‘Dickens on the Delaware’ returns to Callicoon
The annual holiday event“Dickens on the Delaware” willshowcase the retail community
in the picturesque hamlet ofCallicoon-on-the-Delaware just intime for your holiday shopping.
This year’s festivities, sponsored inpart by the Callicoon BusinessAssociation, will take place onSaturday, December 12 from noon to7 p.m.
Retailers, galleries and restaurantswill highlight their holiday goods anddazzle town visitors with their holi-day spirit.
Shopkeepers will be dressed inVictorian garb, with stores, restau-rants and the surrounding environsdecorated to create the days of yore.
Callicoon will be transformed into awinter wonderland with Christmastrees and festive wreaths.
Strolling carolers, along with sta-tions set up throughout the town, willencourage visitors to explore all thestreets and byways. (See sidebar)

Plans have been announced forthe fun-filled annual HolidayOpen House sponsored by
Highlights for Children.The Holiday Open House, which is
open to the public and has become atradition for many area families, willbe held from 10 a.m. to 4 p.m. onSaturday, Dec. 5, 2015, at theHighlights editorial offices at 803Church Street in Honesdale.
The event features an array of activ-ities, treats, entertainment, and thealways-popular craft room wherekids can make creations of all kindswith mounds of craft supplies.
The entertainment includes music,storytelling, mime, sing-alongs, andmore. Face painting and the creationof balloon animals are planned.Children may choose a surprise fromthe giant grab bag under theChristmas tree, and everyone mayregister for a free drawing to win spe-cial gifts.
Also included this year will be thedisplay of entries in the raffle for theHighlights Hidden Pictures®

Milanville General Store collects for wounded at Walter Reed
Every holiday season the folks atthe Milanville [PA] General Storedepend on the generosity of the
local community to help a family inneed. This past summer, after meetinga Wounded Warrior while visitingMaryland, Vanessa Degori knew rightaway that she needed to do something.So this year the store will be helping notonly one family but many families.

LIVINGSTON MANOR — The LivingstonManor Chamber of Commerce and theCatskill Art Society (CAS) will throw a grandopening party for “Trains on Main,” theannual holiday train spectacular, at theCAS Arts Center, 48 Main Street, LivingstonManor on Saturday, December 5 from 1-4p.m.
Trains on Main are arriving in LivingstonManor for its eighth year. This nostalgic tripback in time features handmade modeltrains on view in windows up and downMain Street.
To kick off this favorite local tradition, aspecial Grand Opening party will be held inorder to see the miniature trains up close,talk to the model builders, and listen to livemusic from local bands.

• Do not buy fresh pre-stuffed turkeys.If not handled properly, any harmfulbacteria that may be in the stuffing canmultiply very quickly.
Frozen Turkeys• Allow 1 pound of turkey per person.• Keep frozen until you're ready to
thaw it.• Turkeys can be kept frozen in the
freezer indefinitely; however, cook with-in 1 year for best quality.

