work – Leung has honed his craft at some of Southeast Asia’s most renowned hotels. Leung also was the founding chef and creator of the Whampoa Club, a celebrated success of which spawned two stunning restaurants in Shanghai and Beijing. In January 2010, working with international fashion brand Shanghai Tang, he developed the world’s first Shanghai Tang Café concept. Leung is also the author of two internationally acclaimed cookbooks, New Shanghai Cuisine: Bridging the Old and the New and New Beijing Cuisine: A New Look at Classic Dishes. A multi-faceted understanding of the different Chinese kitchens in the region has allowed Leung to create a contemporary, improvisatory culinary style that is nonetheless firmly rooted in traditional craftsmanship and that remains sensitive to culinary history. Chris Foo Beer Keeper Four Points by Sheraton Bangkok, Thailand Four Points by Sheraton Bangkok, Sukhumvit 15 is pleased to announce that Chris Foo has been selected as Beer Keeper at the first Four Points by Sheraton property in Thailand where he will be in charge of bringing Four Points by Sheraton brand’s signature Best Brews programme to life at the BeerVault. In this role, Foo will be responsible for knowledgeably managing and educating guests about the Best Brews programme and the 48 labels of beer available at BeerVault - six of which will be available on tap, as well as creating signature beer cocktails, and sharing his in-depth knowledge of the wide world of beer. As Beer Keeper to the hotel’s BeerVault, Foo will be available to guests and customers as a knowledgeable and honest source willing to answer questions about beer. He will also be responsible for creating simple, innovative and approachable beer cocktails, as well as organizing beer-tasting events. Foo comes to Four Points by Sheraton Bangkok, Sukhumvit 15 after successfully partnering with a friend to open their own beer bar, House of Beers, where they focused on serving only the best Belgian brews. Prior to this most recent role, Foo served as partner at a beer import and distribution company, and has over five years of experience in diverse roles within the marketing and customer relations world. Sebastian Ng Restaurant & Bar Manager Philea Resort & Spa Melaka, Malaysia Melaka’s Philea Resort & Spa Melaka has brought in Sebastian Ng as its Restaurant & Bar Manager. Ng, who hails from Singapore, comes to Philea with a wealth of experience in the financial and food and beverage aspects. He brings the experience of administration and cost controls too in both resorts and hotels background. Ng’s last property was the Constance Ephelia Resort of Seychelles where he was part of the pre-opening food and beverage team. Subsequently he has worked in the San Francisco Restaurant in Las Vegas and several other properties in Singapore and Malaysia, including the Meritus Hotels and Resorts Group and the Kuok Group, to name a few. Ng was educated in Singapore and pursued his degree in the University of Nevada, Las Vegas with a major in Hotel Administration.
