BRISLING SARDINES. King Oscar has been producing the world’s finest sardines for over 110
years. But did you know that sardines aren’t actually a fish species? Sardines become sardines
through a traditional processing method—and as many as 11 different species of fish are used
to make sardines around the world.
For our top-of-the-line sardines, we use remarkably tiny and tender brisling caught wild
in the pristine fjords and cold coastal waters of Norway. Not only are these waters
known for their purity, the icy temperatures and ideal feeding conditions result in
fish with a higher concentration of Omega-3 fatty acids.
After the fish are lightly smoked in real oak-wood ovens and prepared, we pack
them by hand in recyclable, BPA-free aluminum cans. Our brisling sardines come
in a variety of oils, water, and flavorful sauces—extra virgin olive oil, soybean oil,
pure spring water, spicy cracked pepper, hot jalapeño peppers, mediterranean style,
tomato, and Dijon mustard.
In the uSA, only King Oscar offers Norwegian brisling, so you know you are buying and
serving the very best.
SkINLESS & BONELESS SARDINES. For our superior skinless and boneless sardines, we
start with best-quality, wild-caught pilchard, fished using eco-friendly methods in the waters
off of morocco. After we remove the skins and bones, we hand-pack the fish in pure olive oil.
As always, these King Oscar favorites are Kosher-certified. King Oscar Skinless & Boneless
Sardines offer a delicious and nutritious substitute for canned tuna.
kIPPERS. Like sardines, kippers aren’t born kippers—they become kippers through a special
processing method. Becoming a King Oscar kipper is tougher still. We use only sild herring,
wild-caught in the bracing waters of Canada. The extremely high oil content of these fish
yields a superior taste during our time-tested traditional salting and smoking process.
ANCHOVIES. Anchovies have been enjoyed around the world since the days of early Rome.
Our small, finest gourmet anchovies come from morocco or Argentina, where they are fished
from the Atlantic Ocean and then aged in salty brine for 4 to 6 months before canning. unlike
other brands, King Oscar’s hand-packed anchovy fillets do not contain bones and are free of
any additives or preservatives.

CLEAR REGULATIONS AND CATCH CERTIFICATES.
King Oscar buys fish solely from approved organizations
and local fishermen, and we adhere to quotas set by the
Council for the Exploration of the Sea, based on leading
marine science. As always, we take a firm stance against
illegal, unregulated and unreported (Iuu) fishing, wasteful
discards, and irresponsible by-catches. In fact, our catches
must meet the toughest industry standards—as well as our
own more stringent ones.
LONG-TERm, ECO-FRIENDLY GOALS.
Our sustainable harvesting efforts are directed at the
entire chain—from the health of the fisheries and our safe
catch methods to smart processing and storage, all the
way through recyclable, BPA-free packaging and regulated

Fish is a natural, dietary source of Omega-3s, high-quality protein, and important vitamins
and minerals—and it’s low in saturated fats. No wonder more and more nutrition experts are
telling us all to eat more fish.
The u.S. FDA and the American Heart Association recommend eating two servings of fish per
week. The mayo Clinic says that it’s better for you to eat fish than to take fish oil supplements.
And environmental watch groups such as the u.S. EPA say that small fish that are lower in the
food chain, such as sardines and herring, are generally considered “mercury-safe” or low in
mercury—which is especially important if you are pregnant or nursing.

OmEGA-3. Coldwater fish including sardines, mackerel, herring, and salmon are naturally rich in essential Omega-3s. National Institutes of Health experts say that Omega-3s may be beneficial against heart disease and certain inflammatory disorders such rheumatoid arthritis.
PROTEIN. Next to water, protein is considered the most important nutrient for your body. On average, the u.S. RDA for protein is 50 grams, which your body uses as fuel, for building new tissues, and to repair itself. Fish offers you high-quality protein—without the saturated “bad” fats.
VITAmINS. Before someone decided to put the vitamins your body needs into cartoon-shaped pills, they came in more natural forms—like fish. The u.N. Food and Agriculture Organization says that fish are generally a good source of the B vitamins and also vitamins A and D.
mINERALS. Calcium is essential for strong bones, needed to convert food to energy, and helps regulate your heartbeat. Fish canned with bones, such as sardines, are a rich dietary source of this important mineral.