Frozen Pre-Stuffed TurkeysUSDA recommends only buying

sure the water is not able to leakthrough the wrapping. Submerge yourwrapped turkey in cold tap water.
Change the water every 30 minutes.Cook the turkey immediately after it isthawed. Do not refreeze.
In the Microwave Oven• Check your owner's manual for the
size turkey that will fit in yourmicrowave oven, the minutes perpound and power level to use for thaw-ing.
• Remove all outside wrapping.• Place on a microwave-safe dish to
catch any juices that may leak.• Cook your turkey immediately. Do
not refreeze or refrigerate your turkeyafter thawing in the microwave oven.
REMINDER: Remove the giblets fromthe turkey cavities after thawing. Cookseparately.
Roasting Your Turkey• Set your oven temperature no lower
than 325 °F.• Place your turkey or turkey breast on
a rack in a shallow roasting pan.• For optimum safety, stuffing a turkey
is not recommended. For more evencooking, it is recommended you cookyour stuffing outside the bird in a casse-role. Use a food thermometer to checkthe internal temperature of the stuffing.The stuffing must reach a safe mini-mum internal temperature of 165 °F.
• If you choose to stuff your turkey, theingredients can be prepared ahead oftime; however, keep wet and dry ingre-dients separate. Chill all of the wetingredients (butter/margarine, cookedcelery and onions, broth, etc.). Mix wetand dry ingredients just before fillingthe turkey cavities. Fill the cavitiesloosely. Cook the turkey immediately.Use a food thermometer to make surethe center of the stuffing reaches a safeminimum internal temperature of 165°F.
• A whole turkey is safe when cookedto a minimum internal temperature of165 °F as measured with a food ther-mometer. Check the internal tempera-ture in the innermost part of the thighand wing and the thickest part of thebreast. For reasons of personal prefer-ence, consumers may choose to cookturkey to higher temperatures.
• If your turkey has a "pop-up" tem-perature indicator, it is recommended
that you also check the internal temper-ature of the turkey in the innermost partof the thigh and wing and the thickestpart of the breast with a food ther-mometer. The minimum internal tem-perature should reach 165 °F for safety.
• For quality, let the turkey stand for 20minutes before carving to allow juices toset. The turkey will carve more easily.
• Remove all stuffing from the turkeycavities.

It is safe to cook a turkey from thefrozen state. The cooking time will takeat least 50 percent longer than recom-mended for a fully thawed turkey.Remember to remove the giblet pack-ages during the cooking time. Removecarefully with tongs or a fork.
Optional Cooking Hints• Tuck wing tips under the shoulders
of the bird for more even cooking. Thisis referred to as "akimbo."
• Add ½ cup of water to the bottom ofthe pan.
• If your roasting pan does not have alid, you may place a tent of heavy-dutyaluminum foil over the turkey for the
first 1 to 1 ½ hours. This allows for max-imum heat circulation, keeps the turkeymoist, and reduces oven splatter. Toprevent overbrowning, foil may also beplaced over the turkey after it reachesthe desired color.
• If using an oven-proof food ther-mometer, place it in the turkey at thestart of the cooking cycle. It will allowyou to check the internal temperature ofthe turkey while it is cooking. For turkeybreasts, place thermometer in the thick-est part. For whole turkeys, place in thethickest part of the inner thigh. Oncethe thigh has reached 165 °F, check thewing and the thickest part of the breastto ensure the turkey has reached a safeminimum internal temperature of 165°F throughout the product.
• If using an oven cooking bag, followthe manufacturer's guidelines on thepackage.
REMEMBER! Always wash hands,utensils, the sink, and anything else thatcomes in contact with raw turkey and itsjuices with soap and water.

Storing Your Leftovers• Discard any turkey, stuffing, and

• Use refrigerated turkey, stuffing, andgravy within 3 to 4 days.
• If freezing leftovers, use within 2 to 6months for best quality.

In the bowl of a stand mixer, beatthe egg yolks until they lighten incolor. Gradually add the 1/3 cup sugarand continue to beat until it is com-pletely dissolved. Add the milk,cream, bourbon and nutmeg and stirto combine.

Exhibits open at Time and the ValleysSaturday, December 5th is the Time and the Valleys Museum last opening day of the season and lastchance to view the exhibition Celebrating Catskill Water: Past and Present a collaborative exhibi-tion between Museums, historical societies and environmental organizations on swimming, fishingand boating in Sullivan County. Open noon to 4 p.m., admission to the Museum is FREE, includingall three exhibitions: “The Impact of Water on the Life and Growth of the Valleys, “Tunnels, Toil andTrouble: New York City’s Quest for Water and the Rondout-Neversink Story”, “Celebrating CatskillWaters: Past and Present,” an exhibition of water recreation in Sullivan County. The Museum Shopwill be open – running special holiday sales on local history publications, locally made crafts andgifts.
