Easy Molten Lava Valentine’s Day Cakes

• 1 stick butter • ¾ cup chocolate chips• 2 eggs + 2 egg yolks• 2 TB sugar• 10 parchment paper muffin cups• Garnishes might include fresh

raspberries, powdered sugar, or whipped cream

Preheat oven to 450 degrees and line a muffin pan with parchment paper muffin liners.

Melt butter and chocolate chips together over low heat until smooth. Let cool slightly. In a large bowl, whisk together the eggs and sugar. Stir in the melted chocolate mixture until well combined.

Divide among 10 standard muffin cups and bake until cakes are puffed up but still soft in the center – about 6 to 8 minutes. Turn out upside down onto a plate, garnish, and serve immediately.

Lutheran Social Services of Indiana (LSSI) is on a mission. Our primary goal is to express the love of Jesus Christ for all people through services that empower individuals and families to move toward social, emotional and spiritual wholeness. One way we are fulfilling this mission is through our new LSSI Works program. Here is a recent graduate’s success story.Melissa is a mother to three busy boys. She initially came to LSSI when she made the difficult decision to place a baby for adoption. Because of her empathetic nature, our adoptions specialists asked her to become a mentor for other women who were considering placing a child for adoption.As she worked with our LSSI staff, it became clear that Melissa wanted the very best for her family, but she seemed to be repeating the same mistakes in her personal and professional life. Not one to shy away from working toward growth, Melissa was enrolled in the LSSI Works program. “Personal development was what attracted me to LSSI Works,” she says. “The fact that I could develop myself professionally as well was just icing on the cake.”

Throughout her LSSI Works training, Melissa embraced the belief that professional development can be cultivated, but personal development is earned through the hard and uncomfortable process of digging deep to find what is getting in the way of success. Every morning, Melissa took the coursework seriously. She readily shared her struggle with her fellow students and emerged as a leader of the community that was formed at LSSI Works.Melissa now knows that her diligence and perseverance to the very end has paid off. She recently started her new career as a Program Support Specialist for Lifeline Children and Family Services. “For the first time in a long time, I not only have people supporting me in my journey for lasting success, but I believe in myself. DIRECTIONSWhile muffin or bread is toasting, fry eggs ina non-stick skillet sprayed with cookingspray.
