Christina Tosi’s Cinnamon Buns

INGREDIENTSFor the dough: 21⁄2 teaspoons dry active yeast 3⁄4 cup warm water 11⁄2 cups warm milk 6 cups bread flour2 tablespoons salt 1 cup sugar 2 tablespoons butter, at room temperature

INSTRUCTIONS1. Dissolve yeast in warm water and milk. 2. Knead in dry ingredients. Add butter. Let rise for 45 minutes. 3. After the 45-minute rise, roll out dough into a long rectangle and spread butter over its surface. Sprinkle it with a generous amount of light brown sugar, cinnamon, and salt. 4. Roll up the rectangle into a long cylinder. Cut into 14, 2-inch pieces. Place in a greased 9x13-inch pan or two 10-inch pie pans and cover with plastic. Let rise another 45 minutes before baking 12-22 minutes at 375°F. 5. To prepare the frosting, mix butter, cream cheese, extract, sugar, and salt thoroughly. 6. While the buns are still warm, spread the frosting generously over them and serve immediately.

For the filling: 1 cup butter, at room temperature 11⁄2 cups light brown sugar 2 tablespoons cinnamon2 teaspoons salt

For the cream cheese frosting:1⁄2 cup butter 11⁄2 cups cream cheese 1⁄2 teaspoon vanilla extract2 cups confectioners’ sugar 2 teaspoons salt

If you make this for brunch for your houseguests you will never get them to leave - seriously addictive breakfast food.

PREP TIME: 30 minutes (Note: You will need to let the dough rise twice in 45-minute increments)COOK TIME: 12-22 minutes at 375°F (after dough has risen)

The Fondue PaniniFondue ingredients are so good together they belong between sliced bread. And paired with tomato soup.

INGREDIENTS2 slices sourdough bread3-4 thin slices double cream brie cheese 1⁄4 thinly sliced Granny Smith apple 1 drizzle honeySmear of butter 1 cup prepared tomato soup (We prefer Pacific Natural Foods blend but any brand you like will work)

INSTRUCTIONS1. Lightly butter one side of 2 pieces of sourdough bread.2. Thinly slice brie cheese and layer it on the non-buttered side of bread. 3. Thinly slice apple and layer on top of brie. 4. Drizzle honey lightly over apple slices. 5. Place other slice of sourdough on top. 6. Grill sandwich on panini grill or pan until cheese is melted and bread is golden brown. 7. Slice sandwich in half and serve with a cup of warm creamy organic tomato soup. 8. Enjoy & feel free to dip panini in your soup!

Thanksgiving Leftover Grilled CheeseHoliday leftovers never tasted this good

INGREDIENTS2 slices country/artisan bread (like levain or sourdough), about ½-inch thick 3 ounces of roasted turkey, sliced ¼-inch 2 slices sharp cheddar cheese 1 tablespoon cranberry sauce ¼ cup mashed potatoes ¼ teaspoon minced fresh sage 1 teaspoon salted butter, room temperature

PREP TIME: 10 minutes COOK TIME: 5 minutes

INSTRUCTIONS1. Cream the sage into the butter and butter one side or both slices of bread; place one slice butter side down.

2. Place one slice of cheddar, then add the potatoes, cranberry sauce and the turkey. Finish it off with a second slice of cheddar.3. Top with the remaining slice of bread.4. Either grill over medium-low heat in a pan or cook in a hot oven (500ºF) for about 1 ½ minutes in a pre-heated cast iron skillet. If cooking in the oven, distribute the ingredients across both halves of the sandwich and cook it open-faced, and then combine the halves after removing from the oven. 5. Slice in half and serve with leftover gravy!

Translation: Pork chop in ridiculously delicious gorgonzola sauce

INGREDIENTS2 cups whole wheat flour 6 bananas (over-ripened) 1 cup low fat yogurt 1 tablespoon vanilla extract1 tablespoon salt 1 cup egg whites 1⁄2 cup sugar 1 teaspoon baking powder

INSTRUCTIONS1. Mix the dry ingredients first, then add the other ingredients to the bowl. 2. Use an electric hand mixer for two minutes. 3. Put the banana bread in the oven in a muffin tray or a pan. 4. Bake for about 25-30 minutes at 350°F 5. Let cool for 10 minutes, then enjoy.

The healthiest version of this everyday favorite – if you can stop yourself from eating the whole loaf.

INGREDIENTS

Cookies: 21⁄2 cups bread flour (or all-purpose flour is fine) 1⁄2 teaspoon baking powder 1⁄2 teaspoon salt 1⁄2 cup butter, softened 1 cup granulated sugar 1 egg 1⁄2 tablespoon sour cream 1 teaspoon vanilla extract

Frosting: 1⁄2 cup butter, softened 4 cups powdered sugar 1⁄4 cup Half and Half 1 teaspoon vanilla extract Pinch of salt Several drops of food coloring (optional)

INSTRUCTIONS

Cookies:1. Preheat oven to 375ºF and grease a 9x13-inch baking dish. 2. In a medium bowl, combine flour, baking powder, and salt. Set aside. 3. In a large bowl, cream together butter and sugar until light and fluffy, about 3 minutes. (The longer you beat it, the fluffier your cookies will be.) 4. Add egg and combine well. 5. Add sour cream and vanilla and mix until completely blended. 6. Slowly add the flour mixture and stir until well combined. Gently press the batter into the greased baking dish and spread out with hands. (If you butter your hands, this will help with the stickiness.) Bake 17-20 minutes, or until edges become lightly golden. Set aside to cool completely.

Frosting:1. In a medium bowl, cream together butter, powdered sugar, and Half and Half until light and fluffy. 2. Stir in vanilla and salt. Combine well. 3. Add food coloring until desired color. 4. Frost your cooled cookie bars evenly. 5. Cut into squares and serve.
