The Benefits of Recycling Add Up!

Educators have created interesting and innovative curriculum to teach today’s school-aged chil-

dren about the importance of waste prevention and recycling. If you don’t have a kid handy to

remind you about how important it is to conserve natural resources and extend the life of our

existing landfills by participating in community recycling programs, then consider the following:

• Using one ton of post-consumer paper to make new paper products saves approximately 7,000

Cheesy Stuffed Peppers with White Beans

Ingredients

4 Bell Peppers

2 Tbsp. Olive Oil

Salt & pepper

1 large onion, chopped

3 Cloves Garlic, finely Chopped

1 package (10 oz) fresh spinach, thick stems discarded, leaves roughly chopped

1 can (15 oz) Small white beans, rinsed

2 tbsp. fresh lemon juice

4 Ounces part-skim mozzarella, shredded (about 1 cup)

1/4 cup grated Parmesan

1 cup marinara sauce

Directions:

1. Heat broiler. Cut the peppers in half through the stem and discard the seeds. On a rimmed baking sheet, toss the peppers with 1

Tbsp oil and 1/4 tsp each salt and pepper. Arrange cut-side down and broil for 3 minutes. Turn and broil until beginning to soften, 3

minutes more. Pour off any accumulated liquid. Reduce the oven temperature to 425°F.

2. Meanwhile, heat the remaining Tbsp oil in a large skillet over medium heat. Add the onion and cook, covered, stirring occasionally,

until tender, 5 to 6 minutes. Stir in the garlic and cook for 1 minute.

3.Add the spinach and 1/4 tsp each salt and pepper to the skillet and cook, tossing, until beginning to wilt, 1 to 2 minutes. Remove

from heat and fold in the beans and lemon juice, then the mozzarella and Parmesan.

4. Spread the marinara sauce on the bottom of a 9 x 13-in. baking dish. Dividing evenly, fill the peppers with the bean mixture (about

1/2 cup each), then place on top of the sauce in the baking dish. Bake until the peppers are tender and the cheese has melted, 4

to 6 minutes.

Perfect Pumpkin Pie

Ingredients:

1 (15 oz.) can pumpkin

1 (14 oz.) Sweetened Condensed Milk

2 Large Eggs

1 Teaspoon Ground Cinnamon

1/2 Teaspoon Ground Ginger

1/2 Teaspoon Ground Nutmeg

1/2 Salt

1 (9 in) unbaked Pie Crust

Directions:

1. Preheat oven to 425 degrees F. Whisk pumpkin, sweetened condensed milk, eggs,

spices and salt in medium bowl until smooth. Pour into crust. Bake 15 minutes.

2. Reduce oven temperature to 350 degrees F and continue baking 35 to 40 minutes

Hello Volunteers!

The summer appreciation went well 27 Volunteers attended and 15 attended for a total of 44 guests. We had volunteers

present that have volunteered with us over 8 years every week like clockwork. Several volunteers that attended had over 700

hours or 1000 hours; one even had over 7,000! Hours!!

This summer there have been several volunteers that have stepped outside their comfort zone, and helped us by training for

new areas to volunteer. They did this in a variety of different ways. Those volunteers were given a personalized book. Those

volunteers are:

Last week I was driving the golf course and noticed my first winter resident, the Belted

Kingfisher, but that is not to say that we are not happy to see all our human friend also.

The seasonal migration of birds has started and it means a change of seasons for us down

here in South Florida. For those who have not experienced “Birding” in Florida, it can be a

rewarding and exciting activity that most everyone can experience. It does not take a huge

investment, a pair of binoculars and some free time. We have such a huge diversity of

plants and animals here at Treviso Bay, it is one thing that sets us apart from other clubs in

town. The migratory birds are ready to come back down for winter and it gives the resi-

dents who stay here year round a chance to observe some different varieties of birds. Each different species has a niche it

fills and it is always satisfying to see the different birds in our community. The easiest way for someone to get started is to

get out and walk around the community, stop to observe and listen, and get familiar with the different species of birds. We

are surrounded by many of the top birding spots in the United States, all with 60 minutes of driving time, many less than

that. This is just a short list of birding areas.

In our neighborhood, in the previous winters, I have seen many different and unusual species of birds that would intrigue

most people. Here is a short list of some of the many species that we might expect to see if you are looking and listening:

wood duck, hooded merganser, cooper’s hawk, sharp-shinned hawk, peregrine falcon, American kestrel, many species of

plovers, terns, wrens, American robin, gray catbird (sounds like a cat in the bushes), many different species of warblers, and

painted buntings.

So keep your eyes peeled and your ears clean so when you are walking

the dog next time, you might be surprised at what you can notice.

One other note, please remember we do live next to a wonder and very

native place, Rookery Bay. We do have many different animals that share

our neighborhoods with their homes. Please be respectful of them and

do not feed any wildlife (expect song birds from feeders). Once a native

animal becomes habituated to human feeding, wildlife officials have no

options but to remove that animal, and that usually means taking that life

from that animal. If you have a problem or nuisance animal please

inform the community manager and we will handle the situation accord-

ing to the law. Please remember to always walk your pets on leashes and

do not allow your domestic cat to roam freely. It is estimated that house-

cats kill over 1.4 billion birds each year, so please do not allow your cat to

run freely.