PASTA WITH SARDINES, TOmATOES AND OLIVESINGREDIENTS1 can King Oscar Sardines in Olive Oil 1¾ cup pasta • Olive oil • 1 onion, finely chopped • 3 cloves garlic, chopped • 1 can chopped tomatoes • ½ cup black olives, sliced • 1 tbs capers • Salt and pepper • Fresh parsley, chopped • Fresh basil, chopped • Grated Parmesan
PREPARATIONCook pasta as directed on package. Sauté onion and garlic in oil over medium heat. Add tomatoes and simmer for a few minutes. Add sardines, olives, and capers just before serving. Season with salt and pepper. mix in pasta, parsley, and basil. Top with Parmesan. Serves 4.

SARDINE LAVASH WRAPSINGREDIENTS2 cans King Oscar Sardines with Spicy Cracked Pepper • 8 lavash flat breads or flour tortillas 6 oz herbed goat cheese • 1 head romaine lettuce, shredded • 1 Belgian endive • 1½ cup diced red, green and yellow bell peppers • ½ sweet onion, diced • ½ cup cilantro
• 1 tbs olive oil from can, with peppers
PREPARATIONDrain sardines, reserve the cracked pepper. In a large mixing bowl, combine lettuce, endive, 1 cup bell peppers, onion and cilantro with 1 tablespoon of the oil and cracked pepper from the can. Lightly smear flat breads or tortillas with goat cheese, fill with vegetable mixture, gently layer on sardines, and roll closed. Cut each roll in half or into slices, as desired. Sprinkle remaining diced peppers over plate as a garnish. Serves 8.
THAI-STYLE SARDINE AND mANGO RICE SALADINGREDIENTS1 can King Oscar Sardines with Jalapeño Peppers • 1½ cups Basmati or jasmine rice
1 cup chopped mango • 1 cucumber, peeled, seeded and diced • 2 scallions, thinly sliced • ½ cup chopped fresh cilantro
• ⅓ cup salted and roasted peanuts, chopped • Olive oil and jalapeño peppers, reserved from can • tbs rice vinegar • Finely grated zest and juice of 1 lime • 1 tsp sugar • Salt and pepper • 1 fresh jalapeño pepper, thinly sliced • Crushed peanuts
PREPARATIONCook rice according to package instructions, then rinse under cold water, drain. In a large bowl, mix rice, mango, cucumber, scallions, cilantro, peanuts, and jalapeños from can. Whisk the olive oil, vinegar, lime juice and zest, sugar, salt and pepper to taste. Gently stir all together and add sardines to combine. Garnish with thinly sliced fresh jalapeño pepper and crushed peanuts. Serves 4-6

ANCHOVY BRUSCHETTA WITH TOASTED WALNUTSINGREDIENTS1 can King Oscar Flat Anchovy Fillets 4 thick slices whole-grain bread • 2 tsp Dijon mustard • 3 tbs extra virgin olive oil • 2 tbs unsalted butter (room temperature) • ¼ cup chopped walnuts • 1 tsp ground black pepper • 1 clove garlic, finely minced
PREPARATIONIn a small bowl, whisk together the mustard, 1½ tablespoons olive oil, butter, pepper, and minced garlic. mash and add to the anchovies, mix until a paste has formed. Set aside.Sauté walnuts in 1½ tablespoons olive oil over medium heat until lightly toasted, 3-5 minutes. Toast the bread, spread with anchovy mixture, cut in quarters. Top with toasted walnuts. Serve immediately. makes 16 pieces.
kIPPERS AND BEETS SALADINGREDIENTS1 can King Oscar Kipper Snacks1 red onion • 1 squash • 2 beets ½ cauliflower • ½ tbs oil • ¼ tsp salt • ¼ tsp coarsely ground pepper
1 dash coriander • 1 tbs capers • Fresh cilantro or parsley to taste
PREPARATIONFinely chop the onion. Cut squash, beets, and cauliflower into cubes or slices. Sauté vegetables with olive oil, salt and pepper, and coriander. Arrange on plates and top with kippers. Garnish with capers, cilantro or parsley. Serves 2.
